President's Message

In an increasingly competitive world, employees constantly find their knowledge and skills turn obsolete sooner than they have the time to catch up with the new modus operandi.  “Lifelong learning” is no longer a buzzword that inspires, but a constant reminder of career advancement or self-improvement opportunities we may lose every time we postpone making that decision to enrol in a learning experience.

At IFT, we are also constantly racing with time.  We understand quite well that Macao is changing fast and tomorrow’s tourism workforce has to be more than functional and efficient - it has to be creative and assertive.  IFT is proud to partner with the University of Nevada Las Vegas (UNLV) in bringing to Macao the UNLV Master of Hospitality Administration (MHA) – Executive Programme.  The first intake will begin in August this year.  Both partners believe this programme meets a rising local demand for quality postgraduate programmes in the area of tourism and hospitality.  This also marks an important milestone for IFT as we prepare ourselves for advanced programmes. 

Besides, IFT continues to offer a wide range of courses leading to professional qualifications.  Among them are Management, IT and Language LCCI courses, WSET for sommeliers, IATA for ticketing officers, ServSafe for professionals of catering, CIBTAB for beauticians, MORS and SHATEC for tourism and service professionals.  Details are available on our website.

LCCI and EDI – Striving for Strong Industry Global Qualifications via High-Standard Training
The London Chamber of Commerce and Industry Exams were offered again this year at the IFT.  While in conversation with regional representatives of Education Development International (EDI), the awarding body that provides LCCI qualifications, it was easy to get caught up in their enthusiasm for the organisation as well as the process of providing training and professional qualifications to our industry’s workforce.  I TW had a pleasant and informative conversation with: Nigel Snook NS, Chief Executive-EDI; Tom Austin TA, Director of International Business Services-EDI; Mark Disney MD, Chief Operating Officer (Asia)-LCCI; Samuel Li , Country Manager-LCCI;  and Kelvin Tang , Marketing Executive-LCCI


TW: Aside from the digitalisation of audio-recorded information, are there any other technology issues that you’ve faced that you had to overcome?

TA:  Yes, although EDI is at the forefront of testing technology in the UK, a lot of our international examinations are done using paper and pen.  We’re on the path to making a number of our exams available on-screen and are also exploring options for making certain examinations available on-line. 

TW: Let’s go over to Nigel.  Since you took over your current leadership role, what sort of changes occurred?

NS: When EDI, which is the parent company, was founded at Christmas time 2002, it was the merger of two businesses.  I guess the thing I brought to the party was to take a wizzy technology company called GOAL (Global Online Assessment for Learning) and a worthy old charity, the London Chamber of Commerce and Industry Exams board, and move them to a rational point in the middle.  LCCI qualifications had first been awarded over 120 years ago, and Southeast Asia was one of the main markets. 

One of the biggest issues with examinations is moving papers around, getting them marked accurately and reliably.  To ensure that reliability, everything is marked back in the U.K. as an international qualification to ensure global standards. 

TW: Have there been any defining moments in this merge-and-progress process?

NS: Actually, I see this all as a sort of journey.  I have noticed a renewed dynamism and interest in LCCI qualifications.  They are in the medium of English.  They are genuinely high quality international qualifications.  They’re worth something.  You will be looked for - if you have your LCCI level three in bookkeeping.  You will find a job.  That gives us a great sense of pride and satisfaction. 

TW: Let’s look at your training versus assessments.  What are the outcomes you’re looking for?

TA:  Our international qualifications are not about teaching to the test.  They’re about testing knowledge and about the students who have been through LCCI programs retaining that knowledge so that when they go into the workplace, they can perform effectively.  We provide our teachers with many learning support materials, called “teachers’ tool kits,” that the teachers can use in the classroom     to help in the development of their students’ learning.  These sorts of materials are available on our (new) website – www.lcci.org.uk.

NS: Our core LCCI qualifications are testing knowledge after a programme of study.  And the most important bit is actually the structured programme of study against the curriculum. 
In addition, we do a lot of work with the household name organisations, Sansbury’s, TESCOs, a lot of the hotel chains, and public house chains, to verify their internal programmes.  In these cases we’re not an exam board, but a quality assurance body endorsing an in-company program which we have helped tailor. 

And then the third area are the snap shot assessments we can do online, like the English language skills assessment (ELSA).  Someone is coming in and we’re establishing their starting point, or maybe their finishing point, or a point along their journey. 

MD: Traditionally, LCCI has been about bookkeeping and accounting, so in the Asian region around 80% of our students are taking various forms of financial programs.  What we’re interested in doing now is also promoting our English language qualifications.  Not just English for Tourism, but also English for Commerce and English for Business, which is becoming quite popular.  We also have a range of general English programmes called JET SET (Jr. English Tests/Sr. English Tests), as well as in marketing, sales, retail, business administration and IT.  So we’re branching out and diversifying into slightly different areas, while at the same time retaining a strong presence in our financial qualifications.

IFT Brings New Master’s Programme to Macao

Memorable moment after the Protocol Signing Ceremony

IFT has signed a cooperation agreement with the world renowned University of Nevada Las Vegas (UNLV), Singapore Campus to offer the Master of Hospitality Administration – Executive Programme in Macao.  The Master Degree Programme, targeting working professionals in the service industry, provides flexible programme design, combining distance learning and on-site intensive one-week seminars.  It is a convenient model for industry professionals that allows them to keep their current employment while studying for an internationally recognised postgraduate degree.

During the ceremony, Dr. Andy Nazarechuk, Dean of UNLV Singapore, gave his congratulatory statement on the 15th Anniversary of IFT and recognised IFT’s success in international education, as well as being a leading tourism educational organisation in the region. 

Over the past few years, huge investments have brought world-class resorts and entertainment to Macao, but the industry laments the lack of professionals working in the sector.  The UNLV Master Programme provides an advanced learning platform for candidates who strive for continuous personal development.  Both organisations believe that the programme will meet the rapidly growing demand for quality postgraduate courses in the tourism and service industry.  It also marks an important milestone for IFT in preparation for offering advanced programmes.

22nd Joint Meeting of the UNWTO Commission for East Asia and the Pacific and the UNWTO Commission for South Asia

The 22nd Joint Meeting of the UNWTO Commissions and the Conference on Tourism as a Key Driver for Socio-Economic Development in Asia and the Pacific was held in Hanoi, Vietnam, 10 – 12 May.  The meeting concluded that growth in international tourism, led to a large extent by Asia and the Pacific, is returning.  Public-private partnership must continue to be strengthened to ensure a sustained recovery.

IFT, as a member of UNWTO Education Council, together with other affiliate members, represented the industry and tourism educational institutions in both events.  This was, for the first time, to involve affiliate members to join the roundtable discussion which allowed maximum participation from all attendees. IFT was invited to share their projects and experience in the area of Public-Private Partnership.  Ms. Florence Ian, Vice President of IFT, highlighted several examples, namely the Training Activities Coordinating Council where industry and government departments advise IFT on the direction of the education and training programmes; the Community Education and Development Programme (CEDP) which involves both industry and local association partners to jointly develop training programmes suitable for the community; and the Macao Tourism Fund, generated from the tourism business, which subsidises the nurturing of tourism professionals who in return will provide higher service quality to the industry.  In addition to the UNWTO members, some 200 representatives from the Vietnamese local tourism authority and the private sector actively contributed to both events.

IFT Faculty Hold an Electronic Research Conference with Bournemouth University, UK


Technology breaks physical boundaries!

The IFT Faculty has recently held an electronic research conference with scholars and doctoral students from the School of Services Management at Bournemouth University.  The conference covered a broad range of recent advancements and current topics in tourism research and provided a rich and intensive exchange between researchers from the two schools.  Presenters from Bournemouth University included Prof. Dimitrios Buhalis, who discussed the potentials of eTourism Futures.  Senior Lecturer Sean Beer discussed his research on aestheticism in tourism along with doctoral students John Fotis and Sam Hazra, who covered thought-provoking topics on social media and qualitative methods in tourism research.

Representing IFT, Dr. Don Dioko presented the results of a study conducted by IFT’s International Tourism Research Centre (ITRC) on enhancing community participation in the annual Macau Grand Prix.  This drew very encouraging and stimulating feedback from the Bournemouth scholars.  After scholars from each institution delivered presentations, lively discussion and comments ensued.  The conference cemented IFT’s close contact and collaboration with international tourism scholars as well as served to generate interest in tourism research in Macao amongst those representing IFT.  In addition to Dr. Dioko, IFT lecturers Ong Chin Ee, Cindia Lam, Dino Couto and Max Zhao contributed greatly to the series of animated and deep discussions that took place. The School of Service Management at Bournemouth University U.K. is acknowledged internationally as a leading centre for tourism research and is home to some of the most recognised scholars in tourism.

IFT Train-the-trainers Workshop for Mount Lushan World Heritage Site

IFT was invited by the Administration Bureau of Mt. Lushan Scenic and Historic Spots - Mount Lushan World Heritage Office, Jiangxi China to provide a train-the-trainers workshop on the Cultural Heritage Specialist Guides Programme for UNESCO heritage sites.  The workshop, facilitated by IFT instructors, took place on 11-13 March at IFT.

IFT cements its position as the leader of heritage management education by providing specialised UNESCO World Heritage training to curriculum developers, managers and trainers of the Mount Lushan World Heritage Office.  Appointed the Knowledge Management Hub of the Asian Academy of Heritage Management (AAHM) by UNESCO and ICCROM in 2009, IFT is committed to the development of heritage management education in Asia.  This customised three-day training aimed at building the capacity of heritage professionals from the Administration Bureau of Mt. Lushan Scenic and Historic Spots to bring about the professionalisation of world heritage guiding and interpretation at the Mount Lushan world heritage site.

In timely response to concerns of high-impact tourism at World Heritage sites in Asia, AAHM launched the Cultural Heritage Specialist Guides Programme in 2005.  This rigorous, practical and internationally-recognised training and certification programme is being implemented through active partnerships between members of AAHM, training institutions from the UNESCAP Asia Pacific Education and Training Institutes in Tourism (APETIT) network and National Tourism Organisations (NTOs), with IFT serving as the Knowledge Management Hub and UNESCO providing technical advice.

The Executive Development Programme; Brand Management

The Executive Development Programme in Brand Management was carried out at IFT with coorganiser, Ecole hôtelière de Lausanne, Switzerland on 16-17 March.  The programme was successfully facilitated by Professor André Mack, the Director of Lausanne Hospitality Consulting and a faculty member at Ecole hôtelière de Lausanne, with his professional focus on project management and consulting.

A friendly group of 16 participants attended the programme with the majority representing senior management in the hospitality industry, as well as telecommunications and other tourism industry practitioners.  They were joined by scholars, along with a few participants from related government departments.


Rewarding moment after the 2-day Executive Development Programme at IFT

The two-day programme drew participants’ attention to issues in developing, managing and evaluating global brand leadership strategies.  This helped participants discover how coherent brand experience requires the alignment of every touch point in the organisation with a customer driven value proposition.

Public Lecture on “The Spirit of Place”

IFT had the honour of inviting Mr. Laurence Loh Kwong Yu, International Council on Monuments and Sites (ICOMOS) site evaluator for the World Heritage Sites of Macao and Kaiping, PRC, to deliver a public lecture on 26 April at IFT on the topic – “What is the Spirit of Place?”  This public lecture, coordinated by IFT’s Heritage Studies Centre, attracted around 170 audience members.

Mr. Loh has over 25 years of experience in protecting, conserving, managing and sustaining the cultural heritage of Malaysia.  His expertise and contributions have been acknowledged nationally and regionally.  The restoration and adaptive reuse of Cheong Fatt Tze Mansion in Penang, Malaysia won him the “Most Excellent Project” in the inaugural UNESCO Asia-Pacific Heritage Awards in 2000.  He has received various awards since then; more recently, his work on the restoration of Merdeka Stadium in Kuala Lumpur, Malaysia was conferred the “Award of Excellence” of the UNESCO Asia-Pacific Heritage Awards for Culture Heritage Conservation in 2008.  In parallel with his professional career path, Mr. Loh has also devoted his time to education and capacity building.  He is an associate professor at the University of Hong Kong and at the International Centre for the Study of the Preservation and Restoration of Cultural Property for ICCROM in Rome, Italy.  He is on the executive committee of the UNESCO-ICCROM Asian Academy of Heritage Management.  Finding and keeping “the spirit of place” has always been a major concern for most conservationists in preserving and restoring physical structures.  The spirit of place conveys the cultural essence of a site, and encompasses the meanings of a place accrued through its past and present uses.  Expressed through the tangible built heritage, these intangible heritage values give the place its distinctive character, an aura that draws people to the place, speaks to them, engages their emotions and often, gives them a sublime experience of their surroundings.  In this 90-minute public lecture, Mr. Loh acquainted attendees with how conservation of a physical structure articulates its spirit of place.

The IFT’s Heritage Studies Centre was established in 2008.  Its mission is to promote the advancement and dissemination of knowledge in the field of heritage by working with intergovernmental agencies, academics and professionals.  The Heritage Studies Centre is committed to promoting heritage studies in Macao and internationally through conducting research and training programmes with local and global partners.  Among the different projects, the Centre has written the training manual for the UNESCO Cultural Heritage Specialist Guides Programme that has been translated into six languages and adopted for the UNESCO World Heritage sites in ten countries.  The Centre is also the focal point of the training programme for the Asian Academy of Heritage Management network.  In December last year, it hosted the Second UNESCO-ICCROM AAHM Conference on “Urban Heritage and Tourism: Challenges and Opportunities”, promoting academic exchange in the field.

The IFT Taipa Campus has never been so crowded!

On 16 April, the IFT Career Day 2010 was held there. Seventeen companies joined the Career Fair, and 12 talks were given.

Thanks to the participation of the various companies, our graduating students were able to learn more about the work market and explore the opportunities they have. More importantly, the Career Day allowed students a chance to meet with professionals, learn from their experience, understand better their own interests, their strengths, and get insights from the professionals on how to establish their own career path.

Joint Workshop on Macao Heritage Integration


Workshop group visiting the Lilau Square

Together with the Jiangnan University, Jiangsu China, IFT organised the Joint Workshop on Macao Heritage Integration on 15-19 March.  The aims of the workshop were to explore research into possible preservation and revitalisation strategies for Macao’s cultural heritage.  The project was carried out by 11 students from the Jiangnan University School of Design and Architecture, led by Dr. Zhu Rong and Dr. Wu Yao.  They joined IFT’s Year 3 Hotel Management students and several Year 4 Heritage Management students led by IFT facilitators, Dr. Francisco Pinheiro and Mr. Ong Chin Ee.
 
The research areas included:
  • Adaptive reuse of Mandarin House and the yellow houses in Lilao Square
  • Preservation and reuse of industrial heritage: Yec Long Firecracker Factory
  • Preservation and improvement of urban public spaces and streetscape: Camoes Square to 5 October Avenue and Hong Kong Miu Temple

The workshop was an academic exercise for students in the Facilities and Properties Management course set within Hotel Management and intended to analyse several aspects and relations between hospitality facilities’ quality of experience and their contribution to the increased tourism carrying capacity of Macao in harmony with local communities’ needs and expectations.  In the five-day joint workshop, the students from the two institutions divided into smaller groups and visited the various sites for in-depth field appreciation and thorough study of the heritage sites.  Photos and video images were taken and dimensions carefully measured for SWOT analysis (strengths, weaknesses, opportunities and threats).  Workshop participants also had a chance to interview tourists and residents in the area to find out their prospects for the development of these heritage sites.  From the data collected, the students worked out possible strategies on sustainable development for these heritage sites in regards to site preservation and revitalisation of the site’s surrounding area.

The students proposed their designs and concepts on the last day of the workshop.  It is generally believed that in order to achieve sustainable development, public involvement and significant cultural interaction are essential.  To meet these goals, the transportation network and parking facilities need to be improved.  It was proposed by pedestrians at 5 October Avenue to put up signage in order to form a zone for walking tours, linking the Ruins of St. Paul, Camoes Square and Hong Kong Miu Temple.  It is hoped that such measures will bring economic resurgence to the inner harbour area.  In addressing potential revitalisation policies for Mandarin House and Yec Long Firecracker Factory, the students summarised suggestions from their interviews with local residents and came up with an array of renovation plans.  Besides converting the buildings to cultural heritage museums, policy makers could consider reserving rooms for recreation, the performing arts and creative industries.  Suggested value-adding facilities included a library, an exhibition hall, a performing house for Chinese opera and scenic rest spots for residents and tourists alike.  Other facilities, such as bookstores, cafes and themed restaurants could generate funds for the ongoing maintenance of the buildings.  Based on these exploratory and preliminary proposals, it is hoped that more research and consultation can be performed to help elaborate on achievable scenarios for heritage conservation.

The joint workshop helped the participants visualise design concepts in the unique heritage environment of Macao and provided high-quality opportunities for them to interact and learn from each other.  The workshop opened up insightful opportunities for ideas exchange on heritage management and cultural tourism. Above all, the workshop signifies another successful collaboration between IFT and higher institutions on the Mainland.  Aiming to benefit Macao and the Mainland through rigorous training of heritage and tourism professionals, IFT looks forward to future collaborations with other higher institutions around the world.

IFT Heritage Management Students Delve into Mong-Há Heritage
IFT hosted a public lecture titled “Re-Weaving the Threads, Re-Connecting the Places: Cultural Mapping and Valuation of Mong-Ha Heritage” on 14 May. Heritage Management Year 4 students presented their findings on the Mong-Há Village project for the Economics of Heritage Conservation course after carrying out field work from 3 - 14 May at the site of the Mong-Há village.

Building upon the work of the previous year 4 Heritage students who put together a Coloane Village cultural map, the current students extended their study to Mong-Há.  The project team members had selected the Mong-Há Village as the case study because it is a place less understood but containing rich cultural heritage resources.  The entire process from fieldwork and analysis through graphic work and presentation was guided by internationally renowned heritage specialists Dr. Richard A Engelhardt, Regional Adviser for Culture in Asia and the Pacific, UNESCO and Dr. Johannes Widodo, Assistant Professor of the National University of Singapore. This was complemented by Macao-based heritage professionals Mr. Steven Chan, Vice-President of the Cultural Affairs Bureau of Macao S.A.R. Government, Dr. Francisco Pinheiro, Technical Advisor of the Civic and Municipal Affairs Bureau and Mr. Ong Chin Ee, Lecturer at IFT. 

The Economics of Heritage Conservation taught in year 4 of the Heritage Management Programme ultimately aims to identify, analyse and appraise the economic and social values of the totality of Macao’s heritage assets, utilising international-standard inventory, mapping and assessment methodologies.  The course is conducted intensively for two weeks in daily modules with guided field work, in which the students evaluate and record the heritage assets.  It has been designed to introduce to the students the essential tasks of a heritage management professional, which include:

  • The ability to identify, analyse and appraise the built heritage as a public resource;
  • The ability to document built heritage resources in a proper way to ensure their asset values remain intact and/or are enhanced through appropriate and timely investment;
  • The ability to innovate creative solutions to integrate the built heritage into socio-economic development; and
  • The ability to convince decision-makers and stakeholders of the efficacy and potential benefits of these solutions.

Public Lecture on Air Purification Application to the Gaming & Hospitality Industry


Air Purification - a topic ‘global citizens’ are concerned about

With the rapid development of Macao’s tourism and hospitality industry have come many new hotels, ‘mega resorts’ and a tremendous increase in both domestic and international visitation rates.  Today’s ‘global citizens’ tend to be quite concerned with air quality with specific concern for indoor air (within the aforementioned complexes where they spend time).  With this demand in mind, IFT invited and would like to thank Mr. K.C. Wong, a Hong Kong Indoor Air Quality Specialist, for his insightful public lecture on 11 March on the topic of Air Purification and the Application to the Gaming & Hospitality Industry.

Shoppers with a Cause

Year 4 IFT students turned “mystery shoppers” this year, visiting 18 restaurants and 17 retail stores in Macao to experience and report on their service quality.  These students were trained in the intricacies of observing and recording the finer points of customer service before being sent out on dining or purchasing expeditions in some of Macao’s finest restaurants and retail outlets.

In one or more visits to each establishment, mystery shoppers had to note and evaluate the physical setting and other tangible aspects of service -- including the staff attitude and manner towards customers, as well as staff professionalism in terms of grooming and product knowledge - that would distinguish the establishment’s service from its competitors.  They would sometimes pose service challenges to test the response of service staff, all for the cause of evaluating the service.

Using industry rating standards, like the Forbes Travel Guide star system or the AAA diamond system, or more academic rating models like SERVQUAL or SERVPERF, mystery shoppers picked out the establishments’ service strengths and weaknesses.  Noting the service gaps and possible causes, the mystery shoppers also proposed specific recommendations for improving customer service.  All these were reported in creative role plays and presentations to panels of judges comprising managers of the establishments, IFT lecturers teaching service quality management and F&B.  A written report was also made available to all participating establishments as an enduring reference for future service improvement.

A New IFT Publication: Churches of Macao

Churches of Macao, a new book written by IFT instructor, Alberto Ung, was launched in April by Pearson. This 155 page book, with detailed illustrations, introduces the history, the layout, the church icons and the interesting stories behind the 16 churches of the 6 parishes here in Macao.

After Portuguese settlement in the 16th century, Macao was honoured as the ‘City of the Name of God’. Churches were built one after another from then onwards and a bastion of Christianity was therefore established on this small piece of land.  These churches, being a part of daily life for both the Western settlers and the local people, embodied not only a harmonious blend of different cultures, but also spurred development of the diocesan and the local community, which made them an indispensable part of the city.

Churches of Macao is a fine, easy to comprehend read, as well as a valuable reference for those interested in the culture and history of Macao. It is now available at our library and can be purchased through amazon.com.

This has been the final year of our Diploma in Event and Tourism Management.  Although we have been excited about our accomplishments, we were a little concerned with the fact that we needed to hold a live event as our graduation project. However, we soon gained confidence from all our practical IFT learning and in the end it was a success.

“Good job” was a comment given to us by one of our Lecturers just after the event wrapped up.  We couldn’t believe that this was true – that we had succeeded. We all worked hard in organising and running the event and our main goal was to present a memorable night for the guests.  Our Lecturer’s kind comment was very encouraging as it indicated that we had reached our goal.

As with any event, there were many difficulties and problems that needed to be overcome and solved during the event planning process; such as the short period of time to prepare, the limited budget as well as the decoration constraints of the Educational Restaurant; However these rough patches were soon forgotten when we received the positive comment from our Lecturer.  
 
Reflecting on the experience, what was the major factor of our success?  It was the attitude of all our peers.  Everyone moved in the same direction and coordinated closely with healthy communication.  Even though the work was hard and the constraints were not easy to overcome, none of us wanted to give up.  In fact, we did pay more attention and were more patient in order to get the work done.  The cooperation and collaboration of all the classmates made our dream come true.

I’m so proud to be one of the team members. I will never forget the event night as well as the time we spent working and studying together.

Macao Slow Food 2010 Great Success

Macao Slow Food days have been coordinated over the past three years by IFT’s senior Tourism Event Management students.  This year, the Heritage Management Year 2 students also joined the Macao Slow Food movement. This year’s Slow Food 2010 event was themed upon local, traditional Macanese cuisine, which sought to echo and continue spreading the concept and philosophies of the slow food movement to the general public.  This year all funds raised were donated to Caritas Macau.

The 2010 Slow Food slogan read ‘Enhance Macanese Flavour, Enrich Slow Food Culture’ and promoted the values of Slow Food culture as well as the food heritage of Macao.  The event’s overall concept was presented through three programmes; a food exhibition coupled with a wine workshop, a heritage interpretation session and (concluded with) a gala dinner.  An entertaining Portuguese wedding drama skit was put on during the gala dinner by our Year 2 Heritage Management students, which was a clever Macanese cuisine drama interpretation based on a love story.

The guests in attendance gained deeper insight into Slow Food while focusing their attention towards Macanese food heritage.  Some said they will definitely apply this to their everyday lives.  Aside from the satisfaction of seeing the guests enjoy the event, it provided Tourism Event Management and Heritage Management students with a tremendous opportunity to apply their studies towards hands-on practice in a ‘real life’ experience.

IFT Students Raise Over 182K for Action Oasis

IFT Hotel Management Year 2 students have raised MOP182,854.00 for Action Oasis of the Chinese Educators Association of Macau.  The cheque presentation ceremony was held on 11 June.  Acting President of IFT, Ms. Florence Ian and student representatives presented the donation to Ms. Ho Sio Kam, Director of the Chinese Educators Association of Macau and Mr. Lei Pui Lam, President of the Chinese Educators Association of Macau.

At the cheque presentation, students expressed that, through organising this meaningful fundraising campaign, they not only put theory into practice, but also learned the importance of team spirit.  They believe that this has been a valuable experience and are grateful for the support of the sponsors.

Food and Beverage Management is a work assignment made up of practical ‘real-world’ applications, and throughout the semester the course covers the major aspects of Food and Beverage Management. 

The fundraising campaign for Action Oasis started in 2006.  The funds will provide financial assistance to needy children in regions of Mainland China suffering from desertification.  These monies also will help to subsidise the local school systems, as well as general living expenses and will help finance improved educational facilities and conditions.  Action Oasis also sponsors children living in poverty by assisting those with good academic performance to travel to Beijing for study.

IFT has always been supportive of Action Oasis, with aims of encouraging the spirit of friendship and community among IFT students.  Aside from placing the donation boxes on the campus, IFT also arranged students to cooperate with the Chinese Educators Association of Macau in organising a large-scale annual fundraising event as their final project.  This is the fourth year that the event has been held; donations were mainly raised through the sale of the gala dinner tickets, a lucky draw, through a wine auction and wine sales.

The gala dinner was organised by Hotel Management Year 2 students from IFT and led by David Wong.  Students meticulously prepared the delicious traditional Macanese cuisine for over 90 guests.  At the gala dinner, a highly entertaining singing contest was held under the theme ‘Macao Idol’.  Eight IFT students displayed their singing talents, and three judges presented prizes to the winners.

The climax of the gala dinner was the wine auction, which took place throughout the dinner service.  After over an hour of bidding, the wines which were donated by various individuals and wine suppliers were all auctioned off raising an impressive MOP130K.  Since 2006, IFT has raised over MOP235K for Action Oasis of the Chinese Educators Association of Macau.

Extra-curricular Activities in IFT

With the objective of enriching our students’ campus life and enhance whole personal development, IFT launched a number of extra-curricular activities in academic year 2009/10.  The activities expose students to different knowledge and skills beyond the curriculum so as to build up their self esteem and confidence.  The activities aim to help cultivate our students’ talents in different aspects, and we are happy that students have shown great interest in them.  Among the activities are Professional Etiquette, French I & II, Spoken Putonghua for Non-Chinese, English Debate, Basic Guitar, School Choir, Photography, Architectural Drawing, Swimming, Volleyball, Dragon Boat and Aerobics.

A Study Exchange to Montreux Switzerland: A Dream Come True!

Recently I packed my bags and a dream and set off to one of the most beautiful places in the world on a study exchange in Montreux, Switzerland.  

Over the six months I made many new friends from all parts of the world. Since we have different languages and cultural backgrounds, we learned from each other and increased our worldly perspectives.

The Glion Institute of Higher Education student body adheres to strict rules.  For example, their grooming standards state that when you appear on the campus you must be wearing a formal suit, and during lunch you must follow formal table manners.  Also, copyright laws are taken very seriously.  By following the rules, Glion students undergo intense professional development and learn a lot.

My IFT learning experiences were very beneficial to my success and confidence with the five courses taken at Glion. I am grateful to my parents and IFT for giving me this study-exchange opportunity.
