Derek Fong holds a Master's degree in Tourism Management from University of Jinan, China and Diploma in hotel management from Macau Polytechnic Institute. He has over 20 years' experience in the hotel industry with a focus of Food and Beverage and catering management at Mandarin Oriental Macau, The Westin Resort Macau, Macau Tower Convention and Exhibition Center, Grand Hyatt Macau and Future Bright Catering Co. Ltd Zhuhai. At present he is a lecturer at IFT.
