Objective:

Students will be able to learn fundamental concepts of quality service and the required skills, which they can apply to their daily work in the future. This course is specifically designed for those who would like to be engaged in the food and beverage industry as casual workers.
 


Course Outline:

Basic Knowledge for Chinese/Western Food & Beverage Server:

  • Basic requirement on grooming and hygiene
  • Food & beverage server basic service rules
  • Service manner and courtesy phrases

For Western Banquet:

  • Conference and coffee break, cocktail party, buffet and private function
  • Basic tableware and equipment
  • Cleaning cutleries
  • Handling of table cloth, napkin, tableware and table settings
  • Providing food and beverage service with proper sequence and manner
  • Mise-en-place for the buffet

For Chinese Banquet:

  • Wedding, birthday and company celebration banquets
  • Basic tableware and equipment
  • Cleaning cutleries
  • Handling of table cloth, napkin, tableware and table settings
  • Providing food and beverage service with proper sequence and manner
