President's message

For those who know Macao just for its gaming, you have missed a lot of fun – and sensory excitement! From Michelin-starred fine dining restaurants to popular food fairs, from master-pieces to hawker food, mouth-watering temptations are everywhere in town. Local pork-chop buns, Portuguese natas, Burmese chicken noodles, Indian curries, Thai chillies, almond cakes and beef jerkies are some must-try foods and delicacies that taste so good when eaten in Macao! And oh, one should not forget to pair sumptuous food with wine that enhances; and, Macao is just the place for a steady flow of Portuguese wines.

Honouring the culinary tradition and diversity of the city, IFT established the International Culinary Academy in April 2009. The launching event was a seminar-cum-demonstration by the Father of Molecular Gastronomy, Dr. Herve Thís.  A number of training programmes followed, the most recent to the list being Le Cordon Bleu Master Chef and the Chinese National Banquet demo classes. French Master Chef Marc Bonard had even gone shopping at the local Red Market for fresh Chinese ingredients to use in his French cooking demonstrations. The happy fusion was well received by the audience and applauded by the chef himself. Our food and wine seminars never fail to attract industry professionals, and they do equally well with the general public – after all, who doesn’t enjoy good food and wine?

Our diploma programmes on Western Culinary Skills and Pastry and Bakery, and our WSET® courses on wine appreciation and professional advancement have contributed to the enhancement of our industry professionals.

Mike Ottolini and Randy Lubbert offer bright perspective on the future of vineyards and wineries in the Southern Illinois, USA region.  Their determined efforts to ensure quality wine are reflected in several ribbons received for distinctive grapes they had cultivated and wine they had produced.

T:  So, Mike, Randy, when did you first decide to create a vineyard?

M/R:  The first vineyard-winery that opened in our area held a vineyard establishment seminar that we attended; this was about 12 years ago.

We learned that our (Southern Illinois, USA) soil and climate were ideal for growing grapes, French-hybrid varieties in particular.  We also learned that, prior to the Prohibition Era, Illinois was a major producer of grapes and wine (fourth largest grower of grapes, supplying about 25% of the wine consumed in the United States).

Until recently, we both had full-time jobs, so we began by planting grapes and increasing the number of vines and varieties over time.  Our plans for a winery building and equipment were discussed over a period of several years as we learned the business -- and the plans changed on a regular basis during our learning process; the final result is quite different than what we first imagined. 

T:   What have been the developments of Southern Illinois vineyards, wineries, and wine tours?

M/R:   For the past decade or so, the number of vineyards and wineries has been steadily growing here, and tourism continues to increase as well.  Other businesses benefit from the increased interest that wineries bring to this area.  Some limo companies do offer tours of wineries on our local "wine trail".

T:  Why did you choose NOT to go retail?

M/R:  Our decision not to go retail was based on a number of factors.  We have established a reputation among our peers for growing quality grapes and producing a quality wine, and intend to widen this reputation by increased participation in local and state associations.  We continue to study the business as we make plans for retail marketing in the future. 

Bottling wine would be a labour intensive process for us.   We have one, part-time employee who has been with us for several years and is a tremendous help.  Right now we can sell all of our wine in bulk quantities to other wineries without the tasks of bottling, labelling, and retailing.  All of our sales are wholesale to other licensed wineries who then bottle the wine and label it with their own label.  We do plan on having our own label in the future.  This business model will also allow us to increase our production every year until we reach the point where conditions are right to begin retail sales.

T:  Finally, have you tasted any of the wines from China or Portugal while here? 

M/R:  I think we were both remiss in not having any Chinese wine while here.  The Portuguese wines have all been excellent and a real value in price.

2nd Asian Academy for Heritage Management Conference

Participants of the 2nd Asian Academy for Heritage Management Conference

The first three days of December 2009 saw the convergence of leading experts on heritage and tourism from all over the world at IFT to attend the 2nd Asian Academy for Heritage Management Conference (AAHM 2009) - organised by the Heritage Studies Centre of IFT, and to discuss key issues related to heritage tourism in urban areas. More than 100 academics and professionals from 22 countries and regions of the world attended the conference in which 60 scholarly papers were presented. Keynote papers were presented by Prof. Chris Ryan, Professor of Tourism at the University of Waikato, New Zealand; Dr. Richard Engelhardt, UNESCO Charge de Mission and Senior Advisor to the UNESCO Assistant Director-General for Culture and Prof. Mike Robinson, Chair of Tourism and Culture, Leeds Metropolitan University, United Kingdom.

AAHM 2009 focused on the theme “Urban Heritage and Tourism: Challenges and Opportunities” and included fifteen parallel paper sessions and two plenary sessions. Some of the key issues pertinent to heritage tourism in urban contexts were discussed, including such topics as “managing change in historic urban areas in the face of tourism development”, “adaptive re-use of urban heritage resources as hospitality venues”, “Heritage interpretation: By whom? For whom?” and “heritage tourism’s contributions to host communities”. The conference is proud to be supported by UNESCO, ICCROM (International Centre for the Study of the Preservation and Restoration of Cultural Property), the Cultural Affairs Bureau of the Macao SAR Government and the Macau Government Tourist Office.

AAHM was founded by UNESCO and ICCROM in 2001 to create a platform for the exchange of knowledge and expertise between the institutions involved in heritage management training programmes in Asia. IFT is a founding member of the Academy and has been actively involved in the activities organised under the AAHM banner. Organising and hosting of the AAHM 2009 is part of the leading role IFT is playing in AAHM, the recognition of which is reflected in the recent appointment of IFT as the “Knowledge Management Hub” of AAHM.

IFT Community Education and Development Programme

As Macao develops towards being a truly international tourism destination, its visitors arrive with much higher expectations than in the past. Such expectations are aimed at entertainment, food and beverage, accommodation, heritage sites and most importantly - customer service.   As local residents, we share our city with visitors from around the world, and their travel experience in Macao partially depends on us and how we extend our genuine hospitality and customer service to visitors.  For these reasons, IFT has set up various tourism service related courses under the Community Education and Development Programme (CEDP), which encourages lifelong learning that is being advocated by the Macao SAR Government. The Community Education and Development Programme is using the IFT Taipa Campus as its training centre. An inaugural ceremony was held on 10 December 2009.  Representatives from the CEDP community, along with industry partner organisations, facilitated and attended this ceremony.

The CEDP effectively opens up numerous opportunities for continuous learning as courses are free of charge to all Macao ID holders. The CEDP aims at providing elementary-level training to those who are interested in pursuing a career in the tourism industry. Courses are being offered in the following areas: events, hospitality, retailing, advertisement designing, paper modelling for commercial display, computer simulation, IT, recreational activities, elementary English and Mandarin. 

In order to extend this benefit and appeal to as many residents as possible, IFT has invited 21 associations to be community and industry partners. In addition to the aforementioned courses offered at the CEDP training centre, IFT and its partners will jointly organise classes tailor-made to suit particular industry needs. IFT has also established a collaboration plan with Ngai Chon Centre of the General Union of Neighbourhood Association of Macao.  Under this collaboration plan, eight courses have been designed for internal training, and ten courses on advertisement design, paper modelling for commercial display and organising recreational activities will be available to its members.  Since September, the CEDP has trained 650 students. With the new batch of courses starting in January 2010, which together offer close to 800 placements, even more residents will benefit from the CEDP’s tremendous learning opportunities - without charge!

IFT Pastry Artisan awarded silver medal in "Live Chocolate Display" competition

"Out of Africa" - The award winning masterpiece by Ronald G. Gonzales

Congratulations to IFT Pastry Artisan, Ronald G. Gonzales, who was awarded  a silver medal for his “Out of Africa” chocolate masterpiece at the “Pastry Competition - Live Chocolate Display” organised by the Macau Culinary Association at the Wine & Gourmet Asia 2009, held at the Venetian Exhibition Hall.

The objective of the competition was to promote culinary excellence as well as create opportunities to gain experience and communicate within the regional culinary community.

Ronald’s masterpiece is now displayed at the IFT Educational Restaurant.

A BIG day for our 2008/09 graduates

4 November 2009 was a very memorable and all-important day as 579 degrees, diplomas or certificates were presented to our graduates!

The afternoon ceremony was staged at Tap Seac Sports Complex. After the national anthem, Chief Executive of Macao SAR, Mr. Edmund Ho, delivered his congratulatory address. Graduate representative, Chao Weng Hou, delivered a speech on behalf of the graduating class, highlighting feelings regarding students’ years at IFT. After this, the degrees were conferred and various scholarships awarded.

Special thanks go to the VIPs who were at the ceremony, for taking time out of their busy schedules.

Two IFT Students achieve recognition from Club Managers' Association of Hong Kong

On 23 November 2009, Chairman of the Club Managers’ Association of Hong Kong, Macao and China (CMA), Mr. Robert Blythe, presented scholarship awards to two IFT students, Iris Liu Han Jie and Antonio Wong Cheok Hon, who had been participants in the Club Management course run by Dr. Sandy C. Chen.

This was the first time that the CMA has given scholarship awards to Macao students.  Mr. Blythe described how the main purpose of the awards is to support and encourage IFT students to pursue active involvement in club operations and management studies.

Mr. Blythe, also the general manager of Kowloon Cricket Club, said, “The club industry in Asia is growing and needs more professionally trained staff.  It’s amazing that IFT is able to catch up with this trend and is offering the ‘Club Management’ course.  CMA has always been supportive to our community and would like to see more students taking on internship and job opportunities available in the club industry in the future.”

The CMA currently has 48 members who manage city, country, golf, marina, recreation and residential clubs in Hong Kong, Macao, and elsewhere in China.  The Association has given scholarship awards to students studying at the University of Hong Kong, Hong Kong Institute of Vocational Education and the Hong Kong Polytechnic University.

The MORS Gold Pin competition 2009

MORS Gold Pin Competition Awards Presentation Ceremony

MORS Gold Pin Competition 2009 took place at the Venetian Exhibition Hall on 21-23 October 2009.  The purpose of the competition was to enhance the status of skilled workers and their skill levels.  Since its inception in 2002, the MORS competition has grown both in scale and stature to become one of the most widely anticipated events among the hospitality and tourism industry.  This year, the competition attracted more than 200 competitors from 23 organisations in eight occupations to come together to compete against each other.  After the intense preliminary competitions, 49 finalists participated in the final activity and vied for the various awards.  In the end, 16 winners were selected and awarded gold pins, cash prizes and course sponsorships.

Chinese National Banquet Master Chef Week

When people talk about “National Banquets” some may imagine extravagant meals and opulent decorations, while others may just be curious about the dishes which are served for such important people in such formal dinner settings.  These secrets were unveiled to students who participated in the Chinese National Banquet Master Chef Week jointly organised by IFT International Culinary Academy and the Chinese Chefs Association on 24-27 November 2009.  Master Chef Hou Fangju shared his culinary expertise and experiences in preparing Chinese National Banquets through cooking presentations of dishes served in important events. Surprisingly, many delicacies were prepared with simple ingredients which can be easily found in local markets.  Vice Secretary-General of the Chinese Chefs Association, Mr. Jia, explained that dishes served at important national banquets do not necessarily require expensive ingredients. Simple ingredients can do wonders. The selection of quality ingredients, careful preparation and superior cooking skills are the basic requirements for making fine food which can be served to ministers and presidents of the world.  Among the Eight Great Traditional Types of Chinese Cuisine, Huaiyang is the most frequently selected for formal banquets due to its attractive presentation and light taste.  Apart from unveiling secret recipes, this one-week event also focused on food safety awareness.

Le Cordon Bleu Master Chef Week

French cuisine is famous for its sophistication while Japanese cuisine is renowned for the beautiful plating and use of very fresh ingredients. Then, what happens if they are combined together? 

Participants of the Le Cordon Bleu Master Chef Week at IFT proved that the results can be fantastic!!! Not only pleasing for the palate, but also refreshing for the eyes.  Internationally renowned French culinary school, Le Cordon Bleu (established in 1895) was invited by the IFT International Culinary Academy to co-organise a one-week culinary event. The event took place on 1-5 December 2009 at the Main Campus, and received an overwhelming response. Specially designed activities were conducted for local chefs and food enthusiasts. “Good food is made of fresh ingredients”, says Chef Marc Bonard who personally spent one morning in the Red Market, buying local products to prepare French dishes in front of a big excited audience. “All you need now is to learn the proper basic techniques and add herbs which are indispensable in French cuisine” – explained the chef during the demonstration.

Professional chefs were most interested in French-Japanese fusion dishes that Chef Bonard created. “He is really creative and inspires us to try making new dishes with western herbs and locally available fresh products”, said one participant.

IFT team awarded third prize in the Students' Statistics Contest

Students of the Hotel Management Bachelor Degree Programme with Dr. Anthony Wong

To celebrate the 10th Anniversary of the Macao SAR, the Statistics and Census Service (DSEC) organised the Students' Statistics Contest. About 100 teams of students from IFT and other local higher institutions participated in the contest. One of the five teams from IFT, Raynis Chou, Ken Lou, Moses Ho, Elaine Fong, Raymond Fok came in third. We all congratulate their achievement.

Their topic, Developing Macao as a Sustainable Tourism Destination in Terms of its Hotel Industry, is timely and relevant to Macao’s tourism and hospitality development.

Their findings reveal that Macao has enjoyed rapid growth of the economy in the past few years (e.g. increase GDP per capita, decline in unemployment rate, improvement on tourist statistics, and growth of the hotel industry). However, this success may be overshadowed by a number of social, economical, and environmental factors.  The paper concludes with recommendations for both the tourism and hospitality industries.

為慶祝澳門回歸十周年,統計暨普查局舉辦了大學生統計習作比賽,目的為提升學生對統計數字的應用和研究方法的興趣; 鼓勵學生透過統計數字及方法,科學地認識澳門;並提高學生的社會觸覺和公民意識。來自各高等院校共約一百隊學生隊伍參加,旅遊學院所派出的五個隊伍當中,就讀酒店管理的五位學生勇奪季軍。

Summer exchange at the Palace Museum, Beijing

The four of us: Adriana, Amy, Irene and I, Jeffrey, are very pleased to have been invited to join the “The 5th HuaXia Hong Kong-Macao Radio Listeners Gathering”. We have had an unforgettable six-day trip to GuiZhou. During the meeting, all of us shared our comments and suggestions, hoping to improve the radio channel.

Throughout the whole trip, we were impressed by each scenic spot we saw. Moreover, we were astounded by the world’s third largest cataract, which we saw on the last day there. It is hard to explain the amazement and astonishment we felt watching it inside the caves, where you can almost touch the falling water. This was definitely an unforgettable experience!

Charity Music Show

Organised by the Student Union, the “Charity Music Show for the “8.8” Flood Disaster in Taiwan” was held on 30 September 2009 at the IFT Grand Hall. The aim of this activity was to provide students with the opportunity to give support to the victims of the “8.8” Flood Disaster in Chinese Taiwan. Donations were collected through the sale of admission tickets and circuit donations. With the support of all the staff and students, charity funds of around MOP14,000 were collected and transferred to the Taipei Economic and Cultural Centre on 27 October 2009.

旅遊學院學生會於2009年9月30日於旅遊學院大禮堂舉辦了「慈善音樂晚會」為台灣中南部地區受風災侵害的同胞籌款。是次活動之入場人次約為230人,合共籌得善款約澳門幣14,000元,並已轉交給台北經濟文化中心。

IFT is well presented at this year's Macao Inter-Tertiary Cantonese Debate Competition

On 31 October 2009 the IFT Debate Team achieved 2nd runner up in the 7th annual Macao Inter-Tertiary Cantonese Debate Competition organised by the Tertiary Education Services Office (GAES).

Terry Yao Xing and Andy Cao Teng were awarded recognition as this year’s best debaters in the semi-finals of the Putonghua and Cantonese debates respectively. The Cantonese debate team consisted of 11 members and 5 teams from other local higher institutions participated in the competition.

It was an invaluable experience for all who took part, as the debaters learned something from their participation in such a competition and they gained insight through observation of their fellow contestants from other institutions.

The exchange programme at IMC, Austria has changed my life

Going on this one-semester exchange programme to Krems, Austria was a valuable experience in my life.

Through this programme, I have learnt some important things about life that I would never have been able to learn in Macao.  Going abroad forces you to stay open-minded, to accept the way others are, and to understand better who you are. I have gained a lot of confidence and became braver when it comes to solving problems. Studying at the IMC University of Applied Sciences was great; it was very international, students enjoyed greater learning independence and the classes were freer.

Farewell to our incoming exchange students for Fall 2009/10
Exchange students enjoyed a happy moment with SU members at the party

Thirty students from Mainland China, Austria, Chinese Taiwan, Finland, South Korea, Singapore, Spain, Sweden, Switzerland and The Netherlands journeyed to Macao to pursue their study exchange programmes or internship programmes at IFT.

Time passed too quickly. By the time they had got used to everything here, it was almost the end of the semester. A farewell lunch party was arranged in December for them to share their happy moments with our staff and students.
