The
tourism and gaming industry continues to grow in 2012 with
the latest project to open in town - Sands Cotai – which is
unveiling another 3000-odd rooms, numerous meeting,
entertainment and shopping facilities beginning from April.
The recruitment for human resources to run these operations
has started and the job market is presenting again some new
opportunities, as well as challenges to different
stakeholders. IFT has just accepted applications for the
academic year 2012/13. In line with the market trend,
applications for the day-time bachelor degree programmes saw
a double-digit increase too. The evening bachelor degree
programmes will accept applications in May and an increase
is also expected. Our continuing education and professional
programmes have expanded in variety and scope, covering new
fields in cultural and creative studies, and health and
wellness, in response to the Government’s effort to
diversify the tourism industry and service providers’
attempts to offer better and more professional relaxation
experiences to visitors.
Job opportunities abound here for our students, yet we keep
reminding them – and new comers - to think long-term, and
make serious choice and good balance between their study
time and immediate financial return. At IFT, we offer
extra-curricular activities to enrich students’ campus life
and promote whole person development. With the help of the
industry, we see more structured on-the-job training and
management trainee programmes available. The four years of
university life develops independent thinking and lays a
solid foundation for advanced learning. We hope students
will make the most of this precious stage of their lifetime,
be well-equipped to contribute to society and attain their
career aspirations in the future.

Public Seminar on “Successful Franchise
Partnerships: Partner Selection and Relationship
Development” |

The IFT Tourism Research Centre
(ITRC) together with Oxford Brookes University, UK held a
seminar on 2 December at IFT, on “Successful Franchise
Partnerships: Partner Selection and Relationship
Development”. The seminar, attended by about 30 delegates
from the hospitality and retail industries and government
officials, was the culmination of a two-year research
collaboration between ITRC and Oxford Brookes University on
identifying the key factors in stimulating and maintaining
successful international franchise partnerships. The
research also sought to identify problems and difficulties
faced by local small and medium enterprises (SMEs) in terms
of expanding their economic and commercial operating
advantages. Franchising is an important form for expanding
economic activity and participation especially toward the
goal of diversification and wealth distribution.
During the seminar, the research team comprised of Prof.
Levent Altinay and Dr. Maureen Brookes from Oxford Brookes
University and Dr. Ruth Yeung from IFT, pointed out that it
is important to understand the mutual expectations between
the franchise partners with the goal to protect the brand
image and ensure the product quality as well as to maintain
the standardisation of the product with minimal adaption due
to cultural differences. Dr. Maureen Brookes also commented
that to ensure the sustainability of their business,
potential franchisees have to put more effort on research
which includes the acceptance level of the franchise brand
among the customers in Macao, the potential growth of the
market and the background of the franchisor as well as their
plan for future development.
Dr. Ruth Yeung of IFT suggested that there are plentiful
business opportunities given the growth of tourism in Macao.
Products marketed to local residents should include
innovative ingredients while tourists, in particular those
who come from Mainland China, often look for high quality
and good value products. Macao franchisors can develop
further by following a well-designed franchise model which
provides a standard operating procedure, emergency plan and
human resource management. Finally, SMEs also require
government support to overcome the challenge of the shortage
of human / financial resources and the complication of brand
registration for future business success.

Internship at the United Nations World Tourism Organization (UNWTO) |
|
I would like to express my appreciation and heartfelt thanks to IFT and UNWTO for my two months internship at United Nations World Tourism Organization (UNWTO) at UNWTO Themis Foundation at Principality of Andorra. This wonderful experience provided me with a chance to work in a multi-cultural international environment and gain hands-on skills. While assisting with UNWTO Capacity and TedQual programme, I was also exposed to a variety of topics, which helped me expand my knowledge and understanding of the global tourism industry.
I have been extremely fortunate to have been a part of learning experiences that have opened my eyes to what great teamwork and time management entails. I am deeply grateful to IFT and UNWTO for offering me this opportunity and I am very proud of being an IFT student. I highly encourage all IFT students to take up this opportunity.

The Institute welcomed 600 guests on Saturday, 3 March this year to our Open Day. Prospective students, parents, alumni and the general public had a chance to experience what it is like to be a student here. Coordinated, operated and hosted traditionally by the second year students of BSc in Tourism Event Management and assisted by their first year schoolmates, the event made it possible for everybody to enjoy the practical classes including welcoming and checking-in guests, savouring our delicious foods like homemade sausages and pancakes, tasting wines, making beds, ironing clothes, and the list just goes on...
The guests could also appreciate the more academic side of IFT by visiting our library, classrooms, lecture theatres and sports courts, and learnt about our six specialised degree majors, Student Union activities and the international exposure we’re famous for. Guests also met our current students and enjoyed a musical performance by the Music Society as well as a sharing session with our alumni.
Special thanks go to our alumni who came back to share their IFT experiences (not in order of graduation!): Billy Im, Fiona Tou, Inaciso Chan, Karena Lao, Leona Chan, Olivia Lao, Scott Wong, Starr Xian and Stephanie Lao.

IFT Received Awards from the First Competition & Symposium of Design for Souvenir and Gift of Macao Tourism |

Since the beginning of tourism travel, people have always wanted to bring a piece of their experience back home to share with their friends and family. For travelers, souvenirs that represent the destinations they have been to, or the things they have seen, are typically what they look for. With the purpose to enhance the quality of local souvenirs, Chinese and Western Cultural Creative Industries Promotion Association (Macao) organised the First Competition & Symposium of Design for Souvenirs and Gifts of Macao Tourism. Funded by the Macao Cultural Affairs Bureau, the competition initiated in the beginning of 2011 and works were collected in August. Nearly a thousand design entries from all over the country were received. IFT received the following awards:

The Fourth Book in the Macao Cultural Tourism Series, Food of Macao |
|
With the multicultural occurrence over the centuries, Macao has shaped its primary trait - high tolerance and respect for different cultures and values - which makes this small piece of land a friendly and amiable place for visitors. This special feature has not only been reflected in various significant ways; it can also be “tasted” when people are wandering over the city. In fact, apart from the tangible cultural hybridisation, the food in Macao is also a good manifestation of cultural integration. With an aim to introduce how food affects and represents culture, Food of Macao, the fourth book in the Macao Cultural Tourism Series, was launched by Pearson last December. The authors of the book, IFT’s Dr. Cora Wong and Alexander Chao, seek to provide information about the origins and evolutions of different kinds of food cultures that can be found in Macao. The book is divided into 12 chapters, including the rites of dining; the Chinese cuisine; the Portuguese cuisine; the Macanese cuisine; the Italian cuisine; the French cuisine; Macao snacks; Japanese cuisine; Thai cuisine; Korean cuisine; South-East Asian cuisines and lastly the Vegetarian meals. Upcoming Cultural Heritage Seminar Series |
The Tourism and Hotel School is organising the two following cultural heritage seminars: ‘Ou-Mun Kei-Leok, a Chronicle of Macao and Its Different Editions’ and ‘Cheang Kun Ying, a Historical Personage of Macao’.
Ou Mun Kei Leok, first published in 1751, was the first monograph to record Macao in her historical, geographical and cultural perspectives. The book also describes details of local folks, crafts, customs and habits. With abundant and accurate illustrations, the book is regarded as an important reference for the early development of the city. THS invited Dr. Tang Chon Chit, President of Macau Documentation and Information Society, to host the seminar in which information on the authors and the special features of this historical record will be discussed. In April, Dr. Tang Keng Pan, President of the Association for Macau’s Historical and Cultural Heritage Protection, will spend an evening with us to share his knowledge about the life and the contribution of a significant figure, Cheang Kun Ying. Macao Documentary: Heritage and UNESCO’s Memory of the World |
Thanks to Macao’s inscription on the UNESCO World Heritage list, the Historic Centre of Macao, as well as its significance and preservation, have been brought to our attention. However, to safeguard our cultural heritage, there is always more that can be done.
When stakeholders were discussing the legislation for architectural and cultural heritage conservation, the Macau Documentation and Information Society put their eyes on another form of heritage in our city – to illustrate our heritage in a documentary format. In being one of the first places where the East met the West, Macao was a place where missionaries started their journeys in the Far East. The records of their activities over the centuries have now become an invaluable reference to the world as they have documented the development of Catholicism, and its influences on culture, economics and education in China and Europe. These records, compiled as the ‘archives and materials of the Macao Diocese from the 1550s to 1800s’ were inscribed on UNESCO’s Memory of the World (MOW) for the Asia-Pacific region on the 9 March, 2010. As an extension of the Conservation of UNESCO World Heritage, the MOW Programme aims at facilitating preservation and improving access capabilities through the awareness generated by documentaries.
In order to introduce the Programme and the significance of the local documentary on our heritage to the general public, in May this year, THS will invite Dr. Helen Leong Hoi Keng, Director of the Macau Documentation and Information Society, to share with us the inscription process as seen in the MOW documentary and some of her recent research findings.

Here we are the new members who joined IFT from January – March 2012 |
QI Shanshan joins us as a Visiting Assistant Professor in tourism management. Shanshan received her PhD from the School of Hotel and Tourism Management, Hong Kong Polytechnic University in 2011. She was a computer science graduate. After she graduated with a BSc in computer technology, from the University of East London, Shanshan changed her major to e-tourism development and attained her master degree from the University of Surrey, UK. Shanshan’s research interests lay in computer technology applications in tourism and tourism/hospitality website evaluations.
Henrique Fatima Boyol NGAN joins us as a Lecturer in human resources and organisational behaviour. He started his career in the area of psychological counseling, and eventually made the transition to the business industry, where he provided several HRM solutions as a consultant. In addition to that, Henrique was a trainer and designed and delivered programmes and certified courses in the hospitality industry. Prior to joining IFT Henrique was a lecturer at the University of Saint Joseph and Macao Polytechnic Institute.
Penny WAN Yim King joins us as a Visiting Assistant Professor. Penny received her PhD from the University of Hong Kong. Her doctoral thesis concerns about sustainability and governance issues, exploring the power relations and decision-making of Hong Kong’s tourism and residential land use. Before joining IFT, Penny has taught a range of tourism, hospitality and urban planning subjects and supervised student dissertation at the tertiary level in Macao and Hong Kong. She also provides trainings to hotel casinos and integrated resorts in different destinations. In addition, Penny has been a tourism consultant with project experiences (i.e. theme parks, golf courses, and retail planning and hotel developments) in Asia. Her research interests focus on sustainable tourism planning, heritage management and conservation, cross-cultural behaviours, gaming, hospitality services, and urban planning.

Welcoming Programme for Exchange Students in 2nd Semester of 2011/12 |

IFT has welcomed a total of 26 new exchange students who journeyed to Macao from Mainland China and Chinese Taiwan, Finland, Portugal, South Korea, Sweden and The Netherlands for exchange programmes. To better integrate their studies at IFT with their life in Macao, a Welcoming Programme was arranged in mid January.
Since no visitor to Macao should miss the unique Macanese cuisine – a blend of Portuguese and Chinese culinary flavours that cannot be found elsewhere in the world, a specially arranged activity during the week was “Chef for a day”. The exchange and local students prepared typical Macanese dishes with the assistance of our chefs. A whole-day city tour completed the programme, allowing the exchange students to have a snapshot of Macao.

The 1st IFT Healthy and Green Week was successfully held form 27 February to 2 March. Our sincere invitation was accepted by Mr. Cheong Sio Kei, Director of Environmental Protection Bureau, Ms. Gloria Wong, Secretary-General of Tourism Development Committee, Ms. Monie
Kuok, Functional Head of Tertiary Education Services Office, Dr. Fanny
Vong, President of President, Ms. Florence Ian, Vice-President of IFT
and Ms. Diamantina Coimbra, Director of Tourism and Hotel School to
officiate at the opening ceremony held at IFT.
The aims of IFT Healthy and Green Week were to promote the attitude of pursuing healthy life and strengthen the eco-awareness of students and staff whose support makes it possible for the Institute to head for a greener campus. It was hoped that a green message can be delivered to the participants’ families and also to the society. Through this event, the Institute aimed to promote healthy life style and develop green habits among institute members so as to raise people’s awareness of protecting the environment daily.
The opening ceremony symbolised the start of IFT Healthy and Green Week. There were seminars on Sustainable Tourism Development and The Essence of the Slow Food Movement in Macau, Sharing of Environmental Concepts of Pousada de Mong-Há, Green Logo Award Presentation, students' singing performance, relaxation exercise session and a green cooking demonstration as well as green products exhibitions.
During the week, a series of activities were held, including "Be a Green Walker", "Happy Planting", "Sports Fever", "Recycle Day", "Inbody Workshop" and "Health Talk". To accompany these events, the training units of IFT – Educational Restaurant and Windows Cafeteria for Students and Staff were also providing healthy dishes throughout that week.

IFT Launches its New Cookbook: The Art of Modern Portuguese Cuisine |
|
David Wong Yuk Shan, Executive Assistant Manager of the Food and Beverage Department at IFT recently launched his second cookbook entitled The Art of Modern Portuguese Cuisine.
With a passion for cooking, David settled in Macao and was inspired by the rich Macanese gastronomic culture. David later authored his first cookbook – The Art of Modern Portuguese Cuisine and other IFT Delights, which won a Gourmand World Cookbook Award in 2008 for the Best Easy Recipes Book, in the Macao region.
The Art of Modern Portuguese Cuisine is David’s second cookbook, which proudly presents his patrons’ and his fellow chefs’ favourite Portuguese influenced dishes at the IFT Educational Restaurant. These IFT signature dishes are a few examples from our chefs’ years of persistency in their quest for excellence in cooking and are now available for all through David Wong’s latest book. It is hoped that readers the dishes offset forth in this book, as well as the fine art of cooking.

South African Wine- Over the Rainbow |
|
|
South Africa is one of the oldest New World wine producing countries, where the viticulture industry been established since 1659, and after visiting many wineries and meeting some of the nicest and most talented people in the wine industry, I am convinced that South African wines have a place in everyone’s cellar. The country has some of the oldest viticultural soils in the world as well as varied and exceptional climate for wine growing. Generally, most of the grapes are handpicked and there are many great varieties. Not only is there the “Great White Hope” Chenin Blanc, where there are wonderful wines made from vines over 70 years old, but there are also some good Bordeaux grape varieties, exceptional Chardonnay’s, some very good Pinot Noir and amazing white and red Rhone varieties. South African producers also have some good ratings; international critics from the UK have been singing their praises for a while along with Wine Spectator but only recently have we seen serious reviews from Robert Parker, widely regarded as the most influential critic in the world of wine.
Arriving on a cool August morning in the Rainbow Nation as Nobel peace laureate Bishop Desmond Tutu describes it - I checked in at the beautiful Constantia Uitsig hotel and had lunch at the famous “La Colombe”, which is regularly featured in the San Pellegrino World's 50 best restaurants of the world. Dinner was with Boela Gerber, winemaker of Groot Constantia and Michaela Stander from WOSA at the restaurant “The Jonkershuis”, where I enjoyed my first ever Cape Malay curry. Malay slaves were originally first brought over from Java and as a result, many of their influence come through in the curries you find all over South Africa. Groot Constantia is the oldest wine estate in the country. In 2010, for its 325th anniversary, it launched a new version of the original sweet wine. The elegant bottle is based on a Constantia bottle from 1774 that was recovered from a shipwreck in Delaware Bay, USA in 2004.
On my second day, I headed for Wellington and arrived just in time for a sunset tasting with Andrew Barn at Mischa Estate; we tried the Mischa Estate Roussanne with Biltong - a dried meat that is cured and can be made from beef, ostrich or game. For dinner, we had a Braai, which is a barbecue and on the grill was some Boerewors, which is a type of sausage made from beef and sometimes with pork and lamb.
We headed next to Paarl to visit Nederburg, Platter’s Guide Winery of the Year 2011 where I was greeted by cellar master Razvan Macici. Razvan was born in Romania, but since taking over the helm at Nederburg in 2001, he has shown amazing foresight and versatility in building the reputation of the portfolio at Nederberg.
After Paarl, my next journey was to the Swartland where I met up with Eben Sadie of Sadie Family wines. Eben started off as a winemaker with Charles Back and the Spice Route venture, but he left in 1999 and since earned a big reputation for his Columella and Palladius wines. Eben Sadie is recognised as a bit of a renegade, but I call him a genius who is outspoken and passionate about things he considers important, such as terrior and old vines.
In Swartland, I had the privilege of tasting the wines of Lammershoek, Babylon’s Peak and Mullineux Family Wines. The latest vintages of Mullineux have been given good scores recently by Robert Parker, so kudos to Chris and Andrea Mullineux. On my last day, I visited Mzokhona Mvemve and Bruwer Raat, partners in crime. Mzokhona is the owner/winemaker of Sagila Wines, and a bit of a pioneer being the first black oenology and viticulture graduate from Stellenbosch University. He works together with his friend Bruwer, who runs Raats Family Wines, to make the Mvemve Raats de Compostella 08, which is the highest rated South African table wine from Robert Parker (96 points).
My next tasting was on the slopes of Helderberg Mountain in Stellenbosch with the king of Chenin Blanc, Ken Forrester. My favourite was the FMC 09, which is short for Forrester Meinert Chenin. It is one of the finest Chenin Blanc I have had on this trip and many people would say it is a benchmark for South Africa.
After lunch I headed for Walker Bay and the wines of Anthony Hamilton-Russell. We sat down with a vertical of the Chardonnays and Pinot Noirs. Anthony’s main focus is producing just two wines that have a real sense of place - terroir driven and made in the true Burgundy style. Finally, my last visit was with Peter Finlayson at Bouchard Finlayson who established the winery with his friend Paul Bouchard from Burgundy in 1989.
With a hint of sadness it was time to say goodbye, but before I departed for Johannesburg for my next adventure to raise more than R5 million to feed hungry children across South Africa for the Bidvest World Chef’s Tour Against Hunger, I suddenly remembered Judy Garland in the Wizard of Oz - all I had to do was click my heels, think of paradise and I would be back ‘Over the Rainbow’ in no time.
