Objective:
This course, focusing on the fundamentals of
nutrition and food science, is designed for
both foodservice and culinary professionals.
Students will learn the functions of
different food nutrients and food groups. By
the end of the course, the students will be
able to apply their knowledge of the food
pyramid and food labeling in menu planning.
In addition, they will understand how
different food preparation methods can
affect food nutrients.
