President's Message

On Student Mobility Conducting classroom lectures is perhaps one of the most common ways of imparting knowledge to students. Over the years, new forms and means of communications technology have made it easier to achieve a part of that without having to be confined to a certain space and time. Even before the advent of such a change, we had been encouraging and financially supporting students to be on the move, to get out of their comfort zone and physically explore the outside world. By immersing in a foreign environment, we challenge the students to observe, compare, and reflect on different aspects of their professional and personal strengths and weaknesses vis-à-vis their host counterparts. As our student population grows, we have seen an increasing number of active IFT students engaging in various activities abroad – field trips, exchange, internship, summer programmes, conferences, seminars, etc. A recent example is the newly established Pacific Asia Travel Association (PATA) Macau Student Chapter, led by IFT students and supported by students from other local higher education institutions, that was inaugurated at the 2012 PATA Annual Conference in Malaysia. In her opening speech, IFT student Ariel Lin who has assumed the role of the President of the PATA Macau Student Chapter avows her commitment to avail Macao tourism and hospitality students of more overseas experience opportunities. Another team of IFT students that shared the same stage were freshmen and sophomores who entered the final round of the PATA Social Entrepreneur Challenge competition. They impressed the jury with their social enterprise idea and brought home the Audience's Choice Award. Besides Malaysia, other students had packed up for India, Vietnam and Italy for lessons on heritage management and hospitality. We hope to transform more Macao students into responsible global citizens in the years to come.

IFT Student Announces the Establishment of Pacific Asia Travel Association Macau Student Chapter


On 19 April, during the Chapter Colloquium of the Pacific Asia Travel Association’s (PATA) Annual Conference in Kuala Lumpur, Tourism Business Management Year 3 student, Ariel Lin announced the establishment of a PATA Macau Student Chapter as the Chairlady of the Student Chapter.

The PATA Macau Student Chapter was formed by students from IFT, the University of Macau and from the Macau University of Science and Technology. Students from the Macao Polytechnic Institute will be joining the association in the near future.

The aims of the student chapter are:
- To provide a forum for student chapter members to contribute to and share tourism knowledge and trends with all interested parties and potential young professionals
- To assemble student representatives of PATA at regular intervals to facilitate member integrity and closer working relationship to enhance the efficiency and efficacy of the student chapter’s management
- To implement specific PATA and PATA Macau Chapter events and projects in compliance with the goals and objectives of PATA
- To obtain opinions of student chapter members on any PATA and the PATA Macau Chapter initiatives

IFT looks forward to the contribution from the Student Chapter in terms of strengthening the links between students from different local higher education institutions, encouraging youngsters to speak out their creative opinions and to nurturing future tourism professionals.

IFT Students Win ‘Audience’s Choice’ Award at the PATA Social Entrepreneurs’ Challenge


Tourism Business Management Year 1 and 2 students, Jelana Wang, Kelly King and Helen Liu won the ‘Audience’s Choice’ Award in the Pacific Asia Travel Association (PATA) Social Entrepreneurs’ Challenge.

The 2012 PATA Social Entrepreneur Challenge was a platform to showcase the new ideas of the young, dynamic and creative talents in the tourism and hospitality industry. It also served the purpose of providing new socially responsible business plans for entrepreneurs. It challenged full-time students from PATA member schools in tourism, hospitality or culinary arts to submit a video on a socially responsible tourism business idea on YouTube (maximum 5 minutes) fitting either of the following themes: changes in travelling patterns; changes in tourism and hospitality sectors; innovation in tourism and hospitality products; exploration of new tourism products; the influence of technology in the tourism industry; and tourism’s extra disciplinary roles.

The competition attracted more than 26 individual and group participants from various regions and countries of the Asia Pacific region.

The IFT Team, with the topic of “The Influence of Technology in Tourism Industry”, was one of the three finalist teams invited to present their ideas to a panel of judges at PATA Annual Conference in Kuala Lumpur, 21-22 April 2012. During a rigorous competition, IFT Team performed outstandingly and won the “Audience’s Choice” Award.

Field Study Trip on the Cultural Heritage Management of the World Heritage Site of Goa, India


Established in 2005, the IFT’s Bachelor of Science in Heritage Management Programme is a pioneer in the region in the delivery of heritage management focused training to future leaders and managers in the heritage management field. To allow the graduating class to gain further international exposure to heritage management practices and situations, a field trip to the churches and convents of old Goa, one of India’s UNESCO World Heritage sites, was organised from 30 March to 10 April. Thirty-five students of IFT’s Heritage Management Programme and two faculty members, Dr. Sharif Shams Imon and Philip Chan, took part in the field trip.

According to World Heritage nomination documents, Goa is a monumental centre charged with historical significance. The monuments of Goa, “Rome of the Orient”, exerted great influence from the 16th to the 18th century on the development of architecture, sculpture and painting by spreading forms of Manueline, Mannerism and Baroque art throughout the countries of Asia where Catholic missions were established. The churches and convents of Goa are an outstanding example of an architectural ensemble which illustrates the work of missionaries in Asia (UNESCO, 1982).

Macao and Goa have many things in common: both have similar colonial past as trading ports and missionary centres, and both have urban cores that have been inscribed on the UNESCO’s World Heritage List.

The Bachelor of Travel & Tourism Management Programme of St. Xavier College, Mapusa, Goa (SXC) (affiliated to Goa University) acted as IFT’s partner institution while the Archaeological Survey of India (ASI) supported the trip by providing a resource person.

The field study trip comprised of 10 full days of workshops, field work and site visits, and 2 days of air and land travel. The faculty member and 20 students from the Bachelor of Travel & Tourism Management Programme of the SXC worked jointly with the IFT students and faculty members.

Upon arrival at the site, the students were divided into 9 groups and introduced to their specific project sites. These sites were grouped into 3 nexus, namely Area A: Candolim, Calangute and Fort Aguada (a developed beach resort area with historic fortified structure), Area B: Fountainhas, Church Square, Campal (an old mix-used district in urban setting) and Area C: Miramar, Santa Monica Jetty and KTC, Dona Paula (a popular waterfront area with high social significance). On the first workshop day, the students attended lectures delivered by a representative from local tourism ministry, a faculty member of the Goa College of Architecture and a social advocate. They alternated between indoor workshop sessions, interaction with local resource people and instructors, and independent fieldwork at their respective study sites. To broaden IFT students’ knowledge horizon, IFT faculty members also arranged several visits to various heritage sites in Goa, such as Chapora Fort, Braganza House (a historical mansion), Mahadeva Temple (a 13th century Hindu temple in Tambdi Surla), Safa Masjid (a 16th century mosque in Ponda), Usgalimol pre-historic rock carving and Panjim’s Church Square.

The students made two presentations including the final project recommendations. Two architects, a social researcher, a social advocate and a faculty member of SXC attended the presentations and provided feedback to the students.

Feedbacks from the trip participants, including the IFT students and local counterparts in Goa, showed that the field study trip helped the students understand the complex issues of cultural heritage management and that the trip achieved all of the trip objectives. Feedbacks from the resource persons show that despite the challenges of being in a foreign environment, the students managed to produce high quality output within the limited project time.

Field Study Trip on Heritage Site Management at UNESCO site in Hue, Vietnam


To allow the graduating class of the Tourism Business Management Programme to deepen their understanding of principles through experiential learning and to widen their international exposure to tourism, a field trip to the UNESCO site in Hue, Vietnam was organised. Twenty students and Dr. Wantanee Suntikul, took part in the field trip from 4 to 10 April.

Hue is situated in the geographical center of Vietnam on the banks of the Perfume River with easy access to the South China Sea and with a total population of 950,000. It was the imperial capital of unified Vietnam from 1802 to 1945 and served as the political, cultural and religious centre under the Nguyen Dynasty.

In 1993, the Complex of Hue Monuments was inscribed on the list of UNESCO World Cultural Heritage. UNESCO involvement in heritage preservation and the restoration in Hue started as early as the 1980s. Despite the promising achievements in safeguarding the heritage sites in Hue, there are new challenges emerging in the current context such as the lack of a master plan for Heritage Management, the pressure of urbanisation and a lack of professional staff. With these challenges ahead, it will be necessary to conduct sound research for the conservation and development of Hue’s cultural heritage.

The field study trip was comprised of five full days of workshops, fieldwork and the conducting of surveys. IFT students and faculty member were warmly welcomed and received by the Faculty of Hospitality and Tourism (HAT) of Hue University. Faculty members and students from HAT worked jointly with IFT students. For the five field study days, students discussed their survey strategies and conducted research related to tourism development in Hue. Students analysed and presented their findings and they each engaged in the exchange of ideas and opinions.

The UNESCO office in Hanoi spoke highly of the IFT students who participated and expressed that the research findings would be useful for their office. IFT students also got high praise from faculty members of HAT for their tourism knowledge, team spirit and their keen attitude towards learning.

Students revealed that the field study trip helped them develop deep understanding of the heritage perseveration and tourism development challenges faced in Hue. Team spirit was highly built up between IFT and HAT students. Moreover, being in a foreign country, the involvement of local students in the learning process and extended interactions with stakeholders helped the students learn how to deal with heritage and tourism issues in an unfamiliar place and culture.

Field Study in Mai Po Nature Reserve, Hong Kong


A field trip to Mai Po Nature Reserve took place on 16 March and was organised by Dr. Wantanee Suntikul who accompanied 42 Tourism Business Management Year 3 students on this visit.

The group was welcomed by the Park Manager of the World Wide Fund for Nature (WWF). The students were led by the WWF guide to view the infrastructure and different site, such as a bird watching house, a lotus pond as well as traditional shrimp farming ponds called “gai wai” and offered nature interpretation. During the field trip, the guide also explained the site management and tourism activities around the Reserve.

In the afternoon, the students visited the mudflat and were brought back to the information centre to listen to lectures organised by WWF staff. The first lecture was about ecotourism in Mai Po Nature Reserve, challenges, carrying capacity and the balance between conservation and finance. Education on conservation of nature is highly important for the Reserve. Another lecture talked about the marketing strategy and product development at Mai Po Nature Reserve. The lectures were followed by a Q&A session by the students.

Field Study in Ocean Park, Hong Kong


On 20 April, Dr. Wantanee Suntikul brought 41 Tourism Business Management Year 3 students enrolled in the “Development and Management of Attractions” course on a study visit to Ocean Park in Hong Kong.

The purpose of the trip was to study and understand the marketing strategy and management of an exemplary theme park attraction. The group was welcomed by Ms. Vivian Lee, the Marketing Director of Ocean Park who gave a lecture on marketing strategies of the park addressing the issues and challenges that they are facing and the strategies employed to overcome these difficulties

The lecture was followed by a question and answer session. Ms. Lee took time to answer the questions and shared her insight and experience with the students. The trip offered the students a valuable overview of the many factors involved in the marketing and management of such a complex and successful operation.

This highly relevant trip was found to be a valuable learning experience for the students.

In the afternoon, the students spent time on site doing site observations to better understand the physical infrastructure of Ocean Park. Their observations were discussed in the subsequent class session.

Exploration in Cheung Chau: a Field Trip Hosted by IFT’s Heritage Club


On 5 June, the IFT Heritage Club embarked on its second field trip of the year to Cheung Chau, Hong Kong with the first, in March, to Guangzhou.

The Cheung Chau heritage trip was led by Mr. Philip Chan, Lecturer in Tourism and Heritage Management, with the aim of this field trip to raise the participants’ awareness and understanding of the outlying island’s rich heritage.

Cheung Chau is one of Hong Kong’s outlaying islands, which has the peculiar shape of a dumbbell and its unique shape has led to its informal name of ‘Dumbbell Island’. This trip was a guided walking tour comprised of eight attractions; Cheung Chau Pak Tai Temple, Pak She Tin Hau Temple, Cheung Chau Theater, St. John Hospital, Fong Bin Hospital, Hung Shing Temple, Sai Wan Tin Hau Temple and Wing Shing Tong.

During the one-day guided tour, members of the Heritage Club and Mr. Chan gave an interpretation of the architectural styles, social values and related stories of the sites to the other tour’ participants. Everyone involved experienced another side to Hong Kong made up of pristine natural environment and the interesting social customs of one of the territory’s most heritage rich outlying islands. IFT’s heritage students learnt from real life examples of Hong Kong’s graded historical buildings, consisting of many Chinese temples and examples of public architecture.

為了提升同學們對離島文化遺產的認識,旅遊學院文化遺產學會舉辦了「探索 ‧長洲」考察之旅,活動一共遊覽了八個景點,而這些景點均以中式廟宇及公共設施建築為主,大部分景點更被評級為歷史建築級別三級以內。是次考察,讓參與者欣賞長洲當地的歷史建築和自然風光,體驗了香港離島的風土人情,更增進了對文化遺產的認識以及學會以不同價值和文化特色來欣賞一個地方。

Exploration in Guangzhou


Heritage Club is the sub-organisation of Student Union which aims to raise the awareness and increase the understanding of heritage among students. Our club organises annual educational trip for the students. Guangzhou is the provincial capital of Guangdong with 2000 years of history. Many magnificent cultural heritages still remain in Guangzhou. In this trip, Heritage Club visited three heritage sites: Museum of the Mausoleum of the Nanyue King, Chen Clan Academy and Sun Yat-Sen Memorial Hall of Guangzhou, all of which reveal history of Guangdong and the southern China. The trip gave the participants an opportunity to develop a better understanding of the heritages and their management which they will be able to apply later in the future.

Special Prize Awarded to IFT Students at the International Congress in Rome


A group of Year 2 students, Celina Ferreira Kam, Laura Choi, Reahanna Ip and Sharon Liu from Tourism Event Management and Hotel Management classes was awarded a Special Prize for their presentation at the International Fair of Incontro Romano (IR) in Rome from 31 March to 8 April. They presented “A Traditional Chinese Way to Celebrate Having a Newborn Baby”, explaining the importance of maintaining such a meaningful Chinese tradition like a full moon birthday celebration. They also promoted ways to make gifts more presentable and attractive from the events management view point. As the main topic of IR 2012 was “Life, a Gift”, this Chinese custom seemed well-related to life and had a very cultural foundation. Students also presented a research report about “The Perception of Macao Service Leaders of Authentic Service” and a video on “Authenticity of Service in their Workplaces”.

The theme of IR 2012, “Life, a Gift”, could become an interesting topic for discussion among students in the field of tourism and hospitality management. The congress invited participants to discover the gift of life through professional work. Students often have been taught in school or have been trained in their workplaces that offering quality service to customers from a prospective of achieving a long-term personal and organisational success. IFT students should consider other motives for performing their best in the workplace. Through preparing the report and video for entering the IR congress, students were able to explore different values in their life. They agreed that we all had the duty to share part of our life potential such as our talents in our workplaces. They concluded that the passion to work in the tourism and hospitality industry is a gift. On the other hand, the genuine gratitude which is expressed by the guests is a more valuable gift than any gratuity or material reward received in return.

羅馬國際會議旨在增進正修讀及從事款待服務業的青少年對行內趨勢的知識;並進行探討,以及提升服務業從業員的自我價值。每年會議,集合數百名來自世界各國的學生就大會每年不同的主題作交流探討,參與學生需要成立團隊,遵照大會指定的格式提交一份作業。於林玉琼導師的指導及會議於澳門的合作機構東亞教育協會的協助下,本學院4名學生提交了一份題為「成為真正的款待員基於明白:生命是一份禮物」的報告及一段六分鐘的短片。學生們就影片主題詳細地訪問了5名服務業領導,邀請他們根據學生報告主題分享個人經歷。

To Promote a Caring Message, IFT Students Organised Charity Event “2012 Love Never Dies”


The charity event “2012 Love Never Dies” (2012 LND) organised by Tourism Event Management year 3 students has come to a successful end. The idea of the event was derived from the 2012 doomsday and negative energies arising in the society. With a strong faith in their heart, the students believe it is the existence of love between people which links us tightly. It enlightens our lives and creates a harmonious world. Through these series of events, they wanted to disseminate the message of love towards the Earth and the people around them.

2012 LND was kick started in March with “Love. New Life” Tree Planting activity co-organised with the Civic and Municipal Affairs Bureau. 250 seedlings were planted in Taipa Pequena Hill which experienced a fire in the past. The symbolic planting of ‘a new life’ represented a commitment from each of the participants to the mother earth.

Next event was “Love. Light Up”, a Light Painting Photo Competition and Exhibition held in response to the global “Earth Hour” campaign. Winning photos were exhibited in Macau Science Centre in May and during “Earth Hour”, the students performed two flash mobs at the Ruins of St. Paul’s and St. Dominic’s Church, displaying their “Lover Never Dies Love Mark” in this significant moment.

The culminating event of this campaign was “Love. Experience” Blind Dinner on 27 April during which the blindfolded guests enjoyed their meals in the dark. It brought out the message of caring for the weak. Participants experienced the needs of people with eye diseases, and vowed that they would be more active in helping the needy in the future.

2012 LND had drawn the attention of the Macao media. With the activities reported in newspapers, student interviews on the radio and their recent documentary feature in a TDM Programme – Our People, Our Life, the students had effectively raised public awareness of the event.

2012 LND is a 4-month long project for the Event Management Course taken by the year 3 students which aims at applying the theories they learnt to a practical work situation. The students organised everything from scratch and turned this assignment into a real event under the teaching and guidance of their course lecturer. Although they had gone through a lot of trial and error during the process, they treated the arising obstacles as an inspiration for reaching the next milestone. This has not only earned them experience, but also the much needed confidence for their future careers. The students are pleased to have played a role in contributing to this meaningful event, and hope the community can be further involved in the support of people in need and the world.

With the active support from the public, a total of MOP38,178 had been raised from the above events and was donated equally to Caritas Macau and ORBIS Macau, passing the torch of love to the community.

有賴社會各界踴躍支持,旅遊會展及節目管理三年級學生策劃的慈善活動「2012‧讓愛起程」得以成功舉行。一系列以「愛」為主題的活動共籌得善款澳門幣38,178圓,已平均捐贈予澳門奧比斯及澳門明愛。「2012‧讓愛起程」於三月展開,當中活動包括「愛‧萌芽」植樹日、「愛‧燃起」光影塗鴉攝影比賽及展覽以及「愛‧體驗」暗黑晚宴。學生希望透過一系列的主題活動,藉以提高大眾對環境保護及互助互愛的意識。

The first IFT Alumni Reunion Dinner was successfully held on 11 May. Honourable guest Dr. Fanny Vong, President of IFT, thanked for the alumni support to the Alma Mater and emphasised that the success of IFT relies on their professionalism and contribution to the hospitality industry. Antonio Chu, Head of Technical and Academic Support Division introduced the function of IFT Alumni Affairs to the alumni and urged fellow alumni to give valuable suggestions and comments on the alumni affairs. He hoped it would be an annual event providing alumni a chance to catch up with old friends and share the hardship and joy of professional life. During the dinner there were lucky draw and singing performance of Zoe Huang and Frandison Lok who were winners of 2012 IFT Singing Contest, making the evening a memorable one.

IFT and Cornell University School of Hotel Administration co-organised Executive Development Programme on “Essential Skills for Leadership”


Institute for Tourism Studies (IFT) and Cornell University School of Hotel Administration co-organised an Executive Development Programme on “Essential Skills for Leadership” on 29 and 30 March.

The course allowed participants to enhance the understanding of their own leadership styles and strengthen their abilities to lead others in hospitality organisations. Participants also learnt how to overcome blockages that may impede their ability of leading and managing others effectively. The programme attracted 35 registrations from professionals working in local hotels and mega resorts. The programme and certificate presentation ceremony was held at Grand Hyatt Macau, with support from Melco Crown Entertainment.

IFT had the honour of inviting Mr. Robert B. Perry to be the course facilitator. He is a faculty member of Executive Education, School of Hotel Administration, Cornell University and President of Robert B. Perry Associates, Inc. Formerly the Director of Management Development for Trans World Airlines and subsequently Director of Training for Hilton Hotels International, Mr. Perry has lectured on management topics at seminars all over the world. His teaching experience includes the American Management Association, the Cornell University School of Hotel Administration, and the Institut de Management Hotelier Internationale (IMHI) - in Cergy-Pontoise, France.

IFT and Ecole hôtelière de Lausanne have co-organised an Executive Development Programme on Housekeeping Management


In order to provide diversified training opportunities for industry professionals and further enhance management quality of the local service industry, IFT and Ecole hôtelière de Lausanne (EHL) co-orgainsed a 2-day Executive Development Programme on Housekeeping Management from 5 - 8 June. IFT was pleased to see a positive response to this programme's with two sections of keen participants. The modules gave participants insight on all the critical aspects of managing a Housekeeping department, covering a diversity of important aspects from required skills and competencies to the introduction of new techniques and methodologies to improve profit levels. The importance of personal development and career planning for housekeeping staff is also explained.

IFT had the honour of inviting Prof. Rose-Marie Bannenberg, an experienced professional in the Housekeeping area within the hospitality industry for more than 12 years, to be the facilitator of this programme. At EHL, she was the Executive Housekeeper for 2 years, her first position after completing her bachelor’s degree at EHL. After this period and carrying out the spirit of her entrepreneurship, she acquired Hôtel des Vouageurs in Lausanne which she owned and managed for a period of 10 years. Passionate for sharing her rich experience in the industry, she decided to return to the EHL in the year 2000 as a Professor of Housekeeping Management; teaching Laundry & Cleaning of Support Centers and General Supervision. She is also a Swiss Federal Examiner for Hospitality Industry Programmes.

The aim of the programme is to help participants to understand the importance of efficient housekeeping systems for delivering excellent customer service and valuing job functions by increasing professionalism. Programme topics include: Ÿ

- Defining new trends in housekeeping, laundry and public area operations. Ÿ
Identifying the characteristics of public areas and the need for an efficient team in the cleaning of these areas. Ÿ
- Describing the importance of maintaining linen and equipment inventory. Ÿ
- Organising, managing and evaluation of each Housekeeping Department. Ÿ
- Describing the effects of efficient communication; with guests, interpersonal and inter-departmental communication.

As the tourism and hospitality industry is growing swiftly in Macao, so will the demand for knowledgeable professionals. This course offers key insights on how to establish valid procedures and organisation standards to anchor a consistent service level, which in the end will increase customer satisfaction.

IFT is always striving to enhance its research and teaching so as to contribute to the industry and the society. By organising seminars and workshops, IFT constantly shares with the industry the most updated information and research findings about the future development of Macao’s tourism industry and ways to enhance it.

Multimedia Presentation by Heritage Management Year 2 Students to Celebrate World Heritage Day


Every year, the 18th of April is celebrated as the World Heritage Day (International Day for Monuments & Sites) throughout the world. This commemorative day was established in 1982 by ICOMOS (International Council on Monuments & Sites) and was later endorsed by the UNESCO (United Nations Educational, Scientific and Cultural Organization) General Conference in 1983.

To join the worldwide celebrations of the day, the Heritage Management Year 2 students organised a multimedia presentation entitled “A Tale of a Street – Community Heritage of Rua de Tomás da Rosa” on 20 April to reflect this year’s World Heritage Day theme “World Heritage and Sustainable Development: the Role of Local Communities”. The event was a required course component for Heritage Interpretation taught by Dr. Sharif Shams Imon and was designed to enhance and promote better understanding of Macao’s cultural heritage.

The event attracted enthusiastic response from a wide range of audience including the students of the Escola Católica Estrela do Mar and Escola Tong Sin Tong. In addition to the multimedia presentation, the event included a series of interactive sessions that gave the audience the chance to understand some traditional but rapidly disappearing activities, such as Firecrackers Catching. The audience was able to understand the harmony in the communities in Macao in the past and develop an awareness of the importance of traditional neighbourhoods. The event aroused the concerns over traditional communities and revived the hopes that the spirit of good relationships and harmony within the communities can be passed along.

為慶祝國際紀念物與地方日,文化遺產管理專業二年級學生以本澳傳統社區雀仔園為故事背景編制「羅憲復憶 - 雀仔園的人與情」舞台劇。以切合聯合國教科文組織屬下之國際文化紀念物與歷史場所委員會今年所定的主題「世界遺產與可持續發展:當地社區的作用」。表演期間設有一系列互動環節,讓觀眾能了解已消失但意義重大的民間活動 - 搶花炮。同時,觀眾亦能透過話劇瞭解澳門昔日社區和諧的鄰里關係,藉著活動的舉行,引起大眾對傳統社區的關注,並希望睦鄰關係的精神得以傳承下去。

A Lecture to IFT Students on China’s Foreign Policy


In order to facilitate students’ learning on foreign affairs and international relations of our country, IFT invited Mr. Yin Juming, Director-General of Policy Research Department of the Office of the Commissioner of the Ministry of the Foreign Affairs of the PRC in Macao SAR, to give a lecture on China’s foreign policies and foreign affairs on 19 April.

Close to 100 students and staff members attended the lecture. Mr. Yin introduced the development of China’s foreign affairs in the past 60 years starting from the establishment of the People’s Republic of China.

Mr. Yin also talked about the policy of consular service, the focus of the service in recent years and shared his ideas on foreign affairs related to Macao as well as the harsh experience of being a diplomat in war-affected regions. Last but not least, Mr. Yin explained to the attendees how the Macao SAR Government establishes external relations in the context of Macao Basic Law and what Macao residents have to pay attention to while they travel overseas.

During the seminar, Ms. Florence Ian, the Vice-President of IFT presented a token of appreciation to Mr. Yin Juming for bringing the students closer to the latest developments in China’s foreign affairs. By organising diversified activities, it is hoped that IFT students can keep a close eye on what’s happening around them and be more concerned about the future of our society and our country.

“Speak Up! Memories of Coloane”: an Event Organised by the Heritage Management Year 4 Students


On 12 May, IFT Heritage Management Year 4 Students organised the “Speak Up! Memories of Coloane” event. This was a student project led by IFT Visiting Professor Richard Engelhardt (Co-Convenor of the UNESCO-ICCROM Asian Academy for Heritage Management) and Dr. Johannes Widodo (Associate Professor at the Department of Architecture and the Director of Centre for Advanced Studies in Architecture at the National University of Singapore). The event aimed at providing a platform for local communities to speak out on their unique and memorable stories reflecting local lifestyle with distinctive feature, as well as discovering rarely told history and memories from long time Coloane residents. This event was mainly established on the basis of story sharing by local villagers, while recording was conducted in the form of a documentary including movie, website and brochures, which were shared throughout the event. The overall objective of holding this event was to promote the unique local customs and characteristic social values of Coloane to the public in order to improve the understanding of its rich history and to build an appreciation for the spirit of Coloane. This event nicely led to an accord with the locals’ stories to sustain the traditional unique culture of Coloane.

The IFT Student Presents at the Chinese University of Hong Kong

Tourism Business Management Year 4 student, Jake Cheng recently presented his paper titled “An Update of Ecotourism in China” at the Symposium of Sustainable Tourism in Urban Environments held at the Chinese University of Hong Kong between 20 and 22 April. Jake’s paper utilises a qualitative research method and provides an update on Chinese tourists’ travel motivations and behaviors at various eco-sites. The study was conducted under the supervision of IFT’s Visiting Assistant Professor, Dr. Anthony Wong.

Walt Disney World Offers Internship Opportunities to IFT Students


IFT strives to offer students various practical experiences, enabling students to master the requirements of the industry and be prepared for the challenges in the job market. All bachelor degree programme students are required to complete a 6-month internship programme at tourism organisations in Macao or overseas in their 3rd year of study.

Since the establishment of the internship programme, performances of the students have been excellent and feedback from the industry has been very positive. In the previous academic year, over 50 organisations and corporations offered internship opportunities to IFT students. To broaden the horizons of the students, IFT aggressively explores opportunities for overseas internships. Students can choose to join the internship programme in large corporations in Mainland China, the USA, Europe, South East Asia and Hong Kong SAR to experience the local cultures.

IFT and Walt Disney World have been worked together since 2006 to offer different internship programmes to students. Currently, the programme includes:

• A 6-month Cultural Representative Programme of Food & Beverage Service at Disney World China Pavilion for year 3 students
• A 1-year Cultural Representative Programme of Merchandise and Food & Beverage Services for graduates
• The “International College Programme” offered by the Florida State University and Disney World - Participating students will attend an intensive hospitality course at the Florida State University before they perform internships at the Walt Disney World

On 14 March and 16 April, Disney World International Recruitment Team was invited to IFT for a talk on the internship programme, as well as a preliminary interview with interested students. The recruitment team consists of Ms. Sue Sharpe, International Recruitment Recruiter, Mr. Fernando Oliveira, Guest Service Manager of Attractions at Epcot and Ms. Cindy Yu, Administrative Officer of China Pavilion. Successful candidates will travel to Walt Disney World in Florida, USA to learn theme park operations’ knowledge and customer service skill. They can also experience different cultures through the interactions with other students from around the world.

Running a Retail Business as a Group Project

Tourism Retail and Marketing Management Year 3 students have recently completed their group project of either establishing a retail business or conducting a marketing project for well established companies in Macao. In the course of Retail and Business Marketing Project lectured by Dr. Yan Io, students were requested to apply all the knowledge they had learnt to their group project. There were a total of 9 groups in the class, many of which completed their project very successfully. Some of them have been invited to share their experience as described below:

“We have established an online boutique for our group project. To get well prepared for our first shop, we did everything we could to make it work smoothly such as conducting a street-pull survey interviewing 100 people. We have invested MOP3,040 in our retail business, and now the business is running very well. It is expected to breakeven in 2 months’ operation time (end of May) and the shop often receives excellent comments. The number of transactions keeps increasing. We are very contented to have gained much practical entrepreneurship experiences through the project with a deep understanding of the significance of a functional team. The project is not only a platform to learn practical knowledge and entrepreneurship, but also a chance to actualise our dream and to build a better bond among teammates.”

“We have conducted a marketing project for Coca-Cola, Macao, aiming at driving the sales volume of Coca-Cola products by issuing vouchers for potential customers and joining hands with some F&B units at Venetian, Macau. To better design the voucher policy, we conducted a marketing survey at Venetian and paid a field trip to Venetian’s food court and Border Gate beforehand. So far 13 out of 15 F&B units at Venetian have agreed to join our voucher marketing plan. Coca-Cola is not only satisfied with our effort and creativity, but also glad to offer us a job opportunity.”

“Our group has set up an online business, Bring Bling Art, to sell personalised amphibole products through internet and smart phone cases through our consignment partners at their physical shops. This project has given us a valuable chance to learn to manage a retail business from its establishment to operation. To maximise the profit margin with limited capital and time, we had to deal with some tough issues in terms of cost and schedule planning, risk estimation, and bargains. Now our business is running very well and making a good profit. It is really a valuable experience to establish a business during our university life!”

“Our project is to establish an online second handbag trading business. We spent over 3 months on this project, and the business is running well now. This project has given us a chance to use our practical skills learnt from the internship programme and experience running a real retail business. This project allows us to develop our critical thinking skills and gives us an opportunity to discover our personal interest, strengths, and weaknesses. Through this project, we have earned a lot of constructive experience and broadened our horizons. We feel that step by step we are getting better prepared for our future career path after graduating from IFT.”

Recruitment Activities in Mainland for 2012/13 Intake

While still working on the selection of local applicants, IFT has already commenced the recruitment activities in the mainland. The National Education Department has authorised IFT to recruit mainland high school leavers for the new academic year. With the assistance from Tertiary Education Services Office, IFT, together with other local higher educational institutions, embarked on its way to Beijing, Lanzhou, Hangzhou, Huhehaote, Shanghai and Xiamen on a promotional campaign during which Provincial or Municipal Admission Offices were visited to discuss how the application procedures could be facilitated more effectively.

IFT also participated in Student Recruitment Fairs in Guangdong, Zhejiang and Fujian held in June.

Macao Team Wins the 1st Asia Team Trophy Contest
 


The Macao team, formed by Jeffrey Lao from IFT, Wong Weng U from the Sands and Ariel Chi from the City of Dreams, won the gold medal in the 1st Asia Team Trophy Contest 2012, held by Escoffier Asia at this year’s SIAL exposition held in Shanghai on the 10 May.

Since 2007, Escoffier Asia has been creating great opportunities for young chefs to demonstrate their skills. This year, apart from the Youth Hope Contest, the organiser added the Team Trophy Contest. Four teams, two from Mainland China, one from Hong Kong and one from Macao, were selected from 5-star hotels to compete for the award.

Jeffrey Lao, an alumnus of our Pastry and Bakery Diploma Programme and the Pastry Chef of IFT, recalled the challenges they met in the competition. The first one for them was the mutual understanding among team members. Since they were from different organisations, they spent quite some time to get to know and compromise on the working habits and requirements of one another. As the competition was held in Shanghai, they also had to ensure everything they needed would be available on the date of the contest. The teams had to finish a 10-portion French set meal with appetizer, main dish and dessert, plus a show piece within 4 hours. Even though all equipment and materials were well prepared in advance, they still had to make impromptu adjustments on the spot as the equipment was not working well. “We all enjoyed the contest because everything was so unforeseeable and this was how we could demonstrate and sharpen our actual skills.” said Jeffrey. He also expressed that he had learned a lot and absorbed many new culinary ideas through the contest.

We are so pleased to see our alumnus doing well in the international competition. Good job, Jeffrey, and the Macao Team!

IFT Seeks to Cultivate Talented Young Chefs
 


As a tourism and hospitality educational institute, we see it as our mission to give the industry full support through cultivating more young talents and demonstrating the career prospects in the hospitality and catering industry. Different programmes have been developed in the past few years to cope with this pressing need. Since 2004, Tourism and Hotel School has been offering diploma programmes on western culinary practices and pastry and bakery. In 2010, IFT set up the Western Culinary Arts Practicum Programme with 11 partner hotels to provide the participants opportunities to gain hands-on experience and familiarise themselves with the actual work environment. Last year, we started to co-organise a recurrent education programme on culinary techniques with the Education and Youth Affairs Bureau. These programmes were designed to target diversity groups of participants who have different learning needs. Recently, we learned that our students and alumni have had outstanding performances in various competitions. The latest has been the 2012 Macanese Cooking Competition. On 4 May, Chan Mei Kei, a student of the Western Culinary Arts Practicum Programme, and Lai Hou In, an alumnus of the Western Culinary Skills Diploma Programme, respectively won the first and the second prizes in the competition. The result has been a stimulant to the programme’s facilitators and more qualified and inspirational training programmes are looked forward to.

An IFT Student Wins an International Award
 


IFT is delighted to congratulate Leong Lai Iong for her outstanding achievement in the LCCI examination. On 8 May, Ms. Leong was awarded a World Gold Medallion for LCCI Level 2 Business Administration.

Having been offered globally since 1890, LCCI International Qualifications are among the most recognised and most highly regarded business-related qualification in the world. Every year, approximately 250,000 candidates from different corners of the world choose to take LCCI qualifications, and the LCCI Medallions are awarded to the top scoring participants. With such an intense level of competition, winning an LCCI Medallion indeed represents a very high standard.

Ms. Leong was thrilled and thankful when she learned that she had been awarded the highest score in this international examination. She thought that the medallion reflected not only her perseverance in her studies, but also the insightful guidance of her instructors. She is thankful for the learning opportunities that IFT has provided, and believes that such international qualifications will surely benefit the learners, as well as the local labour market.

Over the last decade, as international investment has been attracted to our city, demand for quality manpower has been stimulated. IFT makes the ‘Top 10’ with the International Air Transport Association’s Asia Pacific Authorised Training Association
 


IFT has been named as a 2012 Top 10 Asia Pacific IATA Authorised Training Center (ATC) by International Air Transport Association (IATA).

Since the1990’s, IFT has been an IATA authorised training center and the only center in Macao to offer IATA/UFTAA International Travel Agent Foundation Course. The programme was introduced to the local travel industry with a wish to provide them more chances to gain internationally renowned recognition.

Every year, the IATA evaluates over 200 authorised training centers worldwide based on the number of students trained and the examination results. To be selected to the Premier Circle and the Regional Top 10 is therefore a major achievement. We are very pleased with IFT’s effort, contribution and achievement in developing human capital for the local travel industry and the Institute is honoured to have received this award.
