Macao at Night

The June 2011 statistics indicate that the average length of stay of visitors to Macao is 1.42 days.  Prolonging the length of stay has always been one of the main goals of our destination promotion efforts.  In recent years, the development of the MICE sector has helped to bring in more longer-staying business guests.  World class hotels also contribute to this volume by offering a variety of night entertainment shows and activities in their glitzy bars, clubs, lounges and state-of-the-art stadiums and theatres. However, more needs to be done to transform Macao from a day-trip stopover to a tourist destination in the strictest sense of the term.  Some community groups have discussed ways to bring visitors to the streets of Macao after dark, including setting up night markets, food streets, and promoting more vigorously the off-the-beaten tracks.  A recent hit in town was an outdoor light and audio show using the Ruins of St Paul’s façade as the stage screen.  The show immediately attracted many residents and visitors who packed the area.  Due to its popularity, the Cultural Affairs Bureau has decided to re-run the show. The increasing popularity of our annual cultural and art events has also enriched the city’s tourist appeal.  With combined efforts from all sides, visitors may begin to appreciate the different aspects of Macao at night.

Interview
Berlin Club: Upbeat Rhythms in Macao's Nightlife Entertainment
     

Macao is constantly reinventing itself from within.  That diversity in process is one element that attracts our visitors.  Within the nightlife entertainment scene of Macao a newcomer, the Berlin Club, is emerging confident and progressive.  Manager, Tom McFadden, and resident DJ, “Devlar” (Devin Hughes Wilhelm), offer their perspectives on matching product to audience preferences in this competitive market.

TW:  How did you choose the name Berlin?

TM: It’s the original east-meets-west, with the wall and a lot of people remembering the divide.  So, in Macao a lot of people are in the middle of left and right, forward and backward.  It’s an interesting name for an interesting place!

TW:  So, how have you been steering Berlin in growth and establishing itself in Macao’s evolving entertainment market? 

TM:  We’ve been aiming at a very local market with live music, local DJs, local talent; when we have dancers, a lot of them are local girls.  Marketing-wise we hadn’t done too much due to getting our license the end of July.  We’re using mostly social media; Facebook’s our key one.  Word-of-mouth has come in quite handy, and people texting and letting others know what’s going on. 

TW:  How do you encourage return customers?

TM:  Always trying to give them a good time.  If it’s packed and they’re unable to get to the bar, or need to wait a couple minutes for their drink, just make sure they’re enjoying the music, enjoying the atmosphere.  A couple people I know don’t even drink and they’re here regularly having a good time!

TW:  Both of you project a lot of contagious energy on and off the job!  How do the two of you generate new ideas and put events together? 

DW:  It’s really casual, it’s good to brainstorm; each of us looks at what hasn’t been done in the market - as a first step.  Then, share ideas on what could be done differently.

TM:  Yeah, we also talk to people and ask what they want?  Other places only cater for certain markets, or get repetitive, and we don’t want to do that.  We’re trying to offer something new, something different.  Sometimes things will hit, sometimes miss.  Devin and I have the opportunity to try out things.  If it works, we build on it.  If it doesn’t, well, back to the drawing board. 

TW:  What kind of successes would you say you have had so far?

TM:  Brazilian night; that was a big one.

DW:  Brazilian night; also 80s night.

TM:  Yeah, that was big; even the 70s.  Our theme nights.

TW: Do you guys see the night entertainment scene here in Macao as dynamically different from that in Hong Kong? 

TM:  I think Macao has its own way.  People will come out a little later.  The general style of music people will listen to is not exactly the same.  In Hong Kong, it’s a bigger market, bigger place to fill. 

DW:  I would say there’s a core crowd of foreigners -- at least that’s the group we know best right now - that sort of gets divided between a few main places around Macao.  It kind of polarises Macao. 
In Hong Kong people have a bar-hopping attitude.  It’s not just one or two places a night; there’s a constant movement.  So it’s different how you try to capture your audience.  There (HK) you need to focus on keeping people in the club through peak hours, when they’ll be spending the most and the music is more upbeat.

TM:  Yet here, we’ve found that people will come to Berlin at 11:00 and won’t leave until 6:00 in the morning.  They’re not going from here to anywhere else and onward; they’re staying here, which is good.

TW:  Dev, what is it about Berlin that attracts you as a DJ?  What is it about Berlin, or the events, that attracts audience?

DW:  One thing I have here is more flexibility of the music I play. It is hard to find other clubs in Macao with the same ingredients that Berlin has.  Location is prime.  It’s a great size; the space can be adapted.  In Macao, you’re fighting over a core market of people that are going out, so it’s important that you adjust your size because if you’re in a really big club it’s easy for it to look empty all the time unless you’re really filling it.  So I think Berlin is great, in that it’s adaptable.

TM:  The curtains upstairs cordones it off a bit; keeps the crowd together.  Like if you had 80 people in here, close it off and it feels packed.

TW:  Dev, what sort of interactions are you generating with other DJs here in Macao - and what do you see as the positive gains from such commraderie?

DW:  I’m trying to network with other local DJs.  I don’t know the Chinese side as much as I would like to and I’m making a few key connections.  Trying to bring folks together; we’ve got lots of folks who’ve been trying to do their own thing, some more successfully than others.   I think it’s important and it’ll help everyone if we can bring together and consolidate these different crowds and these different tastes because there are a lot of good DJs here and lots of people who appreciate the music.  Berlin fits as a venue that can accommodate that well!

TW:  Tom, Berlin seems unique to me.  The place has head room for one.  What mental image of an overall experience would you like potential customers to have when considering Berlin?

TM:  I would like them to picture a very relaxed atmosphere because that’s the way it is.  Very enjoyable, everyone gets along.  There’s no beef; there’s no trouble.  Nothing like that.   It’s an environment where you can come in and just be yourself.   

TW:  Is there anything else you would like to say to industry folks in particular?

TM:  Come and enjoy Berlin!  Let us know if you’ll be in town, and if we’ve got a party on, you can come and join in!  I recommend, go to other places first, and then come here; see what you think.

Pousada de Mong-Há Awarded 2010 Macao Green Hotel Silver Award


With contributions of Pousada team, PMH was awarded 2010 Macao Green Hotel Silver Award

The Macao Green Hotel Award is organised by the Environmental Protection Bureau (DSPA) and co-organised by the Macau Government Tourist Office (MGTO).  It is also supported by the Macau Hoteliers and Innkeepers Association (MHIA), the Macau Hotel Association (MHA), the Macau Productivity and Technology Transfer Center (CPTTM) and the Macao Hotel Employees Association.  The Hong Kong Productivity Council is the Technical Consultant of the Award.  The Award was launched to raise the awareness of the importance of environmental management in Macao's hotel industry, commend hotels with excellent environmental performance and upgrade the green image of the hotel industry.

The 2010 Macao Green Hotel Award was granted to 11 hotels.  In particular, the Educational Hotel of IFT - Pousada de Mong-Há and The Westin Resort Macau were granted a silver award, while the other 9 hotels received a bronze award.  The award presentation took place on 30 June, and IFT presented a brief video about our green measures during the ceremony (it also is being shown at the campus). 

Below are some green measures that are implemented at the Pousada:

  1. Heat recovery system that provides hot water to guestrooms
  2. Solar photovoltaic modules that provide lighting to our car park
  3. Energy-saving lights
  4. Water-saving shower heads
  5. “Upon request” and refillable guestroom amenities
  6. Full utilisation of guestroom linens to minimize the use of chemicals and water resulting in less pollution
  7. Waste segregation and recycling
  8. Shopping bags made from recycled banners
  9. Utilisation of e-channels, such as  providing e-newspaper via computers
  10. Food waste decomposition to create organic fertilizer for planting
  11. Natural lighting and greeneries around the hotel building
  12. Collection of green comments from all stakeholders

IFT endeavours to lift up the image of a green campus and to do our best to sustain our green image. We have formed a designated task force to meet regularly to discuss green issues and potential green practices. We also join local environment-related activities, such as Smoke-free Office, “Earth Hour" Lights-out Activity and Mooncake Container Recovery Programme. 

Since 2008, we have been active with green moves, and have already established a high level of awareness in environmental protection. We will do our utmost on the sustainability of a “green” entity, and extend these concepts to our students and colleagues.

IFT Takes New Role in PATA Macau Chapter
     

Thanks to support from industry partners, IFT has acted as Chairman of the PATA Macau Chapter since 1 July 2011. This responsibility will be borne by the Institute until 30 June 2013.

The PATA Macau Chapter is one of the largest and most historical tourism associations in Macao, involving both public and private sectors. It was formed by the Macau Government Tourist Office. There are 76 industry members covering a variety of sectors such as aviation, hotel, education, events, government, restaurant, travel agency and ground transportation. These members have laid a solid and sound foundation for the chapter in the past.

 

In the future, we are committed to facilitating exchange of ideas, forging cooperation among members, and building a better future for our region.

IFT Provides Consultancy Services to UNESCO

Mount Sanqingshan National Park

As part of the continuing cooperation between UNESCO and IFT in various fields related to heritage management, a 2-member team, Dr. Sharif Shams Imon and Dr. Ong Chin Ee of IFT’s Heritage Studies Centre, visited the UNESCO World Heritage site of Mount Sanqingshan National Park from 15 to 20 August 2011 to provide technical advisory services on issues relating to visitor management and development of a tourism management plan for the site.  Mount Sanqingshan National Park is located in the west of the Huaiyu mountain range in the northeast of Jiangxi Province, China and was inscribed on the UNESCO’s World Heritage List in 2008 for its outstanding natural beauty.

During the visit, the team met with local authorities, familiarised themselves with the organisational arrangements relating to the preparation of the tourism plan, identified key tourism issues associated with the site and identified, discussed and shared ideas with local authorities and management staff on the essential requirements of an effective Tourism Plan and planning. In addition, a 4-hour training session, attended by more than 40 officials and staff members of the site management office, was conducted by the team. The team is now working with UNESCO on follow-up activities.

Signature Drink Developed by IFT Tourism Retail and Marketing Management Students

In cooperation with the Macau Just Café / Vui Ut Company Ltd, IFT Tourism Retail and Marketing Management Year 2 students developed a refreshing signature coffee drink,  “M2 Kick Espresso”, launched for sale on 20 August  at Just Café. Team members who developed the drink include: Ben, Bruce, Kenny, Stephanie, Sandra, San, Lok Man and Melon.

The brand-new signature drink was created during a series of marketing activities carried out by IFT students in collaboration with Just Café. The activities were divided into two parts:

The first part had students developing a signature coffee drink with a unique taste to suit the summer. Coffee courses delivered by Just Café deepened students’ understanding of several varieties of coffee. With students’ innovations and repeated trials, a superior signature drink was finally approved by students and course instructors.  M2 Kick Espresso emerged as the representative drink to be marketed.

The second part involved students writing a business proposal regarding the signature drink. This proposal is part of the course, which is designed to provide students with a rich platform for realistic business contacts in practice in order to develop their innovative thinking and commercial acumen. Such a valuable experience accents students’ personal development.

With the increasing development of the Macao gaming industry and the growing number of tourist arrivals, Macao’s tourism retail industry shows signs of rapid development. In view of this, IFT offers its Tourism Retail and Marketing Management Degree Programme in order to cultivate future leaders in this growing industry. Apart from the retail-related theories learned in class, a 4-week practicum and a 6-month internship programme help enrich students’ working experience in the retail industry. The Institute has always encouraged students to apply theories learnt from the course to an actual business environment. Therefore, the Institute and course instructors strive to become the bridge between students and industry representatives in order to provide students with more opportunities to interact within the industry.

This project is officiated by Mr. Tony Lam, Director of Retail and Leisure Operations of Venetian Macau and Mr. Lester Chao, General Manager of Just Café who are taking the time to personally guide students and give comments and suggestions on the project.  Both have complimented student’s team spirit and innovative ideas demonstrated in this project.

A written proposal can be converted to a public offering of products; such a result gives recognition to the students’ close teamwork and support from the two companies. In view of “M2 Kick Espresso” revealing diverse business opportunities, Just Café decided to sell the product to honour students’ efforts. Just Café even used the posters and videos, designed and directed by the students, as promotional materials in the store, on their website and on Facebook.

IFT Students' Work Experience at UNWTO

Three IFT students have been selected as interns by the United Nations World Tourism Organisation (UNWTO) in Europe.

Stefanie Sun Sheng Nan, BSc Tourism Business Management 2010/11 graduate, has been offered a 1-year internship at the Regional Programme for the Asia and Pacific Division in Madrid, Spain.
Rachel Lao Weng Ian, BSc Heritage Management 2009/10 graduate, and  Jake Cheng Ming Ming, current Year 4 BSc Tourism Business Management student, have been offered 3-month placements at the UNWTO Themis Foundation in Andorra.   

We wish them every success in their endeavours at UNWTO!

Brussels Exchange Trip

It is our honour to have visited the headquarters of the European Union (EU) in Brussels. We visited different functional institutions of the EU where important decisions are being made.  Those meetings with EU representatives were very inspiring and gave us a more detailed idea on EU structure, functions, authority and its relationship with Macao.

Aside from meetings and site visits, we also enjoyed having a closer look at Brussels.  We explored Brussels’ architecture, history, culture and delicacies plus made memorable friendships.

All in all, this exchange trip was an unforgettable experience which widened our horizons and increased our sense of international affairs. It showed us a clearer picture of the financial crisis and innovations in European countries.

We are grateful to the Tertiary Education Services Office (GAES) for organising this meaningful trip to Brussels.

Summer International Exchange Programme 2011

IFT collaborated with the Taiwan Hospitality & Tourism College (THTC) for the exchange programme held from 4 to 8 July in Hualien, with 55 participants coming from Chinese Taiwan, Macao, Hong Kong and Japan.  During the programme, participants attended seminars and took part in a culinary tournament and field trips, which were not only enjoyable, but also served to illuminate the programme’s theme.  The programme concluded with certificate presentations and participants sharing what they had learnt.

IFT is pleased to announce it has received 46 new mainland and international students as well as 34 exchange students this semester. They have journeyed to Macao from China (including Chinese Taiwan and Hong Kong), Austria, Brazil, Finland, Japan, Kyrgyz Republic, Portugal, South Korea, Sweden, the Netherlands and the United States.

To help integrate their studies at IFT with their life in Macao, a ‘Welcoming Programme’ week was arranged in late August. Fun activities like International Challenge Day, a culinary session and a city tour were arranged.

2009/10 Degree, Diploma and Certificate Programme Graduates' Employment Survey

To find out career placement of our bachelor as well as diploma and certificate programme graduates of 2009/10, IFT distributed an e-survey from mid March to mid April 2011. In this survey, graduates were asked to complete a questionnaire which aimed at finding out their latest employment situation.

Bachelor Programmes
For Bachelor graduates, the overall response rate was 69%. According to the results of the survey, 83.5% found employment. They all had full-time employment with a monthly median salary of MOP11, 600.00. The employment sectors are displayed in the figure below.

Diploma and Certificate Programmes
For diploma and certificate graduates, the overall response rate was 75%. According to the results of the survey, 90.7% of the respondents were employed and the rest were studying only, or were in a job search. The employment sectors are displayed in the figure below. The majority of these graduates had full-time employment and earned a monthly median salary range of MOP14, 600.00.

旅遊學院於3月中旬至4月中旬向2009/10學年畢業生進行了就業問卷調查。學士課程畢業生回覆者中有68%從事旅遊酒店業,每月薪酬中位數為澳門幣11,600元。文憑證書課程畢業生有50%從事旅遊酒店業,每月薪酬中位數為澳門幣14,600元。

Andrina, Lou Tip Si, Lecturer, Tourism College
Andrina joins us as an English Lecturer.  She has had a long-term interest in curriculum development and materials design for Chinese learners of English. Before joining IFT, Andrina taught English and assisted local secondary students in their transition from Chinese to English-medium schools.  For four years, she’s also been involved in teaching general English, tourism English and academic writing skills to undergraduate students at local universities.

Oralia Maribel Cardenas, Instructor, Tourism College
Oralia joins us as an Instructor in Culinary Arts.  She will be pioneering the first year bachelors Culinary Studies classes along with the Food and Beverage team.  In addition to her twenty-five years of hospitality experience, she has taught at Le Cordon Bleu Culinary Institution, Estrella Mountain College, Avondale Arizona and Mesa College, Phoenix Arizona.  With her vast knowledge in culinary preparation and instruction she will be a basket full of mise en place to complete our brigade.  “Food is art that contributes to all senses…enjoy”

Paule Loan Chau, Lecturer, Tourism College
Paule joins us as an English lecturer.  Paule earned her MA and BA degrees from California State University San Bernardino.  She has taught at California State University San Bernardino, Central Washington University, and Axia College of the University of Phoenix. She is working on a doctorate in Composition and TESOL from Indiana University of Pennsylvania. Currently, Paule is working on a project examining language policies and the linguistic landscapes/soundscapes of Hong Kong and Macao.

Thea Edith Vinnicombe, Assistant Professor, Tourism College
Thea joins us as an Assistant Professor in Economics.  Thea received her Ph.D. from the University of Queensland in 1998 and has been teaching economics to business students since then.  She comes to us from the University of Applied Sciences in Fulda, Germany, where she has been working for the past four years.

First Step towards the Pastry Dream

In a small lane of the Bairro Horta da Mitra, there is a little pastry and bakery shop, Bravo, run by two ambitious young ladies, Iris and Edith.  These two girls completed our Diploma in Pastry and Bakery Programme in 2010 and attempted to take their first step towards their pastry dream upon graduation from their IFTstudies.

They revealed that since they majored in Business Administration, the knowledge they learnt from school helped them a lot while drafting a business plan and deciding on the target market.  However, they soon realised that running a shop requires more than what they had learnt and they were not experienced enough to handle some unexpected situations.  “What we know about pastry and bakery and all principles for running a business are just like an entry pass and there are a great many things we need to learn since no one can tell what challenges may lay ahead,” they said.  “The biggest challenge we encountered must be gaining trust from others, like the suppliers we met at the beginning.  Since we were really young and green, they did not treat us seriously but looked at us in doubt and even questioned whether we were running a ‘real’ shop.  But luckily, we gained a good reputation in the neighbourhood in a few months and now the suppliers know that we are ‘real’.”  The girls also told us that they have never thought of giving up even though they have had no leisure time or a social life since the opening of the shop.  “We know that no pain means no gain, and this is only the beginning,” they added. 

While people are complaining about the working attitude of the millennial generation, we are so glad to see the perseverance and enterprise of our young alumnae.  Good work, ladies!  We wish you a prosperous business!

Court of Master Sommelier Asia Accreditations – Macao (First Run)
 


Candidates of industry were keen to upgrade their accreditations

In recent years, as more and more fine restaurants have come to the local market, the demand for sommeliers, the wine professionals who are specialised in all aspects of wine service as well as wine and food matching, has increased.  "In upscale restaurants, a sommelier is as important as a restaurant manager or the executive chef.  If this is your career choice, what you need would be a sharp palate, a good memory, a passion for sharing your knowledge and excellent listening skills, because a good sommelier should learn from clients their desires, give advice on food pairing and bring the wine to life for clients before it even touches their taste buds," said Tommy Lam, the President of Asia Wine Institute.

In order to foster more professionals and provide them with an opportunity to gain international recognition in this field, IFT, in cooperation with Court of Master Sommelier and Asia Wine Institute held the first run of Accreditations of the Introductory Sommelier and Certified Sommelier in Macao this June.   The event attracted 25 candidates from the local industry and neighbouring regions such as Hong Kong, Beijing and Korea.  It all culminated in great applause.  We are planning to organise the next run in the near future.  If you are interested, stay tuned!

IFT’s Sharon Fong Wins Artist in Residence

During the 6th Évora International Printmaking Festival, our Graphic Design teacher, Sharon Fong, won the “Artist in Residence” award.

The festival is a biennial event jointly organised by Teoartis Artistic and Cultural Activities Association and the Évora City Council.  With the objective to promote art and the exchange among international artists, this grand event always attracts printmaking artists from all over the world to compete for its ten awards.  Sharon, as a winner, was then invited to display her works in the 7th Évora International Printmaking Festival.  Her exhibition, ‘An Ocean Across The Seeds’, was held successfully this August in the Historic Centre of Évora, Portugal.
