Going Green

If there was anything positive that came out of the outbreak of SARS, it would be the heightened awareness and concern for environmental protection and personal hygiene. There were a number of theories associated with the causes of the outbreak, such as degradation of the eco-system due to over exploitation of natural resources and hunting of land and marine creatures. This has destroyed the natural habitat and led to global warming. All these may seem to be “big issues” that can only be dealt with by inter-governmental organisations, such as the World Health Organisation or the United Nations Environment Programme. However, much can be done at the individual level. Educational institutions have the responsibility to influence and shape environmentally -friendly lifestyles and green daily habits beginning at a young age.

At IFT, we took measures in conserving energy and water, as well as implemented “3R” in waste management - reduce, recycle and reuse. We worked with the Energy Development Bureau in different projects,  for example we replaced all fluorescent tubes from model T8 to T5 which helped save up to 1/3 of the electricity; we established a heat recovery system that retrieves heat from air-con cooling and transforms the energy to provide hot water for kitchens and guest rooms of Pousada de Mong-Há;  we also installed solar photovoltaic modules that transform solar energy into electrical energy to support the lighting system in the car park.  To conserve water, we have installed water-saving tap filters and shower heads as well as semi-auto water taps and 2-level flush toilets.  “3R” is being implemented for different types of wastes, such as used paper, markers, and ink cartridges.

We support and motivate our colleagues to participate in different courses and seminars on environmental protection and green practices, and strive to lead by example so that our future managers and leaders in the tourism industry will follow.

Interview
THE GREENER VENUE

Dr. Julie Whitfield, Senior Lecturer in Conference and Events Management at the Centre for Event and Sport Research, School of Tourism, Bournemouth University, UK came to the IFT and shared her research on an environmental management framework toward venue use for events and conference venues.  Her enthusiastic dedication can peak your interest.

T:  Dr. Whitfield, please tell me, what carried you into this area of research?

JW:  It’s my own passion -- especially at these conferences -- coming from a geography background and tourism context.

T:  Why did you, with Bournemouth University, join with the IFT for this research?  

JW:  I chose IFT because of Don (Dioko).  I wanted a collaboration.  The majority of my research has been based on my PhD and on my own; and, I feel this is a great opportunity to branch out with collaborations overseas.  It’s just evolved and we’re working amazingly quickly together.  Virtually unheard of!

I carried out research in the UK, and then Don carried out the same research in Macao and China.  What has happened is that the Chinese research has had major issues.  Difficulties with, not how we distributed it, but with the response. 

In the UK, I wanted it to be an internet-based project.  There are issues with the return rate and collecting the data.  Issues with the junk mail box and how to get a blind email form filled out and returned.

I sent out just under 2000 and got an 11.1 % return rate.  Doesn’t sound that good, but when considering the average return rate for e-based surveys is around 7%, it’s not bad.  We’d heard that a lot of people had not responded, which could be a story in itself.  This has been in the UK for a while, but it’s a new concept in mainland China.  So, Don had the questionnaire translated, and we went from there.

The problem comes in that you need to determine if those participating are doing so because they have a  vested interest.      So, we’ll be screening concepts to be sent to mainland China.  Don’s hiring someone to telephone the recipients, and then following up with the questionnaire.  It’s not a passionate subject like, “your taxes are gonna rise; what do you think of that?”  It’s an effort!

T:  Awareness in itself should seem some form of progress in all this, I guess.  So, what is the greatest threat to the green movement within our industry?

JW:  The greatest threat to the green movement is not implementing it.  There are levels of implementation of a green framework.  There could be minimum implementation for which they could gain maximum marketing potential.  For instance, they could give the minimum for a bronze score, but that could be a maximum gain when they market on the internet. 

I commend that they’re doing something positive towards implementing the complete framework from the board all the way through.  So, we need to create a green framework legislation.  How it’s maintained; how people are taught throughout the venue.  Where you have large venues and there are thousands of people working, how do you teach every person about what is an important agenda?
Everybody needs to be thinking about green issues.  One level of implementation would be great!

T:  As part of this, how can MICE providers be communicated to about the 3 Rs?  How can they be shown the value of all this “reduce, reuse, recycle?”

JW:  I think that value is important.  For instance, “Do you want green issues and policies implemented?”  If the answer is “yes”, then they will be implemented.     On the evidence that, if they can see this demand for it, they will implement it. 

How is the consumer making choices?  Which venue should I have my conference at?  A green venue needs to be something edgy and exciting.  If that could be a reason for choice, then  …

T:  Have you seen any particular venues here in Macao that have put green into practice?

JW:  I’ve only been here a few days, so I haven’t had a chance to go around to several venues.   IFT is a good venue to look at on how they have implemented their green policies.  With Macao, the concept is so much about economic development and economic change.   At the MICE venues they have to think about ventilation, lighting  … and in many of the venues that’s not happening from the building planning process.  Or, once it’s implemented, or in this brand new building, you need to change the type of lights to be more green-friendly and energy efficient.  That’s very hard!  It may not be so much changing to green, as implementing what could be green in the existing venue.
There’s so much construction and so much change here in Macao; they really do need to be thinking about the environment.  Having said that, I was pleasantly surprised at the number of people who wanted to attend the seminar; whether it was the key players of the top venues coming to talk – I think there was an interest.

T:  With such rapid expansion in Macao, attempting some sort of balance in overall impact due to area usage seems to be a useful approach.  On this green issue, if you could express a more proactive position right now, what might that be?

JW:  To form a framework; to be looking at a green way forward.      Training staff?   It is educating people, telling them that these are the steps we need to be taking.  So, looking at the framework and using it as a checklist, as an opportunity to change what they could be marketing themselves as – the number one greening venue of Macao! 

T:  Have you had any meaningful moments within all this?

JW:  When the Venetian/Sands said they were interested in what the responses would be.  I take that to be very positive!  And, I just love the IFT management students I met with in class.  It was an up-beat  interaction. 

T:  What did you and the students talk about?

JW:  Well, we were talking about what sort of food delegates to a convention might not want to eat here in Macao.   For instance, how you should give them Macanese food, not a different cuisine.

T: Oops, I should stop.   I’ll get too hungry if we keep talking about delicious food. Thank you for this pleasant conversation!   Is there anything you wish to add to this interview?

JW:  It’s just a joy to come here!  I think we’ve made some really good working relationships.  I’ve just had two more IFT students come to Bournemouth in our masters programme!  We’re hoping there won’t be too much culture shock for them coming to the UK.  We’d also like to see more research collaborating, not just Don and I, but others emerging into this! So, I not only wish to expand on research collaboration, but also encourage exchange between both our institutions.  To work together!

A BIG Day for Our 2009/10 Graduates and Scholarship Recipients

November 18 was certainly a very memorable and all-important day as 583 degrees, diplomas and certificates were presented to our graduates!

The afternoon ceremony was staged at Tap Seac Sports Complex. After the national anthem, Chief Executive of Macao SAR, Dr. Chui Sai On, delivered his congratulatory address. Graduate representative, Im Ut Lon, delivered a speech on behalf of the graduating class, highlighting feelings regarding the students’ years at IFT.

15 IFT Students Participated in the ‘Headstart Career Programme’ at the Wynn Macau


Each of the selected students in the program is granted the "Headstart Career Program" passports!

Wynn Macau is launching its ‘Headstart Career Programme’ aimed at assisting local hospitality students’ who are starting out in the hospitality industry with opportunities to consolidate their learning at a high level and in their chosen areas of interest. Fifteen ambitious, local students studying at IFT, who aspire to work in the hospitality industry, have been selected for this programme.

The Headstart programme, with support from IFT, will help maintain a steady stream of skilled, local professionals and will develop mutually beneficial relationships between industry players and local educational establishments. The programme will enable participants to gain valuable work experience at junior positions while they pursue university level qualifications. As a result, they will be in a very desirable position when applying for supervisory level jobs after graduation.
Once selected for the programme, students start working at the Wynn Macau during the summer months after their first year of academic training/study. They then continue to participate until graduation. Over the course of this three-year internship, students will be given an allowance for their work and, apart from the compulsory internship period set by the school, the students are permitted to have flexible working hours in respect of their academic studies. Flexible work hours ensure the students will have a balanced work and school schedule, and this will enable them to maintain solid focus on their school work. Throughout the Headstart programme, participants will receive continued support from the Wynn Academy, Human Resources and the Training Managers from their respective divisions.  Support includes regular meetings to assess performance, feedback discussions and general guidance.

Galaxy Entertainment Group Holds its "Internship Program Appreciation Ceremony 2010" to Commemorate the Distinguished Achievements of IFT Interns
     

Galaxy Entertainment Group (“GEG”) hosted its “Internship Programme Appreciation Ceremony 2010” to commemorate the distinguished achievements of its interns. Held at the grand ballroom of its flagship property,  StarWorld Hotel (“StarWorld”), GEG celebrated their achievements with a heartwarming video, a sumptuous lunch, along with presentation of “Certificates of Completion” and souvenirs.

 
Internship Program Appreciation Ceremony at Galaxy
Mr. Paul Temple, Vice President of Training and Development of GEG, described the interns as “some of the best since GEG initiated the programme.” The success of the programme can be attributed to the co-operation between the interns and colleagues of all departments. “ Mr. Temple said, “Since we initiated our Internship Programme in 2008, GEG has selected and trained more than 60 interns. As we move closer to opening our “World Class, Asian Heart” ‘Galaxy Macau™’ in early 2011, we will continue to expand our Internship and Fellowship Programmes. We are excited and pleased to contribute to the ongoing education of local tertiary students and look forward to seeing them employed with Galaxy Entertainment Group.” 

Working at GEG’s Public Relations as an intern, IFT 3rd Year Tourism Event Management student Raven Kou was nominated to represent their group in sharing their experiences at the ceremony.  Kou said, “I thank GEG for being fully supportive and treating us as your family members. GEG is one of the very few corporations in Macao that offers such a comprehensive internship programme. Thank you for teaching us GEG’s ‘Asian Heart’ services and attitudes, and for making this an unforgettable experience.”

GEG has always been committed to nurturing young people and contributing to enlarging the pool of outstanding talents in Macao. By offering young talents the opportunity to apply their theoretical knowledge to their day-to-day work, enhancement of professional and interpersonal skills can flourish.

Big Congrats to Alumni Joe Yang who won Macau Sommeliers Challenge 2010

I was interested in wine, so I became one of the founders of the Wine Appreciation Club and the president of the club in 2008. As interest generated by wine tasting seminars and gatherings grew, I found the study in this subject to be a never ending process and I considered it worth devoting my lifetime to it.

The Macau Sommeliers Challenge was the first wine competition held in Macao and it had been a great pleasure for me to participate. The event was organised by the Bartenders and Sommeliers Association of Macao in the Wine and Gourmet Asia. Eighteen competitors from the local industry were required to pass three tests, including a theory exam, wine serving and blind tasting. Personally, the most challenging part for me was wine serving. As I haven’t worked as a sommelier before, I needed to learn everything about wine serving from scratch within one month. As I had a full time job in the Front Office, I had a difficult time practicing and sourcing the serving accessories. Fortunately, my efforts were rewarded and the final outcome— getting the first, was sweet, which wasn’t easy to achieve as my fellow competitors were very capable indeed. It was an excellent opportunity for us to learn from each other especially as it was the first time such competition was ever held in Macao. Even today, there is always space for improvement to make this annual event more competitive and professional.

Another fact that this event reveals is the importance of searching out local talents for the wine industry. Since the tax free policy has been implemented, the diversity of imported wines has increased tremendously in both quantity and quality. The role of a sommelier is like the role of a missionary: to share the beauty of wine. It is important to have wine professionals act as the intermediaries and to promote the wine culture, thus making Macao a wine hub not only in this region, but also globally.
     

According to Joe, the most challenging part was wine serving.
  Last but not least, I would like to take this chance to share the beauty of wine with all of you. I believe wine making is more than a process, it’s an art. There are so many factors that could have subtle effects on the final taste of a wine, such as the terroir, vinification and viticulture. Appreciating wine is more than just identifying aromas and tastes. Although wine tasting is already enjoyable enough, the effort and ambition to understand what’s hidden behind the label could be even more rewarding. I believe there is a story behind each label, a story about lives, faith, traditions and much more. Therefore, tasting wine is far more than a sensory perception to me; it’s an endless discovery of culture that I refer to as “The Art & Science of Wine Appreciation”. Cheers!

On 3rd December, 2010, the first Macau Slow Food Awards ceremony took place in the Grand Hall of IFT.

This event is the culmination of three months of learning by the 2nd year students of IFT’s Tourism Event Management class. Learning by doing is the guiding philosophy of this class of Catering Management for Events. Structured along the lines of a business organisation, the class of 42 students was divided into functional teams: Finance, Sales and Marketing, Public Relations, Logistics, Communications and Food & Beverage. A General Manager and deputy as well as Team Heads represent the management.

Each department was responsible for its own area and went through the planning process by setting and executing tasks. Meetings had to have an agenda and minutes. Tasks had to be coordinated with other teams and reports to the management generated on a weekly basis. The event is self financed and benefited only from seed money left by the previous class.

Planning, executing and evaluating such an event has taken place for 5 years in a row at IFT. It has proven valuable to our students in learning not only how to deal with a team of fellow students, but also to manage communication with third parties in and outside IFT. At the same time, the other goal is to reach out to the community by involving trade professionals as well as fellow students from other institutions in the process.

The 1st Macau Slow Food Awards recognizes the merits of establishments in five categories: namely Western, Chinese and Asian restaurant, Pastry shop and Food and/or Beverage supplier. Those merits are based on the Slow Food principles that advocate raw materials with the least amount of pesticide and insecticide, sourcing ingredients produced locally to minimise carbon footprint, taste education and using ingredients based on fair trade practices. Gold medals were awarded to Clube Militar de Macau, Long Wa Restaurant, Nagoyaka Tei, Goz Café and Hop Yick Foods Co. in each of the respective categories. The nomination and voting processes were conducted using Facebook.

The Awards ceremony was preceded by a cocktail party of 250 Slow Food supporters and followed by a Gala Dinner attended by 95 happy diners. See you next semester for something different!

Terra Madre 2010

No other things are more enjoyable than taking a break from a stressful life of a student and having a nice trip with a very relaxing meal and aromatic as well as authentic wines. This 5-day Slow Food Trip to Turin, Italy enlightened us a lot on the philosophy of eating food.  Amazingly, Macao with only 29.5 square kilometres and more than 500,000 people has 20 fast food restaurants while Turin with 1.7 million people only has five McDonald’s restaurants. This clearly reflects on the fact that the Italians have a very strong concept of treasuring and enjoying good food.

Organisinig the slow food event in 2009 and 2010 at IFT enabled us to understand the philosophy of the Slow Food movement which advocates good, clean and fair food. Terra Madre is a bi-annual event held in Turin, Italy for around 7,000 delegates, farmers and producers in the food industry and students and chefs from around the globe.  During this trip to the Terra Madre 2010 event in Turin, we were able to widen our horizons and broaden our minds with cultures very different from our usual environment and build up a good network with other delegates while learning a lot more about good, clean and fair food and beverages through the various conferences and seminars.

Turin people and volunteers at the event were all very friendly to us.  We were well treated by the people in the hostel and we held some small parties at night with other delegates.  Therefore, we became very good friends with them, and this is something we will always treasure.

Gaja, which is one of the most famous Italian wineries with the renowned grape variety of Nebbiolo and the great wine of Barbaresco, was the last stop of our trip. Although the wines there are not for sale, the amazing taste as well as the sensory exploration experience will always be remembered in our hearts!

Congratulations, Carmen!

To increase the interest of youngsters in learning more professional skills, and to foster cooperation and exchange between vocational institutes of the region, the 1st “Guangzhou/Hong Kong/Macao Youth Skills Competition” was launched in 2002. The competition is now in its 6th edition, and this last edition was held in Macao on the 31 October 2010, with the city of Chengdu joining the event for the first time.

Five contests were included in the competition. They were: design and development of three dimensional animation, flower arrangement, retail window display, installation of air conditioning and bartending.

Each participating region was required to organise a preliminary competition in their locality to select the top three candidates to join the final round in Macao. The grading system was previously set by the organisers and developed according to national and international standards.

This year, PACES was invited by the Labor Affairs Bureau to organise the local contest in Bartending. In order to strengthen contestants’ skills and to introduce international standards and competition rules to the participants, an intensive 24 hour-course was designed and conducted before the contest.

An overwhelming number of young local professional bartenders signed up for the challenge; two IFT students, Carmen Ian Ka Man and Carl Chan Keng Wai, were also on the list. Both of them had demonstrated huge bartending potential during the course and due to their great performance in the contest, were selected to represent Macao in the final round, together with a local professional bartender. A further 18-hour intensive course was organised for the local finalists to further refine their skills.

To our great surprise and delight, Carmen became the 2nd runner up in the final competition, defeating a number of professional contestants from Guangzhou, Hong Kong and Chengdu.

The cocktail that Carmen created for the final competition is called Shining Bloom. The colours of the drink are green and primrose yellow. According to her, the colour green represents Macao as it is the colour of the flag; the garnish of the cocktail is a primrose yellow flowery shaped gooseberry, representing the prosperous period which Macao is currently going through.

Congratulations, Carmen! You have proved that IFT students not only excel in studies. They are also outstanding in professional skills!

Hong Kong Debate Open 2010

The Hong Kong Debate Open 2010 was the first international English debate tournament to be held in Hong Kong and took place from the 23-25 of October. The debate was sponsored by the Standing Committee on Language Education and Research and supported by the Hong Kong Community College. This inaugural debate brought together 160 participants from China, India, Indonesia, Japan, Macao S.A.R, Malaysia, Qatar, Singapore, Thailand and Hong Kong S.A.R They engaged in a battle of wits and language skills, attempting to persuade the audience and judges on  the superiority of their stance through the application of logical and critical thinking, as well as with the precise and convincing use of English. Ms. Sharmila Parmanand, Mr. Josh Martin, Mr. Kevin Li, Mr. Loke Wing Fatt, Mr. Thepparith Senamngern and Mr. Zhengbo comprised the adjudication panel.   Each brought a wealth of experience in BP style English Debate. It was an honour for the debaters to be able to compete in front of such a distinguished panel throughout the event.

The representatives of two Macao universities, University of Macau and Institute for Tourism Studies (IFT), participated in this year’s event. Vicky Chen (HE3) and Sharon Luo (T2A) represented IFT and achieved a respectable first place recognition within the six rounds of competition. English Debate as an extra-curricular activity has been offered at IFT since 2009 and this opportunity has benefited students tremendously in the areas of English language skill, quick reflection and logical thinking. Vicky and Sharon participated in a workshop preceding the event which, along with this year’s Hong Kong debate experience, has taken their public speaking skills to new heights.

Below are Vicky and Sharon’s experiences in the Hong Kong Debate Open in their own words.

“I have been practising debate for two years, yet I still find myself as a beginner. It requires you to be familiar with the current news about military, policy, economy and culture as it touches on holistic knowledge. Through participation in debate,, you exercise your quick thinking skills and logic which could help a person build a systematic process of thought as well as analyse and manage the speech. It is more or less like a thought and opinion exchange between debaters rather than a competition. You will enjoy the journey with the other participants as you fully engage both your body and thought in the debate. I feel very lucky that English debate is a part of my life.” (Vicky Chen, HE3)

I couldn’t imagine before that I would join this kind of competition in English Debate. I think there is still some room for improving my language skills, but I understand it and try my best to improve through this activity. It makes me realise the importance of comprehensive knowledge accumulation.” (Sharon Luo, T2A)

We hope that in the future, more students with English and public speaking interests will join these types of events and activities to enjoy the benefits that come from participation.

Retail Students' Project Assists Qinghai's Reconstruction

Tourism Retail and Marketing Management Year 2 students of IFT raised MOP 44,500.10 in total to help Qinghai Yushu earthquake victims.

On 7 December, the Red Cross of Macao received a heartwarming donation of MOP 44500.10 from the Tourism Retail and Marketing Management Year 2 students of IFT.  The money was raised for the Qinghai Yushu earthquake victims for rebuilding their community. The successful fundraising campaign included: “CHEERS!” Wine Charity Event – and “A Bag for Love” – a charity bag-selling event.

IFT launched a new degree programme –Tourism Retail and Marketing Management– two years ago in order to cultivate future leaders in this growing industry. The fundraising campaign is a good opportunity for students to apply learnt theories from the course to an actual retailing business environment. Through presenting and selling wine and their self-designed bags, students benefited from not only exercising their project management and selling skills, but also taking an active part in charity activities to enhance their social consciousness.

The Tourism Retail and Marketing Management Year 2 students would like to thank the caring hearts of the Macao people who are always ready to give a helping hand to victims of natural disasters all over the world. Through the selfless donations of our community, all the profit generated from these two events has been donated to Red Cross Macao for Qinghai Yushu earthquake victims.
