President's Message
Charity 101

Happiness is a choice and an attitude.  It embraces you when you constantly feel grateful for what you have, rejoice over every delightful, though insignificant, occasion, and be able to give.  Most of our students feel grateful for the learning opportunities, the material comfort and the safe and stable environment they are living in.  Then, we hope they can learn to give.  “Charity 101” is not a single course in our curriculum; it is a spirit that encapsulates part of our students’ learning process.  Throughout their four years of study, most students will find themselves the chance to organise events in a team as part of their course work.  By applying textbook theories into practice, they plan, organise, market, and stage the events, as well as look for sponsorship.  At the same time, they use these events as an avenue to raise charity funds.  In this academic year, our students organised several charity fairs on and outside the campus for Action Oasis (to help disadvantaged children in the Mainland), Caritas, Orbis, and the Cradle of Hope.  The students’, and the faculty’s, biggest reward was not a passing score or the amount raised.  It is happiness and gratitude for being able to give, and the wisdom to accept life’s many challenges.  We hope with increased involvement in community and charity work, we will progress from Charity 101 to Charity Lifelong.

快樂是一種選擇和態度,源於特別的經歷和施予。相信我們的學生大多都為自己的學習和生活感到滿足,與此同時,學院希望他們在四年的學習中學到仁愛精神。“慈善入門101”為課程學習的一部份,學生有機會組成團隊組織多項活動,從知識理論到實踐的同時,亦藉此為多個團體籌募善款。過程中得到了助人的快樂和學會感恩,這些都比分數和所籌得的金錢重要。透過多參與社區和慈善活動,希望學生學會把“慈善入門”進展成為“慈善終生”。

Time for Change
     

Once someone told me that life is a path we follow on which the road signs are notices of opportunities - some we heed, some we fly right by.  All my life I have wanted to fly.  In May of this year I did just that, although the contributing circumstance – a motorcycle accident – was not the best way to satisfy such a desire.  The flight was fantastic; the landing was not.  Still, opportunity presented itself:  I met many talented and friendly medical and police personnel who, despite the challenge, patiently helped me within our chinglish (Chinese/English) and engluese (English/Portuguese) communications.  I also communicated with myself in a manner I’d never done; going over and back, to coin a phrase, has a way of helping to put everything into adjusted perspective.

Attempting to gain deeper perspective of our industry and its talented professional contributors, then share that with readers, has been my goal as interviewer for our newsletter.  Coherently promoting and highlighting individual faculty, students and staff as they create and/or participate in the myriad activities of IFT has been my goal as chief editor.  This has been a pleasant and rewarding opportunity; and, it is time for me to step away from it - still carrying the same joy and enthusiasm that I brought to the position.

Our newsletter will have changes that include electronic version only, along with minor internal content adjustments.  Similarly, IFT’s website has a new look and expanded applications.  I extend my thanks and congratulations to the ITT team and consultants for their hearty efforts within this progressive and impressive changeover.  I also wish to thank those wonderful individuals who have made it such a delight for me to carry out this editor role for our newsletter.

Being the luckiest person on earth is a difficult position to fill.  After practicing at it since May I am comfortable, for I have been using all my senses to heed signs as they are presented to me.  No mysteries to solve, just the path and its variants - intriguing and delightful.  Thank you for reading along these years during a fragment of that exploration.

A BIG Day for our 2010/11 Graduates and Scholarship Recipients


26 October 2011 was certainly a very memorable and all-important day as 527 degrees, diplomas or certificates were presented to our graduates!

The afternoon ceremony was staged at Tap Seac Sports Complex.  After the national anthem, Chief Executive of Macao SAR, Dr. Chui Sai On, delivered his congratulatory address, and President of IFT, Dr. Fanny Vong delivered her speech.  Graduate representative, Lin Jingyin, delivered a speech on behalf of the graduating class, highlighting feelings regarding their students’ years at IFT.

Research on Macao Tourist Satisfaction Index (MTSI) and Visitor Profile Study (VPS)
 

The International Tourism Research Centre (ITRC) of IFT held a press conference on Current Trends in Macao Visitor Satisfaction and Profileon 21 October 2011. ITRC conducts research on Macao Tourist Satisfaction Index (MTSI) and Visitor Profile Study (VPS) regularly to monitor tourist satisfaction and to profile visitors.  Up-to-date major findings of these studies are reported at the press conference.  Dr. Robert Veen, Postdoctoral Research Fellow of Hong Kong Polytechnic University, was invited to the press conference and shared the results of HK PolyU Tourist Satisfaction Index.

Public Lecture on “The Pandora Box of Visual Art – Implication of Computer Graphics (CG) on Cultural Display”
 

On 21 November 2011, the Association of Advertising Agents of Macau (AAAM) conducted a Public Lecture on “The Pandora Box of Visual Art – Implication of Computer Graphics (CG) on Cultural Display” for students and trade members at IFT.  The lecture featured computer graphic expert, Mr. Li Liang from Crystal CG, Beijing, the computer graphic provider of Beijing Olympics, the China Pavilion of World Expo in Shanghai, and London Olympics.

Macao SAR Government has been strengthening the support for Macao’s cultural and creative industries.  As a member of the Cultural Industry Committee, IFT made its contribution by recently launching a series of programmes in the field of cultural and creative industry with the objective of helping residents cultivate their interests and talents.  The Institute has also worked with the Cultural Affairs Bureau to initiate the Arts and Cultural Management Human Resources Training Programme by offering the Certificate in Arts Administration programme.

For the well-being of citizens and balanced development of our city, the Institute looks forward to offering more support and programmes for cultural and creative industries.

Student Counselling Team Attends an Anti-drug Conference in Hong Kong
 

Faced with the realities of today’s complex society, the student counselling team was prompted to join an anti-drug conference over 21-22 September 2011 that included two on-site visits to anti-drug centres in Hong Kong.

On the first day, the team took part in seminars and was exposed to promotional campaigns and projects being put forth by experienced anti-drug and anti-substance abuse organisations.  In the afternoon, the team visited the Wong Yiu Nam Drug Rehabilitation Centre, an inner-city facility in Tseung Kwan O.

The following day included a day-trip to Shek Kwu Chau Treatment and Rehabilitation Centre where the team toured facilities entirely dedicated to drug and substance abuse issues.  They also became familiar with the SARDA projects (Society for the Aid and Rehabilitation of Drug Abusers) and in particular, those dedicated to young adults in need of treatment.

The student counselling team returned with increased insight regarding the behaviours and needs of drug and substance abusers, the prevailing trends and what educational institutions such as IFT can do to prevent and educate students and staff about the realities and prevention of drug addiction.

The 9th Macao Inter-Tertiary Debate Competition



Life at IFT is not so ‘easy’, with all our projects and mid-term exams. Nonetheless, our group still tried our best to schedule as many meetings as possible in preparation for the Macao Inter-Tertiary Debate.  I am really proud of our team’s work.  Our group includes Zoe and Vanilla from Tourism Event Management Year 1, Vicky from Heritage Management Year 4 and I am Helen from Tourism Business Management Year 2.  Our competitors were from City University of Macau and the topic was ‘Law is not contrary to the human emotions’.  First we wrote down our main points and then each of us drafted our individual scripts. Finally we reconvened and discussed the scripts and gave each other advice including the voice and the pace of speech.  We also received a lot of assistance from our Tourism Event Management schoolmate, Terry.

With everyone’s great contribution our team was able to win and I was also recognised with the ‘best debater’ award.  I was really excited when I heard these results.  This victory has been a real honor for all of our team members.

The most rewarding aspect of participating in this competition is not the result, but the process of cooperation and getting to know a lot of new friends who have similar interests. I strongly recommend students to take part in this debate in the future. If you do you will enjoy it and have a lot of fun. See you next year!

Z Generation, One Destination: a Charity Event full of Creativity
 


Recently a team of Tourism Event Management Year 3 students organised a multi-faceted charitable event under the theme of ‘Z Generation, One Destination’ which aimed to project a positive image of the Z Generation by showing enthusiasm, creativity and their compassion for the less fortunate. The event was supported by the Macao Tower and all proceeds were donated to Orbis.

Four activities comprised the event series: (1) Z Macao, See Macao Photo Taking Competition (2) Zero to Hero (3) Z Halo Party and (4) Z Generation, One Destination postcard sale and puzzling event.

‘Z Macao, See Macao‘Phototaking Competition was held from 18 September to 14 October 2011 on facebook where 400 pictures of Macao‘s hidden beauty have been housed.  In total, there were more than 1000 people who partcipated in the voting process and the most popular 40 entries were printed as postcards.

On 29 October, 'Zero to Hero'‚ and 'Z Halo Party' were held at IFT Main Campus with great entertainment, delicious foods and a spooky Halloween atmosphere.  The objective of these activities was to arouse public attention to the entire event, as well as provide a platform for youngsters to socialise.  More than 250 participants from different secondary schools and universities took part in the event.

The ‘Z Generation, One Destination’ postcard selling activity took place on 21 November on both IFT campuses, public streets, as well as different universities in Macao.  The postcards cost MOP10 per set in which one set of the postcards will be kept by the recipient while the other one with the recipient’s signature was used for assembling a giant postcard mosaic on 3 December at the Macau Tower Convention & Entertainment Centre’s outdoor plaza.  This event was a great success and the organisers have also applied for entry into the Guinness Book of World Records for the largest postcard mosaic and it is hoped in our next newsletter that we will have something postitve to announce regarding this record.

We Wish You a Merry Christmas Charity Fair
 


Our Tourism Retail and Marketing Management and Event Management Year 2 students recently had the pleasure of holding a Christmas Charity Fair.  The fair took place in the IFT Amphitheatre on 18 November 2011 with roughly 600 people attending and a total of MOP45,289 was raised.  The proceeds were donated to the local charity ‘Cradle of Hope‘ on 2 December to help children in need during the Christmas season.

MORS Gold Pin Competition 2011
 



One of the landmark annual events of IFT, the MORS Gold Pin Competition, was held on the 10 and 16 November at IFT main campus and Grand Lisboa respectively.  This year, the category for Retail Sales Officer was added to the Competition.  Three hundred and thirty-nine participants from 29 organisations were attracted to compete in 11 different areas.  Let us extend our sincere gratitude to all participating entities and congratulations to the winners!  We also thank Grand Lisboa for sponsoring the venue for some of the competitions.

A Muslim Cuisine Seminar and Cooking Demonstration Workshop
 


Diversification of the tourist market has been one of the major objectives of our government in the last few years.  With continuous joint promotional efforts made by the public and private entities, we have begun to see some positive results. Today, if one goes to the Leal Senado Square or to any other major tourist site, one can easily find people originating from one of the seven continents of the world.  They may have differing skin pigments, speak a range of languages and have unique customs.

To be a first-class tourism host, it is important that we understand others’ cultures and know their likes and dislikes.  A very important part of culture is food, so it is crucial that tourism professionals understand the eating habits of the visitors coming from different countries.

In view of this, the Tourism and Hotel School (THS) launched a series of Cuisine Seminars and Cooking Demonstrations.  As part of the series, a Muslim Cuisine Seminar and Cooking Demonstration Workshop were organised. The whole-day event, held on 7 December, 2011, was co-organised by the Macao Government Tourist Office (MGTO) and IFT.  The speakers, Chef Farouk bin Othman and Chef Faizul Rizal bin Mt Akhir were invited from Taylor’s University of Malaysia.

During the seminar and workshop sessions, the speakers shared the concepts of Muslim cuisine with the participants and demonstrated three traditional recipes.  The two Malaysian chefs also introduced Muslim food regulations to the participants and explained how to identify non-Halal ingredients, which are forbidden on Muslim menus.

The whole-day event concluded with a wonderful dinner prepared by the Chefs featuring various active cooking stations with traditional cuisine, as well as western favourites.  Twenty-three students received their certificates during the certificate presentation ceremony held before the dinner.

During the dinner, Eng. João Manuel Costa Antunes, Director of MGTO, challenged the participants to create local Halal friendly dishes and Dr. Fanny Vong, President of IFT announced that more interesting events will be coming.

近年,來自不同國家的旅客急增,作為東道主的我們若未能了解並因應不同文化、不同飲食習慣的差異來招待我們的賓客,又如何能夠把澳門發展成真正的國際旅遊城市呢?為此,旅業及酒店業學校開設了多個餐飲講座及工作坊以加強業界對這方面的認知。當中較為矚目的一場大概是旅遊局及本院於2011年12月合辦的穆斯林美食知識講座,由馬來西亞Taylor’s University 的廚藝顧問主講並示範傳統穆斯林食品的烹調要訣,吸引共23位餐飲業界的專業人員出席參與。

Cultural Tourism Seminar Series: Dr. Sun Yat Sen and the 1911 Revolution

The year of 2011 marks the 100th Anniversary of China’s 1911 revolution.  The revolution, also known as Xinhai Revolution, brought Qing Dynasty and more than 2000 years of imperial ruling in China to an end and resulted in the establishment of the Republic of China.  Tourism and Hotel School organised seminars in the months of October and December 2011 with the renowned historians, Dr. Tam Sai Po and Mr. Chan Su Weng, to celebrate this important event.

Dr. Sun Yat Sen, who played an instrumental role during the revolution, became the first provisional president of the Republic of China.  He created the political philosophy of the three principles including nationalism, democracy and welfare.

Sun came to Macao when he was still a teenager, so Macao became his starting point for travelling around the world.  While studying medicine, he travelled constantly between Hong Kong and Macao, criticising the corrupted imperial system and made plans for the revolution.  After his graduation, Sun moved to Macao to practice medicine and continue working on his revolt plan.

During the two seminars, the speakers pointed out the importance of Macao as a strategic base for Sun’s revolutionary activities, the support given to him by local Chinese people as well as their struggle and the changes seen in Macao during and after the revolution.

Teambuilding Workshops
 

In recent years, people have become aware that manpower is an invaluable asset and an important factor for the success of a business.  How to get employees into a work team and boost morale to enhance efficiency has attracted the attention of many enterprises. 

On October 2011, Tourism and Hotel School offered a team building workshop to a group of 55 management team members from City of Dreams.  In order to better understand the needs of the company, our trainers spent 2 months communicating with the organisation to design the programme which included a lecture session and several practical activities.  With the aim to enhance unity of the whole work team, the workshop was designed to focus on building trust among the participants.  

The event ended with voices of laughter, and participants felt that they had become closer and got to know each other better.  We saw the workshop ignite a sparkle for the organisation, and we think that this is just the beginning. We are sure that their team spirit will continue to grow.

Graça Pacheco Jorge at IFT

Graça Pacheco Jorge, author of the book “A Cozinha de Macau da Casa do Meu Avô”, which translates to Macanese cuisine from the kitchen of her grandpa, was invited by the Tourism and Hotel School to deliver a Macanese Food Cooking Demonstration and Workshop to local chefs on 21 December 2011.

Graça was born in Macao and is a descendent of an early Macanese family.  She is well recognised for her authentic culinary skills and is one of the most respected Macanese chefs today.  Graça’s book is not only an important reference for culinary lovers, but will also appeal to those interested in Macanese culture.

With the objective of promoting Macanese food around the world, Graça cooperated with several local and overseas units, organising seminars in many different countries. 

During the workshop, Graça demonstrated the traditional way to prepare five Macanese dishes that she carefully selected, including the popular local dish, Portuguese Chicken.

What is the origin of Macanese cuisine?  As she says in the introduction of her book, “As contrary to what many people think, Macanese cuisine mainly originated from traditional Portuguese dishes, which were later adapted to local resources and enriched with the incomparable oriental spices”.

IFT Alumni Winning the MORS Gold Pin!



We were thrilled to learn that 2 IFT alumni, Lillian Ao and Benjamin Iong, the finalists in the category for Front Desk Agent and Customer Relation Officer, won in MORS Gold Pin Competition this year.  We have asked them to share with us their experience of achieving such success:

I: Can you tell us the reason why you joined the competition?

L: I got the news from our department and my supervisors encouraged me to join as they thought it was a good chance to learn more experience outside the working environment.

B: For me, honestly speaking, I have been keeping my eyes on this competition since I was a freshman at IFT.  As this is the only occupational competition for the hospitality industry here in Macao, it is representative and I reckoned that it was an honor to be the winner, so I decided to join this time.

I: Can you share with us what you have done to prepare for the competition?

L: As some of our colleagues joined the competition in the past years, they had told us quite a lot about the knowledge we had to master and the types of questions that might be asked in the quiz bee session.  Since we knew that the first round was only a written test and the questions were covered in the training kit, we just went through the materials that we had at hand, but once we learned that we were accepted for the second round, we started to be nervous as we knew there was a lot more to prepare. 

B: Yes, our colleagues told us that there could be some questions about travel information and current events, so we gathered as much information as we could especially in preparation for the Tourism and Hospitality Quiz.

L: Right, our colleagues were really helpful with this part of the competition. I think we need to thank them here.  They ran a mock competition for us nearly every day after work to help us become more responsive to the questions.   

B: Yes, it was fun.  Even now when we hear questions from them, our first reaction is to press the button to gain the permission to answer. 

I: It sounds that you had been deeply devoted to the preparations.  Is there anything you have gained from this experience?

B: I think the last question in the quiz session made the strongest impression on me.  It was about the bus fare, but I did not know the answer.  Even though I take the bus every day, I pay via the MACAUpass, so I have never paid attention to how much is deducted.  This question reminded me to be more attentive to the things around us.  In the past, I only focused on the product knowledge of our hotel, but from this experience, I know that a competent front desk agent should have inclusive knowledge of the city and anticipate different needs from different types of guest.

L: Yes, I have got to know more about our city because of this competition.  But, the support of our team was the most precious to me.  From the preparation period to the awards ceremony just now, the spirit of the whole team has touched me deeply.

Alumni Sharing Session
 


To update what is happening on the Macao’s fast growing tourism and hospitality industry and to help build up students’ confidence and sense of belonging, IFT has had the honour of inviting two alumni to be the guest speakers at our alumni sharing session, which was held on 16 November, 2011.

The first part was a group sharing session while the second part was a mini cocktail party where students could have a face-to-face meeting with our alumni and share their thoughts.

Our thanks go to the continuing support from Ms. Athena Wong, Global Store Manager at Louis Vuitton Maison and Mr. Paulo Cheong, Director of Human Resources at Venetian Macau Limited.

With the positive feedback and appreciation from students and alumni, IFT will continue to organise this kind of sharing session in each semester and will invite more and more alumni to participate and share their IFT experience and their working knowledge with our students.

Inter-university Alumni Basketball Competition
 


IFT was invited by Macao Polytechnic Institute (IPM) Alumni Association to participate in the inter-university alumni basketball competition which was held on 8 October, 2011 at IPM Multisport Pavilion.  Nine alumni have joined this competition. They were happy to meet with their old friends and appreciated very much the opportunity to represent IFT again.
