A Happily Ending 2012

Some people like to reflect on the good blessings they have received throughout the year as it comes to an end and immerse themselves in gratitude and contentment as they enjoy the year-end festive spirit while looking forward to another fruitful beginning. If we are to do this for the Institute, the year 2012 ended on a happy note, with IFT applaused for our students, faculty, programmes, alumni and training units that have earned merits in competitions, audits, industry acceptance and community involvement.

Some highlights included: THS student Leong Lai Iong was awarded the LCCI World Gold Medallion for Level 2 Business Administration; IFT students participated in various extra-curricular activities and achieved outstanding results in sports competitions namely 2012 Macao University Volleyball Championship in both women and man category, 2011/12 University Student Swimming Championship (in 100m Breaststroke Men, 200m Breaststroke, Men 4x100m Freestyle Relay Men, 50m Butterfly Men and 50m Backstroke); training unit awards (Pousada de Mong-Há: Travelers’ Choice Award granted by TripAdvisor, 2012 Certificate of Excellence Award by TripAdvisor China Official Website Daodao.com, Macao Green Hotel Silver Award; Educational Restaurant: Bib Gourmand restaurant in 2013 MICHELIN Hong Kong and Macau Guide Book, Recommended restaurant by MICHELIN Guide Hong Kong Macau from 2009 to 2012). Moreover, IFT’s new bachelor degree programmes proved to be increasingly popular in 2012. Last year, we received 8 times more applications for our newly launched Culinary Arts Management Bachelor Degree Programme and 9 times more for the evening degree programmes in Hotel Management and Tourism Event Management.

With IFT having turned out the first batch of graduates just some 15 years ago, we note with satisfaction the advancing careers of a number of our alumni. They are now occupying positions such as Assistant Director of Communication and Director of Human Resources at international hotel chains, Deputy Director at an aviation enterprise, Assistant Professor in tourism education and General Manager of a travel agency. One has even published a book on heritage management!

We applaud our faculty members for their continuous exploration and generation of knowledge through research and publication in international peer-reviewed journals as we continue to welcome new blood and expertise to further strengthen the team. The most recent ones hail from Germany, U.K., and U.S.A.

Most importantly, our main focus, students, remain our pride as they mature over the years, reaching out beyond the classroom walls and showing their care for their community by carrying out charity events, educational activities for local children and conducting studies on local culture and heritage preservation. The student activity “Z Generation, One Destination” organised by Tourism Event Management Year 3 students is a good example of such endeavour. In the event, the students created a giant postcard mosaic of more than 20,000 postcards featuring Macao landmarks at Macau Tower Convention & Entertainment Centre Outdoor Plaza. This mosaic earned the approval from Guinness World Records™ as the Largest Postcard Mosaic in the world, and the students successfully raised MOP119,000 for Caritas Macau and ORBIS charity organisations. The event impressed the society by showcasing the solidarity and enthusiasm of IFT students and proving that youth in Macao is capable of striving for their dreams and contributing to the society.

So, all in all, a Happy 2012 to all students, faculty, staff and friends of IFT, and wishing you all an even more rewarding 2013!

10 October was certainly a very memorable and important day as 596 degree, diploma and certificates were presented to our graduates.

The ceremony was staged at Tap Seac Sports Complex in that afternoon. After the national anthem, the Chief Executive of Macao SAR, Mr. Chui Sai On, delivered his congratulatory address, and the President of IFT, Dr. Fanny Vong delivered her speech. This year’s graduate representative, Peta Ho, spoke on behalf of the graduating class, sharing the feelings about his study life at IFT.

IFT Students Participated in the Slow Food Events in Italy


This is a slow food journey, one I wish never had to end.

I came to learn about the subject of slow food two years ago when we held the 1st Macau Slow Food Awards and Gala Dinner in 2010. Like many others, I wondered what slow food meant. Was it simply asking people to eat slower? Indeed not! Slow food is actually a revolution about attitudes towards food as much as a lifestyle.

It promotes good, clean and fair food in every local community. It encourages responsible consumers to choose quality food produced in harmony with the environment and local cultures. It is a choice – one of a more sustainable earth and healthier lifestyle, one to stand up for the local food producers and disappearing local cuisines.

On 25 – 29 October 2012, three hallmark events materialised together in Turin, Italy. Salone del Gusto (Hall of Flavours), Terra Madre (Mother Earth) and the 6th Slow Food International Congress. I was very grateful to be one of the participants with my three adorable travel companions.

It was an unforgettable moment when we stepped into the Salone del Gusto Hall and were greeted by the scents from all the best products from different Italian regions, e.g. Veneto, Piedmont and Tuscany, etc. Equally incredible was Terra Madre, another food and beverage exhibition next to Salone del Gusto held by the International Slow Food Movement to promote specialties from all over the world every two years.

We enjoyed food tasting, wine matching and workshops in these two events. We were amazed again and again when we discovered new food, drinks, grape varieties or simply listened to production stories from experienced people from all over the world. One of the highlights, the Slow Food International Congress was a platform for the delegates from different countries to introduce and understand the slow food movement in different social activities where people focus on food and beverage appreciation. This is an inspiration as well as an encouragement for the rest of the world to live with the slow food philosophy.

Throughout the trip, we witnessed the appreciated foods from the local chocolate manufacturers, wine makers, beer breweries, pastry chefs, cheese makers, restaurant owners and of course the consumers. I shall never forget the smile on the presenters’ faces while they were proudly talking about their passion for slow food and production and preparation.

I wish the very best to the future of the Slow Food Movement and hopefully more people will enjoy the Slow Food lifestyle and take the opportunity to connect with quality people. This trip was sponsored by the Macau Slow Food Association to whom we would like to express our gratitude too.

Field Study Trip in 2012 Zhuhai Air Show, P.R.C.
In order to enhance students’ understanding and exposure to different types of events, course facilitators encourage students to engage in field trips and participation in local events. Founded in 1996 and held every two years, 2012 Zhuhai Air Show took place in Macao’s neighbouring city - Zhuhai from 13–18 November 2012. Tourism College academic staff members Dino Couto, Clara Lei, Xiangping Li, Sherry Tan and Hazel Xu led 146 students from Tourism Event Management Year 2, 3 and 4, Heritage Management Year 2 and Retail and Marketing Management Year 2 to the Air Show. Besides participating in this unique event first-hand, students also worked on assignments related to the event namely investigated the positive and negative impacts of the Air Show and examined the exhibitors’ motives.

IFT Student Conducts Internship in Portugal
 


 
Last September, I resided in Lisbon, Portugal to perform my internship at the Macau Tourism Promotion and Information Center for 3 months. First of all, the working environment was multi-cultural and multi-national, and the talented people I met there have changed my perspective of the meaning of life and the objective of my future career.

I gained a lot of knowledge through assisting the promotional events and observation of the work of my remarkable supervisor and colleagues. Moreover, I engaged in reports and proposal writing. Throughout this work experience, I got to know more about the internal operations of a government department.

Besides assisting the promotional events held in Lisbon, I went to Porto, Odemira to teach Chinese calligraphy for promoting Macao as a unique cultural destination. A number of participants were interested in Asian culture and they appreciated the insight and beauty of Chinese writing. Through these workshops, I was able to improve my presentation skills and apply the knowledge that I have learnt during my study at IFT including preparing slideshow, informative materials in order to attract people’s attention.

Living in an unfamiliar city made me become an independent person. During the internship, I made many friends who come from different countries including Portugal, Brazil, Italy, and Poland, and my horizon has expanded and became more globalised.

There is an upcoming promotional activity in Coimbra that I will participate in. I cannot wait to visit Coimbra and treasure every day of my life in Portugal.

IFT Student Completed Internship in Dinefwr, Wales, U.K.
 


 
Dinefwr is one of the National Trust properties located in South Wales, U.K. When I arrived, I felt rather apprehensive as I went there on my own and my English was not very good. After settling down, I noticed that Dinefwr was very different from Macao and the area I stayed was countryside. Everything was so unfamiliar to me and I took almost a month to get used to the lifestyle. Fortunately, I received great support from my supervisor and colleagues so that I could adapt to it.

Since my internship was about visitor experience and service, this was not only related to the experience but also education. Most of my time spent on working with children and leading workshops, along with producing interpretive posters for visitors.

During my six-month internship, I had unique experiences at another National Trust property, Hanbury Hall located in the Midlands of Wales. In May 2012, an event about Chinese culture was held there and the staff sought somebody who could assist to teach visitors to write their names in Chinese. Thus, I discussed with my supervisor to include this in my internship and she agreed. This was also special for Dinefwr and Hanbury Hall since I was the first intern from Dinefwr to go to another National Trust property to help with events.

In my spare time, I had opportunities to travel around the U.K. including Cardiff, Liverpool, Manchester, Bath, York, Brighton, Bristol, London and Oxford. Besides this, I made friends in Wales and they accompanied me to visit historical sites. Through the sightseeing, I learnt the local history and enhanced my knowledge in heritage.

Some of my friends and relatives said, “You took your internship in the U.K., but there was no wages and you have to spend a huge amount of money; do you think it’s worth doing?” For me, my vision has broadened through this experience, and I really enjoyed the wonderful six-month of life in Wales!

Gold Pin Competition 2012
 


“The MORS Gold Pin Competition continued to be a great success this year. 326 participants from 30 organisations joined the contest to compete in 11 areas of professions. With an aim to enhance and test the skills and professional level of participants, new elements were added to the competition this year. The most impressive one was the Black Box Culinary Challenge in the area of Assistant Cook (Western Kitchen). The finalist were given a black box of ingredients to design their recipes in half an hour before starting to prepare their dishes; their cooking performance, use of ingredients, presentation and the overall quality of the dishes were evaluated. Participants revealed that this form of competition was a true challenge for them as no practice or preparation could have been done beforehand. This required a spark of creativity and a high standard of skills. A series of contests of the 11 occupations were held at IFT and Grand Lisboa in November. After 3 rounds of contests, 23 winners were awarded gold pins, cash prizes of MOP6,000 and course sponsorships of MOP2,000.

IFT Teachers and Students Awarded in 2012 Macau Tourism Souvenir Design Competition
 


Souvenir is a very important and indispensable part of the tourism industry as people like to share with their friends and relatives what they have seen and experienced in a journey and bring home some memoir of their happy moments of life. Good souvenirs do not only serve as a memento of a visit or travel experience, but are also a good channel to promote the image of a tourist destination. With an aim to encourage people to design creative souvenirs with local features and characteristics, Chinese and Western Cultural Creative Industries Promotion Association, Macao organised the 2012 Macau Tourism Souvenir Design Competition and set “The Memory of Macao” as the theme of the Contest. The event, which encouraged participants to incorporate cultural and regional icons into their designs, was funded by Macao Cultural Institute. Like last year, the organiser started to collect works in August. Nearly 1,000 design entries from Macao, Chinese Taiwan and Mainland China were received. After the careful selection by the committee, the list of winners was finally announced on 20 November 2012. IFT teachers and students obtained the following awards:

IFT Teachers and Students Took Part in the 7th Guangzhou / Hong Kong / Macao / Chengdu Youth Skills Competition
 


Guangzhou / Hong Kong / Macao / Chengdu Youth Skills Competition is a biennial competition jointly organised by Guangzhou Municipal Human Resources and Social Security Bureau, Hong Kong Vocational Training Council, Macao Labour Affairs Bureau and Chengdu Human Resources and Social Security Bureau, with the aim to provide a platform for young people from the 4 cities to exchange their professional skills and experiences. It was the 7th edition of the competition and 5 categories were included, namely mechatronics, window display, restaurant services, webpage design, installation for intelligent home.

In order to select potential participants to represent Macao, the Labour Affairs Bureau held a preliminary contest in October. Fung Sin Man, an IFT F&B service course graduate, and Wong San San and Miu Wai Meng, current students from the joint programme offered by IFT and Luso-Chinese Technical and Professional School, were selected to join the Competition in the category of restaurant services.

Our colleagues, Mr. Tam Chi Fai, Coordinator of Food and Beverage Programmes, and Mr. Mac Seac Kuong, Coordinator for MORS, were invited to represent Macao as the judges for the final competition held in Chengdu, P.R.C.

The competition was held on 16 November 2012. The contest for the category of restaurant services lasted nearly a whole day since contestants were required to perform 3 parts of work: 1) a western banquet table setting of 4 guests including table top decorative pieces, 2) a Chinese banquet table setting of 10 persons, and 3) food and beverage services including taking order, making cocktail, providing wine and gueridon service, clearing plates and making coffee. Participants had to follow the standard sequences to complete all these tasks within the time limit. Apart from this, the service quality was also another major scoring criterion. Though the 3 local representatives did not win the championship this time, they were delighted and thankful for the opportunity to compete with high caliber professionals and gain such a precious experience.

The upcoming edition will be held in Hong Kong in 2014. The 3 youngsters hope that they can have the chance to join the competition again and to become champions.

Cultural Heritage Seminars - “The Culture Imprint of Macao Street Names”
 
For centuries, Macao had been a place populated by Chinese, and administered by the Portuguese. Early western settlers developed their own community and brought in their religions, cultures and lifestyles to this small piece of land. Various cultures began to co-habit in the tiny city, but surprisingly, instead of conflicts and contradictions, great respect between the cultures was passed on century after century. Even till now, this mutual cultural tolerance and integration is still around us and can be seen in our daily life. One of the best examples is probably embodied in the name of our streets. Portuguese and Chinese bilingual speakers may be aware that many streets here in Macao do not have equivalent names in the two languages; neither are they a translation nor a transliteration of one another. The Portuguese and Chinese named the same streets according to their own understanding or perception of the districts, which made many streets names in the two official languages not corresponding to one another.

In order to introduce this interesting phenomenon and help the general public and local tour guides understand the significant meaning behind, THS invited Dr. Pang Hoi Ling from Macau Documentation and Information Society to give lectures on “The Culture Imprint of Macao Street Name” on 14 and 15 November respectively. The response from the public was overwhelming. More than 360 participants enrolled in the 2 seminars held at IFT. The list of the Cultural Heritage Seminar Series 2013 will be announced soon. Interested parties may stay tuned to learn more about our local culture.

On 17 October 2012, IFT invited two alumni – Ms. Alexandra Yip and Mr. Orson Wong who have long completed their master’s degree programmes and have been working in the industry for years to share with our current students why they decided to take master’s degree programmes in the United Kingdom and Australia and how they chose their specialisation and universities. This sharing session was held in the Amphitheatre and around 30 students joined. .

Mr. Inaciso Chan, one of the graduates from the first batch of Bachelor of Science in Heritage Management intakes, recently published a book on heritage management themed on how to measure the economic benefits of heritage conservation. After graduating from IFT in 2009, Inaciso joined The University of Hong Kong for his postgraduate studies. Early in November, Inaciso was invited by the Macao Heritage Ambassadors Association to deliver a talk about his publication. He shared with the participants different approaches to conserve cultural buildings between Hong Kong and Macao.

Ms. Fiona Huang, a graduate from the Bachelor of Science in Heritage Management, was featured in the November/December issue of PATA Compass. Fiona pursued her master’s degree in Sustainable Tourism at The Chinese University of Hong Kong after graduating from IFT in 2011. She is now working in Hong Kong as a consultant for Green Globe Partner (China).

校友陳鵬之於2009年文化遺產管理學士學位畢業後;到香港大學修讀碩士課程。近期,他撰寫的新書《青蚨飛去 — 澳門文化遺產的經濟思考》正式出版。11月初,陳鵬之應澳門文物大使協會邀請,回澳出席《青蚨飛去 — 澳門文化遺產的經濟思考》專題講座,與在場人士分享港澳修復文物建築的不同之處。 校友黃好於2011年文化遺產管理學士學位畢業後;到香港中文大學修讀碩士課程,目前在香港擔任綠色環球(中國)雜誌顧問,11月出版的PATA Compass 更刊登了她的專訪。

Pavie’s Road to Excellence

For a wine lover or a connoisseur, the name “Château Pavie” conjures up wonderful wines from Bordeaux. The history of this winery dates back to Roman times like many of its neighbours in St. Emilion, where there were orchards of lovely deep-coloured peaches. The name “pavie” was named after it in the middle of the 19th century, as in French, pavie is peach.

In the end of the 19th century, Ferdinand Bouffard bought a few plot of land from different families to establish Château Pavie, which is more or less the shape of the present winery. Bouffard invested huge amounts of capital and resources to improve the vineyard and winery, leading the winery to a successful road. Unfortunately phylloxera destroyed most of the grapevines in Bordeaux and after the World War I, Bouffard was not able to continue the business and sold it to Albert Porte, who owned the business until 1943 when Alexandre Valette bought the property. After his death, his grandson Jean-Paul Valette, who took over the management of the winery and successfully managed to elevate Château Pavie to Premier Grand Cru Classé B in 1954.

Then in 1998, Valette sold to Gérard Perse, a milestone for Château Pavie, who is regarded one of the most important figures in the development history of Château Pavie. Gérard Perse sold his supermarket business and first brought Château Monbousquet in 1993 followed by Château Pavie-Decesse in 1997, and finally Château Pavie in 1998. With big plans for Château Pavie with no expenses spared, Gérard Perse rebuilt Pavie, creating a modern winery with attention to detail and hired the famous flying wine maker Michel Rolland as his consultant. This started many new winemaking procedures by introducing leaf thinning, green harvest, severe pruning methods, encouraged malolatic fermentation, bâtonnage, short period of maceration and fermentation in oak barrels. Gérard Perse also brought the yield from 55hl/ha to a remarkable low yield at 30 hl/ha which resulted in a much concentrated and intense flavour of wine compare with the ones in the Valette era. Nowadays, the wines of Pavie are around 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon, with an average vine age of 40 years. It is often not compared to the traditional style of past Saint-Émilion’s, especially compared to what was made in the Valette era, as well as its neighbours but nevertheless a fine Claret.

This brought the wine to the attention of famous wine critic Robert Parker, and the ratings for Château Pavie since Gérard Perse took over have been consistently high with no less than two 100 point wines. One famous vintage that divided people was the 2003, when the 2 most influential wine experts on the planet, Robert Parker and Jancis Robinson had totally different points of view towards the vintage. The drought weather enhanced the Gérard Perse style of concentrated wine, which Jancis Robinson used the words “unappetising” in the review and finally gave a 12/20 rating to this wine. On the contrary, Parker loved the wine and gave a high score. On the 2000 vintage which received 100 points, Robert Parker summed up the situation perfectly, “this is the kind of phenomenal wine that Perse's critics were afraid he might produce; a no-compromise and immortal wonder that represents the essence of one of Bordeaux's greatest terroirs, life is too short not to own and consume the 2000 Pavie.”

This brings me to the immortal words of John Cleese as Basil Fawlty “I can certainly see that you know your wine. Most of the guests who stay here wouldn't know the difference between Bordeaux and Claret.”

One of the biggest news stories in the wine world recently has been the promotion of Château Pavie from Premier Grand Gru Classé B to Premier Grand Gru Classé A, on the classification scale by Saint-Émilion 2012 with Château Cheval Blanc, Château Ausone and recently Château Angelus joining together. Gérard Perse, along with the charming Chantal Perse have been working tirelessly together with daughter Angelique and husband Henrique in contributing to the fine wine world with Château Pavie. Without a doubt, 2013 will be another exciting year for the Pavie team as they continue to strive for excellence and set new benchmarks in the area of fine wine. .

柏菲莊(Château Pavie)這個名稱總讓人想起優質的波爾多葡萄酒,該酒莊從19世紀末起受戰爭破壞和多次易手,直到莊主Gérard Perse把酒莊重新改造,與她的女兒及丈夫多年來努力經營,讓柏菲莊成為聞名於世的釀酒廠。近年葡萄酒界最大的盛事就是於2012年從聖艾美隆(Saint-Émilion)葡萄酒分級中由B級擢升至A級(最優質級別),加入了白馬莊(Château Cheval Blanc)、奧信莊(Château Ausone)及最近加入的金鐘莊(Château Angelus)。2013年柏菲莊將繼續鑽研更卓越的葡萄酒,為該區葡萄酒創更高的水準。
