The 2012/13 Academic Year Ends with Noteworthy Accomplishments

With the 2012/13 academic year behind us, it is a good time to acknowledge the fruitful accomplishments made by the institute as a whole over the past two semesters. IFT is indeed very pleased to share a few noteworthy institute-wide achievements that we hope can be seen as a benefit to the student body and our industry partners alike.

A major development was IFT’s establishment of new links and partnerships with institutes in other parts of the world, namely Dusit Thani College in Thailand, the United Nations World Tourism Organization in Spain, as well as L'ecole Hôtelière et de Tourisme Paul Augier in France. It is felt that these connections will provide our students with a wider pool of overseas internship opportunity, more diversified options for cultural exchange and increased opportunity for effective language learning that naturally comes along with full emersion in a foreign learning environment.

With the objectives of further expanding students’ global vision and their horizons, IFT jointly hosted the Summer International Exchange Programme 2013 with Leeds Metropolitan University, U.K.. This programme welcomed undergraduate students from tertiary institutions from all over the world. A group of 25 registered students studying in Macao, Hong Kong, Japan and the United Kingdom took part and it is felt that their decision to participate was a good one, as aside from acquiring knowledge, the programme offered a great opportunity for aspiring professionals to make new friends, contacts and expand their social network.

In an attempt to provide diversified training opportunities for industry professionals and enhance the management quality of the local service industry, IFT co-organised three Executive Development Programmes, which were respectively entitled “Building the Human Capital Base: Essential Human Resources Practices for Managers” and “Planning for Profits for Hotels” in partnership with the School of Hotel Administration, Cornell University, United States of America in December 2012 and June 2013, as well as “Key to Personal Effectiveness” with Ecole hôtelière de Lausanne, Switzerland in July 2013.

IFT will continue to cultivate an internationalised learning atmosphere and offer a diversity of enriching study opportunities for students and industry professionals through the coming academic year.

2012/13學年的課堂和考試已完滿結束,藉着教職員及學生們的努力,這個學年學院在拓展對外合作關係方面又邁進了一步。學院分別與不同的高等院校及組織簽訂了合作協議,包括泰國Dusit Thani學院、聯合國世界旅遊組織和法國尼斯L’école Hôtelière et de Tourisme Paul Augier旅遊酒店學校,透過與不同高等院校及組織的緊密合作,促進彼此的學術與文化交流。此外,與英國利茲都會大學合辦的夏季國際交流課程,讓學生獲得海外學習體驗,擴闊視野,活動吸引了超過25名來自澳門、香港、日本和英國的的大專院校學生報名參加,他們明智地把握這個難得的機會,認識不同國家地區的新朋友,擴寬社交圈子。學院更分別與美國康乃爾大學酒店管理學院舉辦「卓越領導技巧」和「酒店盈利規劃」高級管理課程,以及與瑞士洛桑酒店管理學院舉辦「領導層單元:提升個人工作效能的要訣」高級管理課程,為本澳的酒店業高級行政人員提供多元化的高階培訓機會,以進一步提升業界的管理水平。在下一學年,我們將繼續致力營造國際化的學習環境和提供更多元化的學習機會予學生和業界從業員。

IFT-BU E-Conference 2013

The IFT Tourism Research Centre (ITRC) co-hosted the IFT-BU E-Conference 2013 with the School of Tourism, Bournemouth University, U.K. This was the 4th annual e-conference between IFT and BU, and the theme was “Heritage and Tourism: An Unholy Alliance?” Prof. Bob McKercher from the School of Hotel and Tourism Management, at the Hong Kong Polytechnic University, was an invited speaker for this year’s E-Conference. About 30 delegates and 50 students participated in this event.

On 27 May, IFT and L’École Hôtelière et Tourisme Paul Augier, Nice, France signed a cooperation agreement to foster mutual collaboration in the field of education and professional training. Acting President of IFT, Ms. Florence Ian and Principal of L’école Hôtelière et de Tourisme Paul Augier, Mr. Francis Kolb presided over the ceremony. As agreed, both institutes will engage in student exchange programmes, offer professional training to teachers through academic exchange, undertake joint projects in the hospitality and tourism fields, and encourage local enterprises to offer vocational placement to exchange students.

Founded in 1916, L’École Hôtelière et Tourisme Paul Augier is one of the most renowned hotel and tourism schools in France offering higher education, continuing education and professional courses. Through these collaborations, IFT hopes to facilitate foreign language learning, overseas exchange and vocational placement for IFT students, and more importantly promotes teacher exchange and joint collaboration in the hospitality and tourism, aiming to advance the quality of education of IFT and educate qualified talents for the industry.

IFT Delegates at 1st UNWTO Regional Conference on Tourism Partnerships: Future Tourism for Asia and the Pacific

IFT Acting President Ms. Florence Ian and Head of Technical and Academic Support Division Mr. Antonio Chu attended the 1st UNWTO Regional Conference on Tourism Partnerships: Future Tourism for Asia and the Pacific from 31 May to 2 Jun. This is the first conference of its kind being ever held, with the main objective for both private and public sector participants to engage in a partnership dialogue.

IFT & Cornell University School of Hotel Administration, USA Co-organises Executive Development Programme on Planning for Profits for Hotels

In order to provide diversified training opportunities for Macao’s hotel industry professionals to enhance their management skills, IFT and Cornell University, USA co-orgainsed a two-day Executive Development Programme on Planning for Profits for Hotels on 3 and 4 June. This workshop integrated the disciplines of management accounting, finance, marketing and business decision making, aiming to enhance participants’ management decision making skills with respect to pricing and incentives, advertising, staffing, service quality and other operating decisions by learning how to evaluate financial statements. The programme attracted 24 professionals of local hotels and mega resorts to participate.

IFT had the honour of inviting Mr. Robert E. Kastner, an experienced lecturer in tourism education, to be the facilitator of this programme. Graduated from Cornell University with Bachelor of Science and Master of Business Administration specialising in finance, Mr. Kastner has been teaching at the School of Hotel Administration of Cornell in the areas of accounting, hotel financial management, investment and personal computing. He has also developed numerous software programmes in the area of financial management and hotel development and has been teaching at Cornell’s Professional Development Programme.

The purpose of the programme was to enable participants to learn how to perform competitive analysis, identify opportunities to improve profitability and measure success.

IFT Faculty Member Presents at The ‘Students Meeting in Macao’ Event Organised by the Macau Government Tourist Office

To encourage students and educational institutions to choose Macao as a destination for student excursions and experiencing its cultural appeal, the Macau Government Tourist Office (MGTO) organised the “Students Meeting in Macao” seminar and luncheon in Hong Kong on 4 May. Invited by MGTO, Invited Assistant Professor Dr. Sharif Shams Imon delivered a talk on ‘Learning from World Heritage: The Historic Centre of Macau’ to representatives from 48 secondary schools in Hong Kong.

IFT Student Presents at the APacCHRIE Conference in Macao

Tourism Event Management graduate Ms. Vicky Chim presented a paper titled “Linking event motivation and value in cultural festivals: A preliminary investigation” at the 11th Asia-Pacific Council on Hotel, Restaurant, and Institutional Education (CHRIE), better known as APacCHRIE Conference organised by the University of Macau in May. The paper utilises a survey research method and explores the relationship between cultural event motives and perceived values. The study was conducted under the supervision of Visiting Assistant Professor Dr. Anthony Wong.

A Student’s Perceptions of the 7th Incontro Romano Congress, Rome
     

Five students took part in the 7th Incontro Romano (IR) Congress in Rome, Italy earlier this year in March. IR is an annual congress for youth who are preparing for a career in various service professions. The Congress has a specific theme each year. Participants from different countries are required to prepare thematic projects related to their own countries.

The 5 students formed two teams and each team submitted a research project. One project was themed “How do people who work in the hospitality industry of Macau prepare celebrations for their guests and for themselves?” and the other was “Lusofonia Celebration in Macau”. Apart from the projects, we set up two booths at the international fair during the Congress with the theme “The Celebration of Mid-Autumn Festival - snowy moon cake workshop and the Art of Chinese tea”, and “Festival Handicrafts of Chinese ethnic minorities”, and finally received two awards at this Congress, namely “2013 Best research Paper” Award and the "Special Award” for one of our booths.

We have learnt a lot from participating in this year’s IR. While working on our projects, we had the chance to interview events and festival organisers, local participants and tourists. It helped us to better understand event and festival organisation from different perspectives and to develop our leadership and communication skills, as well as allowed us to make good use of the theoretical knowledge learned from our classes. As well, we demonstrated Portuguese folk dance to represent the culture of Macao at an international night, which was part of the Congress, and I sang Huang Mei Opera to represent the Chinese culture. Students from western countries had a lot of interest in our performance and the Chinese culture.

Our trip provided us many other valuable experiences. We visited several famous attractions in Rome and an Italian hospitality school and learnt how to make gelato and homemade pasta. We also participated in a field trip to the Westin Excelsior Hotel and took a wine tour of the Tuscany region where we sampled wine and learnt about the making wine process in this well-known wine-producing region. Our trip to IR Rome was incredibly educational and we are very grateful for this learning opportunity that we will never forget.

Marketing Plan for a Real World Business Developed by IFT students

Tourism Business Management Year 2 students conducted a real world project to help a new business carry out market research and design a series of marketing strategies.

The aim of this project was to enhance students’ perspectives and knowledge of a realistic business set-up. Students had to help a new food outlet in Macao to develop a marketing plan. This included an analysis of the company and its brand, the business environment, the target market and the development of appropriate mix of marketing strategies. Presentation of the business proposals were arranged on 7 and 9 May. Certification for participation was presented to all students and two outstanding teams were granted the Best Marketing Plan Award. Students’ efforts, innovative ideas and professionalism demonstrated in the project were highly appreciated.

Heritage Management Students Organise ‘Macao! The Hidden Treasures’ event

Heritage Management Year 4 students held the event “Macao! The Hidden Treasures” on 27 April. This was a term project work for the course “Economics for Heritage Conservation” and the course was guided by internationally renowned heritage specialists Dr. Richard Engelhardt, Regional Adviser for Culture in Asia and the Pacific, UNESCO and Dr. Johannes Widodo, Assistant Professor of the National University of Singapore. Through the interviews with local traditional shop owners and the contact with the old community, the students were able to bring out the stories of the folk traditions, appreciate and support the local citizens who preserve local traditions, as well as arouse the past memories of Macao and revive the living heritage of Macao.

Recruitment Activities in Mainland China for 2013/14 Intake
   

While we are still working on the selection of local applicants, we have already commenced our recruitment activities in Mainland China. The National Education Department has authourised IFT to recruit high school leavers in Mainland China for the new academic year. With the arrangement of Tertiary Education Services Office, IFT, together with other local higher education institutions, embarked on our way to Beijing, Shandong, Sichuan, Hunan, and Fujian in Mainland China for our promotion, during which we also visited Provincial or Municipal Admission Offices to discuss how to better smoothen the application procedures.

Besides, IFT also participated in Student Recruitment Fair in Guangdong and Fuzhou held in June.

IFT Conducts Field Study Trip to India for Students


A field study trip to six World Heritage sites and one site on the tentative list in Northern India including Chandigarh was organised by Invited Assistant Professor Dr. Sharif Shams Imon and Lecturer Mr. Philip Chan for the Heritage Management Year 4 students from 27 March to 7 April. Similar field study trips are organised every year to allow students to learn heritage management principles and their applications.

Field Study Trip to Thailand


A field study trip to Amphawa and Chiang Mai, Thailand from 22 March to 1 April was organised by Invited Assistant Professor Dr. Wantanee Suntikul for Tourism Business Management Year 4 students. Both regions are well-known tourist destinations. The purpose of the trip was to conduct field research in a context outside of Macao under the theme of sustainability in tourism, and to deepen students’ understanding of principles through experiential learning.

At both locations, the IFT students collaborated with students from major universities in Thailand. In Amphawa, the group worked alongside students from Chulalongkorn University. After a three-day workshop at Amphawa, the group travelled to Chiang Mai where they worked on various research projects with students from Chiang Mai Rajabhat University. The aim of the research projects and the trip was to understand current sustainable tourism practices and management in Thailand and pave a path for future learning opportunities.

Field Study Trip to Kaiping, China

On 28 April, Invited Assistant Professor Dr. Wantanee Suntikul and Instructor Mr. Jacky Tang led Tourism Business Management Year 3 students to the UNESCO World Heritage site of Kaiping Diaolou and Villages, for their study field trip to do with the subjects “Special Interest Tourism” and “Development and Management of Attractions”. The purpose of the trip was to study and understand the impact of cultural tourism and the management issues faced by a UNESCO site in Mainland China. Kaiping Diaolou and Villages was inscribed to the UNESCO list in 2007.

Before visiting the sites, Instructor Mr. Jacky Tang gave a lecture on issues concerning heritage management and tourism. The group visited Chikan Town, Liyuan Garden, various Diaolou in Kaiping and attended exhibitions on the history of the city. This trip was found to be a valuable learning experience for these students and highly relevant to the content of the course. The task for this field trip was to identify issues and challenges in visitor and site management that Kaiping Diaolou and Villages has faced. Students were asked to make observations of the impacts of tourism on the heritage environment, and on the evidence of issues in site management. During the class session after this field trip, the students discussed the issues and challenges in managing Kaiping based on these observations.

Culinary Arts Management Students Visit Lam Soon Flour Mills in Shenzhen, China
 


 

On 21 March, 19 Culinary Arts Management Year 2 students together with Invited Assistant Professor Dr. Mark Gibson and Instructor Mr. Jeffrey Lao visited the Lam Soon Flour Mills in Shenzhen, China.

Students were given a presentation and tour of the facility exploring the full comprehensive process of producing flour from wheat grain. This included visiting flour milling equipment and procedure; quality assurance and product safety standards; research and development. During the tour, the students were also given the opportunity to taste a wide variety of products made from the various types of wheat. It was an informative day and the students and colleagues were greatly enthused by what they learnt.

Students Visit Manufacturing Site of Theme Park Licensee Holder
 


 

On 13 March, 17 Tourism Retail and Marketing Management Year 2 students led by Instructor, Ms. Catherine Li visited the Guangdong Yongjun Economic Development Co., Ltd. and its manufacturing site in Guangdong, China. The objective of the tour was to help students have a better understanding of Disney’s franchise operations in China.

The Yongjun Group is one of Disney’s authourised licensee holders that produces adult consumer-goods for the Asian-Pacific Region. Their business includes design, production, and retail franchise businesses. Their key product range includes Mickey leather goods, Mickey shoes, Mickey clothing and Mickey accessories. They also own Mickey Signature Museum & a Mickey concept store. The overall tour started by visiting the Yongjun’s Disney Cultural centre, which contains unique Mickey oil paintings mixed with Chinese characteristics, and 18 different styles of Mickey sculptures. After visiting their culture hall, representative of Human Resources Department gave a company introduction, their target customer, and how their franchise model operates in China. They also revealed their 2013 Spring/Summer fashion range. Later students visited their Research and Development Department and their showroom where they were able to see various Mickey concept stores, as well as the Alice’s Wonderland Café and the Mickey Chinese Tearoom. The designer also spent time with the students to go through students’ own designs and provided feedback about students’ work. After visiting the corporate office, students also visited one of their handbag factories.

The tour expanded students’ views on franchise operation. This type of experience is valuable as it effectively helps prepare young professionals for their future career in the retail sector.

IFT Gains Accreditations from Specialty Coffee Association of Europe and ITEC
 



When there is fierce competition in the labour market, an international qualification or certification, which can help you manifest your professionalism, may serve as an important part in your career upward mobility. For this reason, in addition to observing the public's demand for learning and adjusting the curriculum coverage, IFT also tries its utmost best to expand and develop partnerships with more international organisations to offer the public more internationally recognised courses and qualifications in order to help the general public enhance their professional skills.

Recently, because of the development of the catering trends and the health and beauty industry, IFT approached the Specialty Coffee Association of Europe (SCAE) and ITEC, an international specialist examination board providing quality qualifications in beauty and spa therapy, hairdressing, complimentary therapies, sports and fitness training, and customer service, and has successfully obtained the accreditation from these two organisations. SCAE is an education sector aiming to create and inspire excellence in the coffee community through innovation, research, education and communication. Its Coffee Diploma System provides practical focus on all aspects of the specialty coffee sector, requiring applicants to master the skills from roasting to running a coffee bar. Lately, IFT offered one of the modules of its Coffee Diploma and received very good response from the public. As for the area of the health and beauty studies, IFT has obtained the accreditation to offer courses and exams in aromatherapy, make-up, manicure & pedicure, diet & nutrition and holistic massage from ITEC, a leading international specialist examination board which provides quality qualifications in beauty and spa therapy.

IFT started to offer international qualifications with its partners, such as the International Travel Agent Foundation Course of the International Air Transport Association (IATA), in the 1990s. In 2001, with the EU's support and the joint efforts of the local industry, the Macao Occupational Skills Recognition System (MORS) was developed. In the later years, with the continuous influx of foreign investment, the society has been developing rapidly and facing severe manpower drought. Therefore, IFT has been successively expanding its list of international partners with the renowned training and certification organisations, including the Wine and Spirit Education Trust (WSET), Servsafe®, International Bartenders Association (IBA), London Chamber of Commerce (LCCI), Le Cordon Bleu Culinary Arts School, Confederation of International Beauty Therapy and Cosmetology (CIBTAC), American Hotel and Lodging Educational Institute (AH&LEI), Court of Master Sommelier and Burgundy Wine School. The current certification scope is quite extensive, including, among others, culinary arts, nutrition, food security, catering and hotel services, accounting, management, public relations, supervision, retail, information technology, advertising.

IFT hopes that through the extension of the international qualifications we offer, the pressing needs of local professionals can be relieved, and at the same time, the working population can be motivated to raise their qualifications which will help the local industries to grow more professionally.

Exhibition of Advertising and Design Works by Alan Hong and his Students
 
On 7 June, the Exhibition of Works by Alan Hong and his Advertising and Graphic Design Students kicked off at IFT, showcasing the outstanding works of the instructor Mr. Alan Hong and his students who completed Professional Diploma in Advertising Programme and Certificate in Corporate Design Programme. All interested parties are welcome to visit the exhibition at IFT Educational Restaurant and Team Building to get inspired from now on to the end of August.

Passion for French Desserts
 
The word “dessert” originates from the French word “desservir”, which means “to clear the table”. During the 17th century, the word “dessert” was primarily used to refer to offering sweets as the final course of a meal. Over the centuries, the custom of serving desserts after meals has become more popular, and among all, the French have developed a variety of delightful pastries, cakes and confections that make one’s mouth water. Crème brulee, chocolate mousse and macaroon are some of the typical French desserts that always leave a rich aftertaste.

From 27 to 30 May, L’École Hôtelière et Tourisme Paul Augier, Nice, France and our Institute have co-organised 4 Master Chef French Desserts Demonstration workshops. Conducted by the award-winning French chef Ms. Noemie Honiat, the 4 workshops were successfully held with around 124 participants enrolled in total, including IFT chefs and chefs from local industry, students from Culinary Arts Management Degree Programme as well as Diploma in Pastry and Bakery and Diploma in Western Culinary Skills. Proper French desserts making skills were demonstrated by the Master Chef as he showed the making process of 3 special French desserts, which included bikers chocolate mousse, en route for an exotic journey and temple boisee.

Besides, our Institute has also co-organised 3 Master Chef Workshops - Patisserie with Le Cordon Bleu from 27 to 29 June. Le Cordon Bleu is one of the world famous academic cooking art schools in France and has been offering cooking courses, cuisine cooking and patisserie making training/demonstration in different parts of the world. Master Chef Jean-François, Chef pâtissier of Le Cordon Bleu, hosted the 3 workshops and shared his expertise with the 60 participants enrolled.

A total of 9 different patisseries were being demonstrated during the workshops including pineapple and mini baba, savarin with citrus and Malibu, chocolate diamonds, fromage blanc and strawberries, creamy chocolate, orange cake, yuzu macaroon, lemon cake and chocolate-orange diamonds. It was definitely a fruitful learning experience for the participants as they could have hands-on practice after the demonstration.

學院與法國尼斯L’École Hôtelière et de Tourisme Paul Augier旅遊酒店學校於5月27至30日合辦了4個「名廚大師技藝展示工作坊 — 法國甜品」,向本澳廚師、旅遊學院廚藝管理學位、麵包及西餅製作文憑和西式烹飪技巧文憑課程學生展示正宗法式甜品烹調技巧。此外,學院亦與法國藍帶廚藝學院於6月27至29日合辦了3個「法國藍帶廚藝學院星級大師工作坊 — 法式甜點」,讓業界及公眾對不同法式甜點的烹調技巧加深了解。

IFT Dragon Boat Team Participated in 2013 Macau International Dragon Boat Races

On 8 June, IFT Dragon Boat Team participated in the 2013 Macau International Dragon Boat Races – Macau University Student Small Dragon Boat Race (University Student 250m). The Dragon Boat Team was established in 2010, and this is the fourth consecutive year that the team took part in this great local cultural arts and sports event.

IFT Student Union Organises Exchange Trip to I-Shou University, Chinese Taiwan

From 29 May to 2 June, Student Union members went to Chinese Taiwan for a five-day exchange trip to experience Taiwanese hospitality and the training of tourism personnel. During this trip, they visited the well-known I-Shou University and learnt about the operation of the University and its facilities. At the end of the visit, President of Student Union presented souvenirs to express gratitude. Well-known destinations such as Kenting Country Park, Shi-Hzuwan, etc. were also a part of the itinerary of the trip.

IFT Alumni Annual Dinner
 



The IFT Alumni Annual Dinner was successfully held on 7 June. President of Board of Directors of IFT Alumni Association Mr. William Wong reviewed the work of the Association and called for interested alumni to join the Association as the election of new board members was going to be held in 2013. Ms. Katsy Lin, President of Student Union, thanked for the support of the alumni and expressed hope that there would be more activities involving our alumni in the future. Our honourable guest Ms. Florence Ian, Acting President of IFT, emphasised that the success of IFT relied on their professionalism and contribution to the hospitality industry and expressed her sincere gratitude to the alumni for their continuous support of the Institute and the students. She stated that the Institute will provide more comprehensive services to the alumni in the future. Mr. Antonio Chu, Head of Technical and Academic Support Division introduced the function of IFT Alumni Affairs to the alumni and thanked for their continuous support of activities held by the Association.

During the dinner, IFT Student Union representative and alumni gave singing performances while games and a lucky draw were arranged to make the evening night a memorable one.

Passionate on Food and Beverage – Ms. Agnes Lei, Graduate of Bachelor Degree in Tourism Business Management in 2005
 


 

After graduated from IFT for 8 years, I am pleased that I chose food and beverage industry as my career. From a kitchen assistant to food and beverage office co-coordinator, analyst and then worked in operation as beverage lady to sommelier. Now, I appreciated that I got a new life in Australia being an Assistant Restaurant Manager at Melbourne Crown casino.

Working in food and beverage industry is a challenging job. Once you enjoy and passionate on it, you cannot remember how long you work for a day. It is worth to enjoy the life with fabulous cuisine and wine. Food and beverage industry is always full of surprises, challenges and innovation. We need to learn every day from different culture or behaviours, creative culinary, new food or beverage product, new equipment and new customers. It is an industry related with our daily life.

This is my second time to visit Australia; I had travelled Australia for a year in 2010 with my working holiday visa. Even I travelled most of the attraction and stayed with Australian family, there are lot of things waiting for me to explore such as the food, wine and eating culture.

I studied WSET (Wine & Spirit Education Trust) at IFT after graduation, I learnt about the process of making wine, tasting and food pairing. I did not have much more chance to visit the winery, talking with the wine maker personally when I was in Macao. I am so exciting to my new career that brings me the extra benefit of my life.
