Ingredients (for 60 pieces)  
   
Part(1)      
Raw bacalhau shreddedˇ@ 1000 gr
Olive oil ˇ@ 200 ml
Chopped onion ˇ@ 500 gr
Chopped garlic ˇ@ 50 gr
Parsley Chinese stick finely chopped 100 gr
Bell pepper yellow brunoise 100 gr
Bell pepper red brunoise 100 gr
Bell pepper green brunoise 100 gr
Flour mix 400 gr
White wine 400 ml
White vinegar 40 ml
Seasoning (white pepper ground, salt)........    
     
Part(2)    
Chopped garlic 50 gr
Chopped onion 100 gr
Egg white ( whipping ) 400 gr
     
Flour mix:    
Cake flour 5 Kg + 80 gr Baking powder
     
     


Cooking Methods

Soak bacalhau in cold water a day before. Drain and shredded.
Slightly fried chopped onions and garlic in olive oil, mix Part( 1 ) all the ingredients, . Whip egg white and mix with the rest Part(2) + Part(1) with season, fried with olive oil.
