New Young Faces for the 2013/14 Academic Year in August
February and March are the busy months in the academic calendar as we welcome and brief young high school leavers-to-be about our programmes, campus life, international activities, internship opportunities, etc. – basically how IFT is going to help to transform high school graduates into young professionals and mature community members ready to contribute to the booming tourism and hospitality industry of Macao.
The current round of admission applications saw a continued increase in interest among young people for tourism and hospitality education. We recorded 1,562 local applications for our day-time bachelor degree programmes, which is a rise of 4.34% from last year. Our evening bachelor degree programmes will begin admission applications in May, followed by applications from Mainland high school graduates. Based on previous years’ trend, it is expected that competition will continue to be strong.
‘What are we looking for in a candidate?’ becomes the hottest question. ASK – Attitude, Skills and Knowledge – may be able to cover most of the ground. While we can transfer skills and knowledge through effective means of education, it is more difficult to shape the right service and professional attitude if the mind and heart are not willing. We cannot emphasise more the importance of emerging early in community activities, serving in committees and participating in team work. Interacting with a wide network of people and appreciating the diversity in the social fabric of a community is the first step to developing an open heart that helps shape a right attitude in life and profession. So, do venture outside your comfort zone now and let us know how you have contributed to your community in your own ways!

The annual IFT Open Day is traditionally organised by the year 2 students of Tourism Event Management and assisted by their first year schoolmates, staff and other students. This year, we opened our doors to 700 prospective students, parents, teachers, alumni and the general public on 23 February.
Happy and enthusiastic guests were asked to experience what it’s like to be a typical IFT student for a day – from learning the restaurant waiting etiquette to preparing beddings, sampling delicious foods and tasting wines.
The eager candidates were also able to appreciate the more academic side of the Institute by visiting the state-of-the-art teaching facilities including our multimedia library, kitchens, classrooms, lecture theatres, sports facilities, and of course, learn first-hand study experiences from the senior students who readily discussed the six degree majors being offered in IFT with the prospective students. Apart from learning about IFT’s international and industry links, the guests also became familiar with student life, the Student Union and its sub-clubs, as well as a sharing by alumni. We wish to express our sincerest thanks to the following alumni who came back to share their IFT experiences: Agnes Lei, Billy Im, Carmen Lou, Florence Lou, Gabriel U, Jack Lio, Nyon Lam and Renee Chan.

Representative of IFT Participated in Official Visit to Dubai and Italy |

With the aim to facilitate the development of the Macao convention and exhibition industry, the Secretary for Economy and Finance, Mr. Francis Tam Pak Yuen recently led the Committee for the Development of Conventions and Exhibitions along with various industry representatives to Dubai, UAE and Italy for the inspection of exhibition facilities and the exchange of practical knowledge. Representing the Institute for Tourism Studies, was Dr. Clara Lei, Assistant Professor, who took part in the visit.
The representing group of Macao visited the World Trade Centre of Dubai and met with the executive management. Views on tourism and industry development were shared and exchanged. The management of the Centre guided the group to visit the Solar Middle East 2013 Exhibition and the exhibition facilities in Milan, Genova, and Bologna in Italy. Meetings were held with the management of the different facilities. Experiences in operating conventions and exhibitions, as well as policies regarding the industry were shared between the representing group and the different executives from the exhibition centers. The representing group has earned fruitful experiences and knowledge from this tour.

IFT Student Internship as Tourism Volunteer in Shangri-La, China |

|
In my third year of study at IFT, I came across volunteer tourism while studying the subject of Special Interest Tourism, and I became very interested in it. Being a volunteer can help us build a sense of responsibility because the task of volunteers is to take care of other people even though they are strangers. Volunteer tourism requires us to travel to some remote places to help the local people. Those remote places are always undeveloped, and the lifestyle of local people is very traditional and backward. However, those places are always full of beautiful natural scenery which is very precious for the human societies. Therefore, I think being a volunteer in those places is a very meaningful and interesting thing to do. We can help other people while enjoying those natural wonders.
Through a senior IFT student, I got to know one of the companies located in Shangri-La of Yunnan Province, China that provides internship opportunities to IFT student and also offers volunteer work. The company is a non-profit organisation, and it is called Yunnan Mountain Heritage Foundation. It combines three elements to help local minority people: first is “education” which is associated with Shangri-La community library, second is “business assistance” centered on Shangri-La Handicraft shop and third is “honey project” for which the organisation works with local people to make natural honey.
I had been a volunteer in this organisation for two months with some other IFT students; we worked there together, lived together, cooked together and played together. All of us had participated in those three areas of work as the organisation also wanted us to learn as much as possible. My major task was to manage the handicraft store including sales, promotion and consignment sales with locals. I was also a Japanese and an English tutor for the local students and attended the honey project class.
The experience in Shangri-La was unforgettable. I wish the place could be kept the way it is now forever as it is extremely beautiful, and the people there are very friendly. At the same time, we need to help local people understand more about the world through voluntary work.

| Sixteen IFT Year 3 students joined Sheraton Macao Hotel, Cotai Central as interns with placements in various departments including Human Resources, Concierge and in the Guest Services Center. On 5 Dec 2012, the Sheraton Macao Hotel, Cotai Central arranged a certificate presentation for all the students and some of the outstanding performers were granted special Awards of Excellence. The recipients for the Excellence Awards are: Boris Ip (Concierge), Mozel Cao (Executive Office), Tammy Tang (Food &Beverage), Rikki Wen (Human Resources), Mio Mio (Human Resources) and Jermond Sou (Human Resources). Their supervisors were appreciative of their efforts especially during the Hotel’s opening and wish them the best of luck in their studies. |

PATA Macau Student Chapter Organises a Field Trip to Thailand |

|
During its inauguration year, the PATA Macau Student Chapter
organised a 9-day field trip to Thailand from 23 - 30 December,
2012. There were a total of eight participants; four from the PATA
Macau Student Chapter Executive Committee and four from PATA Macau
Student Chapter members traveling across three cities in Thailand,
including Bangkok, Pattaya and Chiang Mai.
The itinerary included visits to education institutions,
associations, corporations as well as tours in some of the most
famous heritage sites and destinations in Thailand with the aim of
broadening the members’ depth of knowledge regarding the
developments and management of PATA as well as the contemporary
practices and skills adopted in the tourism industry abroad.
Some of the
most significant visits included the PATA Headquarters, renowned
hotel chains such as Centara Hotels & Resort and Banyan Tree,
Bangkok; local cultural areas such as the Floating Market;
heritage sites such as the Grand Palace and Doi Suthep Temple and
many other destinations which allowed members to interact with,
learn from and recognise the local cultures and environment.
The overall
trip was very meaningful for all the participants. Furthermore,
the Chapter successfully secured internship opportunities in the
PATA Headquarters and Banyan Tree, Bangkok for all interested PATA
members. No doubt, this is another priceless benefit gained from
the Thailand trip.
Lin Guanreng, Ariel, Chairman of the PATA Macau Student Chapter
reviewed that the successful launch of the Thailand trip was one
of her proudest moments in the Chapter. During the trip, they met
some difficulties despite great regards upon risk managements due
to unfamiliarity with the destination, such as the arrangements of
transportation and timing. Serious traffic was beyond their
expectation. All problems were solved with team spirit and
coordination between the involved parties which was both a relief
as well as an inspiration for further improvements to future
endeavours abroad.
Fu Xiao Long, Bruce, Executive Officer of the PATA Macau Student
Chapter describes the trip; ‘This was the first time that we
organised an overseas field trip. Management was a daily challenge
for us. However, the field trip was definitely meaningful. During
the trip, members lived together and helped each other. Many
fantastic and attractive places were included and they abounded my
knowledge that I can never come across in textbooks’.
Xu Jian Qin, Ken, Vice Chairman of the Chapter remarked that the
trip to Thailand was rewarding as he was given the opportunity to
interact and learn from the senior managements from some of the
most top branded hotels such as Banyan Tree Bangkok and Centara
Resort and Hotels. Besides that, he made many new contacts and
exchanged stories about each other’s backgrounds, cultures,
interests and lifestyles during the academic and social visits. No
doubt, this trip is of great value both in terms of knowledge and
friendship acquaintance.

IFT Student Awarded Associateship with The Photography Salon Society of Macao(APSSM) |

Tam Keng, one of IFT’s Salon Photography students, was recently awarded an Associateship with The Photography Salon Society of Macao. Most notably, one of Mr. Tam’s photographic works was awarded first place in the prestigious 2012 Annual Photography Salon Society of Macao Members’ Photo Competition.
Founded in 1978, The Photography Salon Society of Macao (PSSM) aims to promote the art and technique of photography, and serves as a driving force of photo art activities in Macao. Being one of the biggest annual events of the Association, the PSSM Members’ Photo Competition is highly competitive since numerous entries are received each year. Interested members are required to submit twelve monochrome and colour prints for assessment, and the panel of judges composed of seven experienced Fellowships of Royal Photographic Society and distinguished photographic associations from Macao and Hong Kong. Mr. Tam’s achievements have proven that his masterpieces can stand out amidst a gallery of excellent photographs.
Before Mr. Tam became passionate about photography, he had followed a number of famous traditional Chinese painters, oil painters and sculptors in Shanghai, which enriched his artistic knowledge. After having some foundational training in composition and lighting, and being inspired by IFT’s Salon Photography course, he gradually developed an interest in photo shooting.
For the sake of variegating his entries to the 2012 Annual PSSM Members’ Photo Competition, Mr. Tam travelled to a variety places offering a diversity of settings. Followed by several stages of careful selection and precise amendments, Mr. Tam meticulously worked to submit the best entries he could. Hence, his success does not come coincidentally and we are glad to see that his efforts were finally paid off.
All in all, Mr. Tam would like to take this opportunity to show his appreciation to our school for holding the Salon Photography course, which drew his inspiration in the photographic field. He would also like to give special thanks to the teacher, Mr. Kong Iu Lam, for his helpful guidance and kind assistance. Being the instructor of Salon Photography course, Mr. Kong acted as a mentor and coached the students on how to prepare their photographs towards doing well in international competition.
In the future, Mr. Tam will continue to further polish his photographic skills and equip himself to strive for perfection; he has already set his sight on the renowned Associateship of Royal Photographic Society in The United Kingdom.

Floristry Training at Tourism and Hotel School, IFT |

With the aim to further enhance industry diversification, the Tourism and Hotel School (THS) has launched a series of training programmes to cope with the rapid development of the culture and creative industries in Macao. Among these programmes, floral design is one of the important fields that we have been attempting to promote. In 2011, we successfully launched a 72-hour Certificate in French Floral Art and Design as a first attempt. Since then, we have continuously provided various short-term floral training programmes with diversified themes to better fulfil the different needs of the general public. This includes such areas as basic floral arrangement, modern French style, venue decoration, wedding arrangements, decorating for shop opening and cocktail ceremony, Valentine’s Day, Christmas and Chinese New Year; with all areas receiving favourable feedback and the popularity of these programmes reflected in the overwhelming enrolment numbers.
Taking into consideration the growing importance of the floristry business in the hospitality industry, THS, as a local hospitality training institute dedicated to industry development, is introducing a MORS (Macao Occupational Skills Recognition System) training manual for this occupation. This manual will not only demonstrate the basic standards of a professional floral designer, it is definitely an assurance for quality floristry skills and could also serve as a guideline for the implementation of this profession.
Despite launching a number of floral training programmes and introducing the MORS training manual, our school is endeavoured to foster internationalism and professionalism through offering well-structured DFA (Dutch Flower Arrangement) floral design certificate courses with European Union recognition and accreditation. Hence, if you are planning to pursue a career in floristry or should you want to enhance your competitiveness, this certificate is solid proof that your professional capabilities meet the prescribed standards set forth by the European Floral Design Academy in Holland.

Friendship and Collaboration Between Nice and Macao |

To strengthen cooperation and exchange in the areas of education, culture and tourism between France and Macao, a delegation led by the Deputy Mayor of Nice, Mr. Rudy Salles visited Macao last year. The delegation was warmly received by several government departments including the Macau Government Tourist Office, the Cultural Affairs Bureau and at the Institute for Tourism Studies (IFT). The visit was certainly a rewarding one, as links were quickly established and results were seen during the famed Carnival of Nice held this year between 15 February and 16 March with performances of two groups from Macao, namely the Association of Fresh Fish Merchants and Casa de Portugal.
In order to further develop alliances between education institutions of the two cities, IFT was invited to go to Nice to discuss possible partnerships with the century old Lycee Hotellerie Tourisme Paul Augier (LHTPA) and to view the performances of the Macao representatives in the Carnival. Mrs. Diamantina Coimbra, Director of Tourism and Hotel School was appointed for the mission. She arrived in Nice on the morning of 25 February, visited the school facilities and met with the Director of the School, Mr. Francis Kolb and his team. LHTPA was founded in 1916 and offers higher education, continuing education and professional training in the areas of hospitality, tourism and in the culinary arts. The school has extensive and top-notch facilities, including three restaurants of different categories and 3,000 square meters of food production area. IFT and LHTPA share a similar philosophy in education and training, and both believe it is important to equip students with professional knowledge and technical competence in order to excel in this competitive industry. Mrs. Coimbra and Mr. Kolb discussed different methods of cooperation between the two Institutes in the future, including teachers exchange, student academic exchange, and internship exchange, among others.
The first contact between the two schools has been established! We are positive that exchange between the Institutes will start soon, so we look forward to receiving a new member in our international network family.

Paving a Way to the Dream with Diligence and Persistency |

Like returning guests to hotels and restaurants, the Tourism and Hotel School has a group of ‘loyal guests’ who keep coming back to further their learning through participating in various training and education programmes. We talked to one of these loyal guests, Cecilia Luk, a young lady who has taken 50 courses in our School over the past 5 years. The interview has been transcribed below:
Interviewer: We have found that you have been taking short courses at our School since 2007 and up till now, the number of courses you have taken is about 50. Could you tell us the reason why you have such a zest in learning and the reason why you chose us?
Cecilia: My dream is to run my own restaurant one day and I think that it is important to develop my own culinary skills before I attempt to realise my dream. Honestly speaking, the teaching quality and professionalism of IFT is doubtless. From teachers to materials chosen for the courses, everything is so carefully selected. After I took the first short course in cooking, I knew that I had got to a right place.
Interviewer: Apart from short courses, we found that you have also taken the diploma courses in culinary skills, pastry and bakery; and some international qualification courses as well. Could you tell us why you have made such choices?
Cecilia: In my opinion, short courses provide some fundamental knowledge while the diploma programmes and the international qualification courses require learners to reach a certain level within a certain number of learning hours; so for me, different types of courses fulfill my different learning needs. As just mentioned, I want to develop my skills in cooking, so I will apt to take courses that can help me learn all relevant concepts in a systematical way. Besides, through the compulsory internship session, I have learnt various things in the actual workplace and built up the connection with the industry. I graduated in 2009 but even till now, whenever there are special events, my instructor will call and invite me to work together with him. This is an incredible way to keep up with the catering trend.
Interviewer: Attending classes after work could be very exhausting, but you have been doing this for over 5 years. Could you tell us what makes you so persistent in learning and could you share with us your viewpoints towards continuous learning?
Cecilia: Whether it is for professional or personal development, I think continuous learning is a must to everyone. Many people now may not be working in a field related to their major or some people may find their interest in other areas after they enter the labour market. It is not possible for everyone to quit the current job and get back to school to be a full time student again. Instead, using the free time after work to enrich yourself will be a better option. Continuous learning gives us another chance to pursuit another specialty or to pave a way to another field. I am glad to see that IFT has been developing the coverage of different disciplines. This helps me extend my interest and explore more possibilities.
People say that ‘when there is no learning, there is no growth’. We hope that the educational platform we have created to the general public and the professionals in the industry can help those who look for personal development to achieve their goal. Though learning requires time and effort and how to make a good balance between learning and leisure life is difficult, if you look into Cecilia’s case, you may find that nothing is difficult as long as you have set your mind to do it.

Ms. Maggie Mak, a graduate from Hotel Management degree programme in 2010, was featured in a local newspaper in January. When she graduated, she worked as Assistant in Food and Beverage Department in an international chain hotel and now she is a Sommelier. In the article, she shared her work experience and the path she has taken all the way she has gone through to her present career.
Ms. Vanessa Choi, a graduate from Higher Diploma in Tourism Business Management in 2007, was featured in a local newspaper last December. She has worked as Assistant Training Manager in a five-star hotel since 2008, and her company sponsored her further studies. In the article, she shared her work life including the challenges and opportunities she has faced in her career path.
